HASH BROWN WAFFLES



Hash Brown Waffles image

Similar to latkes but the waffle iron makes a lot more crunchy surface area and steams the potatoes perfectly. Serve immediately with your favorite hash brown toppings.

cooking spray
1 pound yellow potatoes, shredded
cold water to cover
2 tablespoons vegetable oil
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon smoked paprika
2 eggs, lightly beaten

Steps:

  • Preheat waffle iron according to manufacturer's instructions. Spray waffle iron with cooking spray.
  • Place shredded potatoes in a bowl. Pour enough cold water over potatoes to cover; soak for 2 to 3 minutes. Drain and rinse to remove starch. Squeeze water out of potatoes by hand or by rolling in a clean kitchen towel and twisting towel to wring out water.
  • Toss potatoes with oil, garlic, salt, pepper, and paprika in a bowl until evenly coated. Stir eggs into potato mixture.
  • Spoon half the potato mixture into preheated waffle iron; cook until potatoes are tender and golden brown, 5 to 8 minutes. Repeat with remaining potato mixture.

You've heard of potato pancakes - try these great potato waffles! Cheesy Potato Waffles are cooked golden brown and topped with sour cream and chopped chives.

Number Of Ingredients 10

2 cups flour
2 tsp. baking powder
1/2 tsp. kosher salt
2 large eggs
2 cups whole milk
8 Tbsp. unsalted butter
2 VELVEETA Fresh Packs, (4 oz. each)
1/2 cup shredded potato, patted dry
1/4 cup chopped chives
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Whisk together the flour, baking powder and salt in a large bowl.
  • In another bowl, whisk the eggs, milk and melted butter. Stir in cubed VELVEETA, shredded potato and chives. Mix in the dry ingredients just until blended.
  • Heat a greased waffle iron to medium-high. Fill with batter and cook 5 min. or until golden brown. Top with sour cream.

1 cup flour
1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend
2 tsp. baking powder
1 egg
1/2 cup milk
2 Tbsp. oil
1 cup ORE-IDA Shredded Hash Brown Potatoes
2 Tbsp. chopped fresh parsley

Steps:

  • Spray electric waffle iron with cooking spray. Heat iron to medium heat.
  • Meanwhile, combine first 3 ingredients in large bowl. Whisk egg, milk and oil in medium bowl until blended. Add to flour mixture; stir just until blended. (Do not overmix.) Stir in potatoes and parsley.
  • Pour amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, left waffle off grid with fork. Repeat with remaining batter.
