4 cups shredded Cheddar cheese
3 cups baking mix

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, combine the sausage, cheese, and dry baking mix. Mix together, and shape mixture into walnut-sized balls. Place on a foil-lined cookie sheet.
  • Bake for 12 to 15 minutes. Serve hot.

2 cups grated cheddar (1/2 pound)
1 pound bulk breakfast sausage
1/2 large yellow onion, grated on large holes of a box grater
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder. Add cheddar and toss to coat. Add sausage, onion, and butter. With your hands, mix until well combined and roll mixture into 1-inch balls. Place balls, 1/2 inch apart, on a parchment-lined baking sheet. Bake until balls are golden and cooked through, 25 minutes. Serve warm.

1 tablespoon hot sauce, such as Tabasco (or to taste)

Steps:

  • Preheat the oven to 400 degrees F. Grease 2 baking or cookie sheets and set aside.

8 ounces Italian cheese blend
5 ounces sun-dried tomato pesto
2 cups seasoned panko breadcrumbs, divided

Steps:

  • Combine potatoes, sausage, cheese, pesto and 1/2 cup of bread crumbs in a mixing bowl. Mix thoroughly.
  • With wet hands, roll potato mixture into 1 1/2 inch balls. Place remaining bread crumbs on a large plate. Roll each potato ball in bread crumbs. Make sure they are evenly coated.
  • Place poatao balls on a large plate or pan and put in fridge for at least 30 minutes or until ready to use.
  • Meanwhile, preheat oven to 380 degrees.
