1/2 cup all-purpose flour
1/4 cup brown sugar
1/4 cup granulated sugar
Pinch ground cinnamon
1/4 cup butter, cut into small pieces
1/4 cup slivered almonds
1 box vanilla cake mix
3 eggs
1/3 cup vegetable oil
1/2 teaspoon almond extract
1/2 cup cherry preserves

Steps:

  • In a medium bowl combine all topping ingredients except almonds. Using a pastry blender or 2 forks, combine ingredients to a course consistency. Once combined, fold in the almonds.
  • Preheat oven to 350 degrees F. Line 2 (12-cup) muffin tins with paper liners for 18 muffins.
  • In a large bowl using an electric mixer, combine cake mix, eggs, oil, extract and preserves. Batter will be somewhat lumpy.
  • Use an ice cream scoop to evenly fill each muffin pan with the batter. Sprinkle tops of muffins with 2 teaspoons of almond topping. Bake 17 to 21 minutes.

1 3/4 cups (250 grams/8.8 ounces) all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup (150 grams/5.3 ounces) granulated sugar
1/4 teaspoon salt
1 large egg (, slightly beaten)
1 cup yogurt
1/3 cup canola oil ((or vegetable, safflower))
1/2 teaspoon vanilla extract
1 teaspoon almond extract*
1 1/2 cups (300 grams/11 ounces) cherries, halved and pitted**
1/2 cup slivered or sliced almonds ((better if toasted), plus extra (not toasted) to sprinkle on top)

Steps:

  • Preheat oven to 425F/220C. Grease 12 muffin cups or line with muffin liners.
  • In a large bowl, sift together flour, baking powder, baking soda, and salt. Add sugar and mix to combine.
  • In a medium bowl, mix egg with yogurt, oil, vanilla, and almond extract. Pour the wet ingredients into the dry ingredients and fold with a wooden spoon or rubber spatula just until combined. Do not over mix. The batter should be quite thick and lumpy. Fold in almonds and cherries gently to prevent staining.
  • Divide the mixture between the muffin cups, filling almost fully to the top. Sprinkle with sliced almonds if desired. Bake for 3 minutes, then reduce the oven temperature to 375F/190C. Continue to bake for an additional 12-17 minutes for standard muffins, or an additional 22-27 minutes for jumbo muffins. They are ready when a toothpick inserted into the center of a muffin comes out clean. If they start to brown too much, cover them loosely with aluminum foil. Cool for 10 minutes, then move to a wire rack to cool completely.
  • Muffins are best the same day they are made, but can be kept at room temperature in an airtight container for an additional 1-2 days. Muffins can also be frozen for up to 2 months.

In a saucepan over low heat, warm preserves. For topping, combine flour and sugar in a small bowl; cut in butter until crumbly. Stir in almonds., Fill greased jumbo muffin cups half full with batter. Divide cream cheese filling and preserves evenly among muffin cups; swirl gently. Cover with remaining batter. Sprinkle with topping. , Bake at 350° for 30-35 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

⅓ cup milk
1 egg
¼ teaspoon almond extract
1¼ cup fresh cherries (pitted and left whole)

Steps:

  • Get your oven ready to bake by preheating it to 390°F/200°C.
  • In a bowl, sift together the flour, baking powder, and salt. This step ensures that all of the dry ingredients are mixed well and you don't get any pockets of baking powder in your finished muffins.
  • In a separate bowl, whisk together the sugar with oil, milk, egg, and almond extract. Mix until well combined.
  • Add Dry Ingredients to Wet Ones: Add the dry ingredients to the wet ingredients and whisk just until combined. Do not overmix.
  • Fold in the cherries. The muffin batter should be thick enough to hold up the fruit, I did that on purpose because we don't want the cherries falling to the bottom of the muffins.
  • Divide the batter between 8 lined muffin cups so that each is ¾ of the way filled.
  • Bake for 20 minutes or until done.
  • Allow the muffins to cool on a wire rack completely before eating or serving.

