  • Preheat the oven to 180C/350F and get out an oven proof dish. Bring a pot of water up to the boil and cook the cauliflower for 5 minutes. Once cooked, drain the cauliflower and place into the oven proof dish. Pour over the sour cream and cream. Stir to combine. Mix through 1/2 cup of grated cheese. Top with the other 1/2 cup of grated cheese. Place into the preheated oven for 15-20 minutes, or until cooked through and golden.

1 cup heavy cream

1 tablespoon butter

Steps:

  • Preheat oven to 375°F.
  • Cut cauliflower into bite sized pieces. Boil 4-5 minutes or until tender crisp. Place in a strainer and drain very well.
  • Add heavy cream, cream cheese and butter to a saucepan and stir over medium heat until smooth and cream cheese is melted.
  • Add seasonings, bring to a boil and let boil 2 minutes while whisking.

2 cloves Garlic ((minced))

6 tbsp Bacon bits ((cooked, divided))
1/4 cup Green onions ((chopped, divided))

Steps:

  • Preheat the oven to 450 degrees F (232 degrees C).
  • In a large bowl, toss the cauliflower florets with butter. Season with sea salt and black pepper.
  • Transfer the cauliflower to a small 1.5 quart (1.4 L) casserole dish in a single layer. (Line the pan unless it's glass or stoneware. If there's too much cauliflower to fit in a single layer, roast on a larger baking sheet instead.) Roast in the oven for 15-20 minutes, until crisp-tender.
  • Meanwhile, in the same bowl, whisk together the sour cream and heavy cream, until smooth. Stir in the minced garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper. (Don't oversalt - it will get more salty as the cheese melts later.)
  • When the cauliflower is done roasting, take it out and leave the oven on. Add the cauliflower to the bowl and mix with the sauce.
  • Return the cauliflower mixture to the casserole dish. Top with remaining cheese and bacon bits.
  • Bake for 5-10 minutes, until the cheese melts. Top with remaining green onions.

1/2 cup all-purpose flour
2 cups half-and-half, heated
Kosher salt
1/2 teaspoon ground white pepper
1/4 cup grated Parmesan
1 cup grated Gruyere cheese
2 tablespoons chopped flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Bring a large pot of water to a boil and cook the cauliflower for about 5 minutes. Drain and set aside.
  • In a medium saucepan, melt 2 tablespoons of the butter over low heat. Whisk in the flour until well combined with the butter and it forms a brown paste. Pour in the hot half-and-half and keep whisking until it starts to thicken. Remove from the heat and season with salt and white pepper. Add in the Parmesan and 3/4 cup of the Gruyere. Keep whisking.
  • Spread about 1/2 cup of the mixture on the bottom of an 8-by-8-inch baking dish. Place the cauliflower on top and spoon the rest of the sauce on top. Melt the remaining 2 tablespoons butter in a small saucepan over low heat and stir in the parsley. Drizzle the parsley butter over the cauliflower and sprinkle with the remaining 1/4 cup Gruyere.
  • Bake until the top of the gratin is browned, about 30 minutes. (My advice would be to check halfway through, as ovens vary.) Serve.

1 Lb Cauliflower, (cut into florets (about 4 1/2 cups))
2 Tbsp Butter
1 Tbsp + 1 tsp Almond flour
1 Tbsp + 1 tsp Coconut flour
1 1/2 Cups 2% Milk ((or Almond))
3/4 tsp Salt
1/4 tsp Onion powder
1/4 tsp Garlic powder
1/8 tsp Pepper
1 Cup Packed Cheddar cheese, (grated and divided (4 oz) (or dairy free))

Steps:

  • Turn your oven to 375 degrees and bring a large pot of salted water a boil. Add the cauliflower (once boiling) and cook until it just begins to become tender, about 5-7 minutes. Drain well and then spread out onto some paper towel. Use another layer of paper towel to gently press as much moisture out of the cauliflower as you possibly can.
  • While the cauliflower cooks, melt the butter in a medium pan over medium/high heat. Once melted, add in the almond flour and coconut flour and whisk, stirring constantly, until it just begins to brown, about 1 minute.
  • Whisk in the milk, salt, garlic and onion powder and pepper until smooth and bring to a boil. Once boiling reduce the heat to medium, stirring occasionally, until VERY thick, about 7-8 minutes.
  • Remove the milk mixture from the heat and whisk in 1/2 cup of the cheese until smooth.
  • Spread 1/3 of the sauce on the bottom of an 8x8 inch pan. Pack the cauliflower into the pan on top and then spoon the rest of the sauce over top. Sprinkle with the remaining cheese.
  • Bake until golden brown and bubbly, about 25-30 minutes. OPTIONAL: broil for 2-3 minutes until golden.
  • Let stand for 5 minutes and DEVOUR!

1 cup sour cream
1 cup cheddar cheese
3 green onions (sliced thin)
1/2 teaspoon salt
1/4 teaspoon pepper (coarse ground )
3 slices bacon (optional. Cooked and crumbled.)

Steps:

  • Cook the entire bag of cauliflower in the microwave. I use a covered dish with about a tablespoon of water on the "frozen vegetable" setting. Or follow instructions on the package. You can use fresh cauliflower. One medium head should yield about one pound and cook in a microwave in 4-5 minutes with a bit of water.
  • Slice 3 green onions.
  • Move cauliflower to the mixing bowl and mash with a potato masher. You could also use a mixer or food processor, but you are NOT trying to cream this. Add cheddar cheese, sour cream, scallions, salt, and pepper. Add bacon if using.
  • Mix well and move to a baking pan. Maybe refrigerated or cooked now.
  • Cook in preheated oven 375° convection until the top is browned. About 20 minutes until nicely browned. (you may adjust the temp depending on your needs for timing or cooking with other foods)
  • Try to let set for 5 minutes before serving.

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Cut the cauliflower away from the core and discard the core. Roughly chop the cauliflower florets into bite size chunks.
  • If using an Instant Pot: Add 1 cup of water to the Instant Pot along with the chopped cauliflower. Close the lid and set the valve to sealing. Set to pressure cook for 3 minutes. When the 3-minute cook time is finished, turn the valve to quick release. Once all of the pressure is released, open the Instant Pot and pour the cauliflower into a colander to drain off any excess water.
  • If using the stove top to cook the cauliflower: Place the cauliflower in a large pot and cover with water. Cover the pot with a lid and bring to a boil over medium-high heat. Reduce the heat to medium and simmer covered for 15 minutes, or until the cauliflower is very tender. Pour the cauliflower into a colander to drain.
  • Pour the hot cauliflower into a large bowl and add the butter, heavy cream, garlic powder, salt, and pepper to taste. Use an immersion blender to puree the cauliflower until smooth, or transfer to a food processor to puree.
  • Pour half of the cauliflower into a 9x12 glass casserole dish. Sprinkle with half of the shredded cheese. Top with the remaining cauliflower, then sprinkle with the rest of the cheese.
  • Bake the mashed cauliflower for 25-30 minutes at 350 degrees until the cheese is melted and the cauliflower is bubbling around the edges.
