The first time I ate this casserole I almost ate the entire thing! It is my Aunt Martha's recipe. It is absolutely delicious!

Ingredients

2 (20 ounce) cans pineapple chunks, drained
2 cups grated cheddar cheese
1 cup sugar
2 tablespoons flour
2 sleeves Ritz crackers (tubes, not boxes)
1/2 cup butter

Steps:

Place pineapple in casserole dish.
Mix cheese, flour, and sugar;then pour over pineapple.
Melt margarine with cracker crumbs and place over mixture.
Bake at 350 degrees for 25 minutes.

This recipe comes from Mobile, Alabama via my in-laws. Strange combination? Yes. But it makes a sweet surprise for your holiday table or family dinner. For the cheese crackers use brands such as Cheese-Its or Cheese Nips.

Number Of Ingredients 6

Ingredients

2 (20 ounce) cans pineapple chunks, drain and reserve juice
3/4 cup sugar
6 tablespoons flour
2 cups sharp cheddar cheese, grated
1/2 cup butter, melted
1 cup cheese crackers, crumbled

Steps:

Preheat oven to 350 degrees.
In a large bowl combine flour and sugar, then add 6 tablespoons of reserved pineapple juice.
Add butter, cheese and pineapple. Mix until combined.
Pour into 13x9 casserole dish.
Bake 20 minutes at 350.
Top with crackers.
Reduce heat to 250 degrees and bake an additional 20-30 minutes.

A wonderful Thanksgiving dinner side dish that sounds like a dessert.

Ingredients

2 (15 ounce) cans pineapple chunks, drained
1 cup white sugar
¾ cup all-purpose flour
2 cups shredded sharp Cheddar cheese
25 buttery round crackers, crumbled
½ cup melted butter

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Spread pineapple in the bottom of a 2 quart casserole dish.
In a small bowl, stir together the sugar, flour and cheese. Add to casserole dish.
Sprinkle crackers over the top of pineapple and cheese mixture. Pour melted butter over the top and bake for 30 minutes.
