EASY CHERRY CHEESECAKE
This is a simple cheesecake recipe that I sometimes bring to family occasions. I am posting this recipe for my cousin Amy since she requested the recipe.

Steps:
- Preheat oven to 350 degrees.
- Place the cream cheese in a bowl in the microwave.
- Microwave it on the defrost setting for a couple of minutes to slightly soften the cream cheese (This is so that you don't kill your mixer when beating the cream cheese).
- Add sugar to cream cheese and beat it with an electric mixer until smooth.
- Add eggs and vanilla and blend until smooth.
- Pour into ready made crust.
- Bake at 350 degrees for 25 to 30 minutes.
- Note: The cheesecake is done when the sides are puffed- The center will not be as puffed- It will be possible to jiggle the center slightly but it will not be runny.
- Let cool.
- Top with cherry pie filling and chill.

CHERRY CHEESECAKE CAKE
This cake thinks it's a cheesecake, and taste just like one too, but very easy to do, and when I served it at club, got rave reviews!

Steps:
- Stir together the remaining cake mix, (not the 1 cup reserved) 1 egg, and 2 T oil.
- Press this mixture into 9x13 cake pan on bottom and up the side 3/4 to top.
- Blend cheese and sugar.
- Add 3 eggs and reserved 1 cup of cake mix.
- Beat 1 minute at medium speed.
- Gradually add milk, juice, and vanilla. Mix until smooth.
- Pour into the crust.
- Bake at 300°F for 45 to 55 minutes.
- COOL, when cool, top with cherry pie filling.
- Refrigerate and enjoy!

CHERRY CHEESECAKE BARS
These are delicious, I have made this and everyone really enjoys it, I think you will too..it is not a dense heavy cheesecake, but more on the light and fluffy side. I have even substituted blueberry pie filling for the cherry. I use two large cans of pie filling, but one can might be suitable, if you prefer a thick topping then use two cans. Remember to chill this cheesecake for 6 or more hours, overnight is even better! Prep time includes chilling time.

- Set oven to 350 degrees.
- Set oven rack to the second lowest position.
- Grease a 13x9-inch or an 11x7-inch pan (the cheesecake mixture will be higher if made in the 11x7-inch pan, but will bake out just as well, I actually prefer to bake the cheesecake in that size pan) baking pan.
- In a medium size bowl, mix the flour and brown sugar until blended.
- Cut in the 1 cup butter until mixture resembles coarse crumbs (I do mine on the food processor).
- Add/mix in coconut, oats and chopped pecans or walnuts; stir until well mixed.
- Press the mixture into the bottom of prepared baking dish (this might be a bit "fiddly" as the mixture will be very crumbley, don't worry if there are small areas in the pan that you did not cover, it will all spread out when baking).
- Bake for 20 minutes, or until crust is lightly browned.
- Cool on wire rack for 10-15 minutes.
- Meanwhile, to make the topping, in another bowl, beat cream cheese, sugar, eggs, vanilla and lemon peel with an electric mixer until blended and smooth (about 5 minutes).
- Pour over crust, and spread evenly.
- Bake for 40-45 minutes, or until center is set.
- Cool completely in pan on a wire rack.
- Spread with fruit filling over cooled cheesecake.
- Cover pan and refrigerate for a minumum of 6 hours (or overnight).
- Cut into 18 bars.
CLASSIC NEW YORK STYLE CHERRY CHEESECAKE

- FOR THE CRUST: Preheat oven to 400 °F (200 °C). In a large springform pan (10 inches or 26 cm in diameter), mix crumbs, melted butter and sugar well together. Press firmly onto bottom of pan. Bake for 5-7 minutes or until golden brown. Set aside. NOTE: The crust recipe can be doubled if you also wish to have a crust on the side of the cheesecake.
- FOR THE FILLING: In a medium bowl, mix together cream cheese, flour, sugar, vanilla and heavy cream with an electric mixer on low speed until well blended. Beat in eggs, one at a time, beating just until combined after each addition (don't overmix the batter).
- Pour batter into prepared springform pan and bake at 400 °F (200 °C) for 10 minutes and then reduce the temperature to 300 °F (150 °C). Continue baking for another 40 minutes.
- After the baking time is up, gently shake the pan back and forth. The cheesecake should be evenly baked through and uniformly wobbly, but if only the centre is wobbly (about the size of a baseball or roughly 10 cm), it is also fine. Remove cheesecake from oven and carefully run a knife along the edge to loosen the cheesecake from the pan. Place it back in the oven with the heat turned off. Leave the cheesecake over night, with the oven door shut. Put the cheesecake in the fridge the next day for a minimum of 4 hours and up to 24 hours. Top with cherry pie filling or your favourite topping before serving.
- MAKES 12-16 SLICES (depending on how thick you slice them).

- Heat oven to 180C/160C fan/gas 4. Combine the crushed biscuits with the melted butter and sugar, then press onto the base and sides of a 20cm springform tin. Chill.

CHERRY SWIRL CHEESECAKE

Steps:
- Heat oven to 160C/fan 140C/gas 3. Butter a loose-based 20cm cake tin and line the base with baking parchment. Break up the biscuits, then pulse to fine crumbs in a food processor. Melt the butter with the syrup, then stir into the crumbs until they are evenly damp. Tip into the prepared tin and smooth with the back of a dessertspoon. Bake for 10 mins, then leave to cool. Reduce oven temperature to 150C/fan 130C/gas 2.
- Tip the stoned cherries into the rinsed-out food processor with 85g of the sugar. Blend until smooth, then tip into a small pan and bring to the boil. Simmer for 5-6 mins, stirring, until it forms a thick syrup. Cool.
- Rinse out the food processor again, then tip in the cheese, cornflour, eggs, remaining sugar, vanilla, orange and half the crème fraîche. Blend until smooth. Spoon half the mix into the tin, then spoon half the cherry purée evenly over the top. Spoon the remaining cheesecake mix over this. Stir the mix gently with a fine skewer to swirl the cherry purée through it. Bake for 45 mins, then turn the oven off and leave for 30 mins.
- Spread the remaining crème fraîche over the filling, then spoon the remaining cherry purée into the centre. Using a fine skewer draw the cherry purée through the crème fraîche to make a star pattern, wiping the skewer each time. Set the reserved cherries around the edge of the cheesecake, then dust with icing sugar. Chill until ready to serve.

- Place softened cream cheese in a mixing bowl; add condensed milk, lemon juice, and vanilla. Beat until well blended. Pour mixture into the pie crust. Chill for 5 hours. DO NOT FREEZE!!!
