Steps:
- Bring water, chicken broth, and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
- While rice is cooking, preheat the oven to 375 degrees F (190 degrees C).
- Place shredded chicken in a large casserole dish. Add soup, water chestnuts, Cheddar cheese, broccoli, mushrooms, cayenne, salt, and pepper. Stir well, then spread the top so it's even.
- Bake in the preheated oven until nicely browned and bubbly, 30 to 45 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of water to a boil; add chicken tenders. Cook until no longer pink in the center and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 10 to 15 minutes. Drain and cool until easily handled, about 5 minutes. Shred chicken with 2 forks.
- Beat cream cheese in a blender until smooth. Add ranch dressing, Buffalo wing sauce, and water; blend until smooth. Mix in shredded chicken and Colby Jack cheese.
- Spread rice in a 9x13-inch baking dish. Pour Buffalo chicken mixture on top. Sprinkle Cheddar cheese on top. Cover baking dish with aluminum foil.
- Bake in the preheated oven until Cheddar cheese is melted and bubbly, about 45 minutes. Sprinkle corn chips on top.

This cheesy chicken casserole is so delicious and easy to fix but it may take some time out of your day but its worth it! Everyone in my family loved am 13 and with the help of my mother it turned out GREAT! I hope you and your family enjoy! This was from my grandmother in Panama (a Spanish country above South America) which she let me try and share this with others.

Steps:
- Bring 1 cup salted water to a boil; add fresh carrot slices.
- Cover; simmer until not quite tender, about 15 minutes; drain.
- Preheat oven to 375°F.
- In a 3-quart saucepan, melt butter over medium heat.
- Stir in flour and then add broth, stirring constantly, until mixture thickens.
- Set 3/4 cup cheese aside.
- Add remaining cheese into thickened soup mixture.
- Stir until cheese melts.
- Stir in chicken, carrots and pimento.
- Pour into 1 1/2- quart casserole dish.
- Sprinkle reserved cheese over top.
- Bake for 40-35 minutes, or until hot and bubbly.

my mom would make this for us growing up and i liked it so i started making it for my family and they love it. i like eating mine with lemon juice the kids use ketchup. quick, easy, and kid friendly. You can use more or less cracker crumbs depending on how you like it.
