CHEESY BACON MEATLOAF

- Preheat the oven to 350 degrees F. Line a 9-by-4 loaf pan with parchment paper.
- Combine the meatloaf mix, breadcrumbs, Cheddar, bacon, chives, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands to mix together until combined well. Transfer the mixture to prepared loaf pan. Bake the meatloaf for 30 minutes.
- Meanwhile, stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl.
- Remove the meatloaf from the oven and brush the top and sides all over with the ketchup glaze. Bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish. , Bake, uncovered, at 350° for 65-75 minutes or until meat is no longer pink and a thermometer reads 160°. Let stand for 10 minutes before slicing.

- Heat 280ml water in a saucepan for a minute until warm but not too hot to stick your finger in (don't burn yourself!). Remove from the heat, then add 50g butter. Combine the flour, yeast, sugar and 1 tsp salt in a large bowl or a tabletop mixer. Add the warm water and beat to make a soft dough. Knead for 10 mins by hand, or 5 mins in a mixer, until the dough feels stretchy and smooth. Tip into a clean, oiled bowl and cover with oiled cling film. Leave to rise for 1½-2 hrs, or until doubled in size.
- Brush a large baking tray with oil and scatter over the polenta. Knock the air out of the dough. Pinch off small pieces (about the size of a walnut), then roll each piece into a ball and put on the baking tray. Leave a little space between each dough ball.
- Heat oven to 180C/160C fan/gas 4. Cover the tray with oiled cling film, then prove for 30 mins-1 hr until the dough has doubled in size and the balls are touching. Mix the remaining butter with the garlic. When the rolls are ready to cook, brush the tops with the garlic butter and scatter with the cheeses. Bake for 25-30 mins until the dough balls are cooked through. Leave to cool for 5 mins, then serve.

- Mix hamburger, eggs, bread crumbs, ketchup, salt, pepper and oregano.
- Spread flat on a sheet of aluminum foil.
- Top with spinach; spread flat.
- Top with layer of ham; roll up mixture (don't roll up with aluminum foil) and seal foil around roll.
- Cook at 350°F for 45 minutes.
- Open up pocket, place cheese on and return to oven until cheese is melted.

Steps:
- Rinse frozen broccoli under cold running water to separate pieces; drain well.
- Mix hamburger, eggs, bread crumbs, ketchup, milk, 1/2 teaspoon salt, pepper and oregano.
- Place mixture on a large sheet of aluminum foil and shape into a rectangle 12 by 10 inches.
- Arrange broccoli on hamburger mixture to within 1/2 inch of edges.
- Sprinkle with 1 teaspoon salt.
- Arrange ham on top of the broccoli.
- Roll up the rectangle carefully, beginning at the short side and using foil to lift. Press edges and ends of roll to seal.
- Place on a rack in shallow roasting pan.
- Cook uncovered in a preheated 350 degree oven for 75 minutes.
- Overlap cheese on top; cook just until cheese begins to melt, about 1 minute longer.
- The centre of the meat-loaf roll may look pink due to the ham.
- Do-ahead tip: After rolling, cover and refrigerate meat-loaf roll no longer than 24 hours. Cook as directed, but increase cooking time to 90 minutes.

- Divide dough into 24 portions. Shape each portion around a cheese cube to cover completely; pinch to seal. Place each roll in a greased muffin cup, seam side down. - Place ground chuck in a bowl.
- Place remaining ingredients in blender and mix.
- Pour and stir into ground chuck.
- Roll out meat mixture into a rectangle.
- Spread refried beans on meat, arrange peppers and sprinkle with cheese.
- Roll up, jelly roll fashion, place seam side down in a 9 x 5 loaf pan.
- Sprinkle tortilla chips on top.
- You can add more cheese on top if desired.

- Butter a 900g loaf tin and line with baking parchment that comes well above the longer sides. Make up the bread following the pack instructions. Leave the dough to rest under a cloth for 10 mins. Shape into a log on a lightly floured surface and divide it into six pieces. Mix the cheese, garlic, parsley and butter together.
- Roll each piece of dough out into a rectangle, or as near to a rectangle as you can, the width should be just shorter than the width of the tin and the length about twice the depth of the tin, and lay the rectangles out side by side. Divide the cheese mixture between them (reserving 1 tbsp) and spread it out as much as possible. Fold each rectangle in half and then put them into the tin one after the other, starting at one end. You may need to squeeze them a bit to fit them all in. Don't worry about the dough sticking out of the top of the tin. Cover the dough and leave to rise for about 30 mins or until risen. Crumble the remaining cheese mix over the top.
- Heat oven to 180C/160C fan/gas 4. Bake for 40-45 mins or until golden and puffed (don't under-cook it or it may be squidgy in the middle). Leave the loaf in the tin for 10 mins, then lift it out with the parchment. Serve it whole, ready to be pulled into pieces.

- In a heavy, small saucepan combine garlic, broth, and wine.
- Bring to a boil, reduce heat.
- Boil gently, uncovered, over medium heat about 25 minutes or until garlic is tender and 1/3 of the liquid remains.
- Preheat oven to 325.
- Place roll in a greased 8x8x2 inch baking pan.
- Cut an"X" about 1/2 inch deep in the top of each roll, spreading each roll open slightly.

- Combine meat, stuffing mix, water and egg in a bowl. Make sure it is well mixed, then set aside for 15 minutes.
- Lay out a rectangle of baking paper, and press the meatlof mixture out to form on large flat rectangle, on the paper.
- Combine the ricotta and garlic, and spread over the meat. Sprinkle with shredded cheese.
- Using the paper to help, roll the meat, swiss roll style.
- Place in a greased baking dish, and bake at 180C for 30-40 minutes, or until cooked through and browned on top. Slice to serve.