1 cup milk
1 tsp. almond extract
1 can rinsed cherries from a 21 ounce can of cherry pie filling
1/3 cup all-purpose flour
1/4 cup sugar
1/8 cup brown sugar
3 tablespoons butter
1/8 teaspoon salt

Steps:

  • Preheat oven to 400 degrees. Lightly butter muffin tins or line with muffin liners.
  • Cream the butter, eggs and sugar together with a mixer. Combine dry ingredients in a separate bowl and set aside. Add almond extract to the milk. Alternately add flour mixture and milk mixture to butter mixture, mixing to combine {do not over mix!}. Fold in cherries. Fill muffin tins 2/3 full {I always use a 3 tablespoon cookie scoop to make sure I get the exact amount of batter into each cavity}.
  • In a small bowl, using your fingers, cut the butter into the other topping ingredients. Pour roughly a tablespoon of the crumb mix loosely over each muffin.
  • Bake at 400 degrees for 18 minutes or until a toothpick inserted in the center comes out clean. This recipe makes 16 muffins.

60g / ½ cup almond flour
200g / 1 cup sugar (, white or cane)
1 teaspoon baking soda
3 teaspoons baking powder (, it must be aluminum free for this recipe or your muffins will turn blue.)
½ teaspoon salt
2 teaspoon natural almond extract
2 tablespoon apple cider vinegar
254g / 1 cup apple sauce (, unsweetened)
120mls / ½ cup plant-based milk
1½ cups / 336 grams fresh pitted, frozen or dried cherries
40g / ½ cup flaked or slivered almonds

Steps:

  • Preheat oven to 425°F and prepare a muffin tin. Either grease it or line with liners.
  • Add the flour, almond flour, sugar, baking soda, baking powder and salt to a bowl. Mix together well.
  • Add the almond extract, vinegar, apple sauce and milk (use milk ONLY if using all purpose flour and not oat flour), to another small bowl or jug and mix thoroughly.
  • Pour the wet ingredients into the dry ingredients and stir gently until it is just combined. Do not overmix.
  • Add the cherries and stir them gently through, then spoon the batter evenly into the prepared muffin tins so they are about ¾ full. Sprinkle the tops with the flaked/slivered almonds and get into the oven as quickly as you can.
  • After 5 minutes in the oven turn the temperature down to 375°F (don't open the door) and cook for another 12 - 15 minutes. A tooth pick inserted into one of them should come out clean after that time. If it doesn't give them a minute or two more.
  • Once cooked leave for 5 minutes in the pan, then remove and transfer to a cooling rack.

This comes from the BBC's Good Food website, but I adapted it to be lighter. You can also use frozen sweet cherries in place of fresh, which are usually pitted.

Steps:

Using electric mixer, beat almond paste and melted butter in large bowl until well blended (mixture will still have some small pieces of almond paste). Add eggs 1 at a time, beating well after each addition. Mix in cherry mixture and orange peel. Add flour mixture and mix just until blended.
  • Divide batter among prepared muffin cups. Bake until tester inserted into center of muffins comes out clean but slightly moist to touch, about 20 minutes. (Can be prepared 2 days ahead. Cool. Wrap muffins in foil and store at room temperature. Rewarm in foil in 350°F oven 5 minutes.) Serve warm.

  • Preheat oven to 400°F. Line a muffin tin with papers, butter and flour the pan or coat with nonstick baking spray. Whichever method you prefer.
  • In a small bowl, combine all the ingredients for the streusel except the melted butter. Pour in the butter and mix with a fork until you have coarse crumbs. Set aside.
  • In a medium bowl, combine flour, baking powder and salt. Whisk to combine and set aside.
  • Combine milk, eggs, sugars, vanilla and butter in separate bowl and whisk to incorporate.
  • Pour wet ingredients over dry ingredients. Gently stir with a spatula until not quite fully mixed.
  • Add cherries by folding in with a spatula, making sure to scrape the bottom of the bowl. Again, do not overmix. This will make your muffins tough.
  • Fill muffin tins 2/3 full. Sprinkle each muffin with streusel topping.
  • Bake for 18 - 20 minutes, or until a tester comes out with only a few moist crumbs on it.
  • Let muffins cool in tin for 10 minutes before removing to a cooling rack to cool completely.
  • Once muffins have cooled completely, combine powdered sugar and milk or half & half in a small bowl and drizzle over the tops.
