Steps:

  • In medium saucepan, warm corn slightly covered in water to about room temperature.
  • DO NOT OVER COOK.
  • Drain corn, place back in pan.
  • Add butter and cream cheese.
  • Cook, stirring over medium heat only until melted, add salt and pepper.
  • Pour into serving bowl and sprinkle slight amount of parsley for color.

3 Garlic Cloves Minced (or 1 Tbsp garlic powder)
3 Tbsp Chopped Chives *
1 Tsp Chili Flakes (optional)
Salt and fresh ground pepper, to taste

Steps:

  • Melt butter into a skillet over medium-high heat. Add in corn, garlic, salt, and pepper and saute for 4-5 minutes.
  • Add in cream cheese and milk, and mix until fully combined. Stir in shredded cheese and cook until all cheese melts and you get a thicker consistency. Then remove from heat.
  • Serve and garnish with chives and chili flakes. Enjoy!

1 tablespoon chopped fresh parsley
1 teaspoon chopped garlic
½ teaspoon Creole-style seasoning
4 tablespoons butter
⅓ cup diced onion
1 (8 ounce) package cream cheese

Steps:

  • In a saucepan over medium heat, combine the corn, parsley, garlic, Creole seasoning. Add enough water to cover, bring to a boil and cook until tender. Drain and set aside.
  • In a large skillet over medium heat, add the butter and onion; saute until onion softens. Add corn and cream cheese. Cook over low heat for 10 minutes. Remove from heat, chill completely and serve cold.

1 sweet onion, chopped
1 stick butter, melt 6 tablespoons of it
3 eggs
1 c sour cream
1/3 c yellow corn meal
1/2 - 1 tsp kosher salt
1/2 -1 tsp fresh cracked black pepper
1 - 14 -15 oz can, creamed corn
1 c shredded cheddar cheese

  • 1. Preheat oven to 350 degree F.
  • 2. In a skillet; saute the onion and peppers with 2 tablespoons of butter.
  • 3. In a bowl whisk the remaining 6 tablespoons of butter with the eggs and sour cream.

Steps:

  • Heat butter in a deep 12-inch heavy skillet over medium-high heat until foam subsides, then cook scallions, stirring occasionally, until softened, about 5 minutes. Add corn and 1/2 teaspoon each of salt and pepper and cook, stirring occasionally, 5 minutes.

4 slices bacon, cut up
6 medium fresh ears of corn or 3 cups frozen corn (thawed)
6 tablespoons water
4 tablespoons onions, finely chopped
1 dash pepper
3 ounces cream cheese, cubed
1 -2 tablespoon milk, if needed or desired,see recipe (OPTIONAL)

Steps:

  • In saucepan, cook bacon until crisp.
  • Remove bacon, reserving 2 tablespoons of drippings in pan.
  • Drain bacon and set aside.
  • If using fresh corn, cut the corn from cobs, with a sharp knife, at 2/3 depth of the kernels-- do NOT scrape cob.
  • Add the fresh or frozen corn, water, onion and pepper to the saucepan.
  • Bring just to boiling.
  • Reduce heat, cover and simmer for 5 to 7 minutes, or until corn is crisp-tender.
  • Add the cream cheese to the undrained corn mixture.
  • Stir over low heat until melted.

6 cups corn (Sometimes I use fresh corn cut cut off the cob, I don't measure it so I'm not exactly sure how many cups there were)
1/2 diced red pepper
1/2 diced onion
1/4 c. butter
1 c. milk
1/2 tsp. seasoned salt
1/4 tsp. pepper
4 oz. cream cheese
1 c. grated cheese (cheddar, Swiss, pepper jack, pretty much any cheese that melts well)
1 T. flour (optional)
fresh parsley (minced (optional))

Steps:

  • Put corn, onion, and red pepper to slow cooker. Add milk, butter, pepper, and seasoned salt. Stir together.
  • Cook in slow cooker on low for 4 hours.
  • Just before serving, add cream cheese and grated cheese to corn. Stir together until cheese is melted.If the creamed corn is a little too thin, sprinkle flour over creamed corn and stir together. Let it sit in the slow cooker for a few minutes and it will thicken. After it is the desired consistency and cheeses are melted, remove from heat and add minced parsley, if desired.

4 cups half-and-half
4 ounces pecorino, freshly grated
6 slices prosciutto
1/2 pint mascarpone
1 tablespoon unsalted butter
1 tablespoon EVOO for frying prosciutto (if not using deep-fryer)
Neutral oil, for frying, optional
Kosher salt

Steps:

  • Invert a small bowl in a very large bowl. Hold the corn so it's standing up on top of the inverted bowl with the thick base at the bottom. Carefully shave off all the kernels from the corn cobs with a knife. Add the corn to a medium saucepan, then take a tablespoon and scrape the cobs where the kernels once were. What you will get is a sweet/milky/starchy slurry that will help thicken your corn. Add the half-and-half and bring to a simmer over medium-high heat for 3 to 5 minutes. Once the mixture has thickened, add the pecorino and stir to combine, allowing it to melt and incorporate.
  • Cut the prosciutto into narrow ribbons and add half of it to the creamed corn mixture along with the mascarpone and butter. Add the remaining prosciutto to a deep-fryer, or small saute pan with hot olive oil and fry until crispy, about 1 minute. Remove to a paper towel-lined plate before stirring into the creamed corn. Taste and adjust the seasoning with salt before serving.
