- Preheat the grill to medium.
- Arrange the peppers on the hot grill, turning them when the skin is charred and blistered, and all sides have been roasted. Remove the peppers to a bowl and set aside to cool. Scrape the flaking skins from the chiles and dice. Grill the green onions in the same way until lightly charred and wilted. Remove them from the grill to a cutting board and finely chop. Add the chiles, onion and the shredded cheeses to a medium bowl and mix well. Put 1 tortilla on top of well seasoned comal and spread it with some of the cheese mixture. Top with some Chipotle Pico de Gallo and cover with a second tortilla. After about 2 minutes carefully flip and toast the other side, about 2 to 3 minutes. The tortillas should be golden brown and the cheese should be thoroughly melted. Repeat with remaining tortillas and filling. Cut the quesadillas into quarters for single servings or into eighths for appetizers.
- Combine all the ingredients in a glass bowl and mix well. It is best to let this stand for at least 1 hour to allow the flavors to marry. Drain the salsa of excess liquid and refrigerate until ready to use.

- • Adjust rack to top position and heat broiler to high. Wash and dry all produce. • Halve, core, and thinly slice bell pepper into strips. Halve, peel, and thinly slice onion; mince a few slices until you have 1 TBSP (2 TBSP for 4 servings). Dice tomato. Finely chop cilantro. Quarter lime.
- • Heat a large drizzle of olive oil in a large pan over medium-high heat. Add bell pepper and sliced onion; cook, stirring occasionally, until slightly softened, 3-4 minutes. • Add BBQ Seasoning and a pinch of chipotle powder (add more if you like things spicy). Season with salt and pepper. • Cook, stirring occasionally, until veggies are softened and lightly browned, 2-3 minutes. (TIP: Add a splash of water if veggies begin to brown too quickly.) Turn off heat.
- • While veggies cook, in a medium bowl, combine tomato, cilantro, minced onion, and a squeeze of lime juice. Season generously with salt and pepper. • In a small bowl, combine sour cream and half the ranch dressing (you'll use the rest in the next step). Season with salt and pepper.
- • In a second medium bowl, mix together pepper jack, cheddar, and remaining ranch dressing; stir until thoroughly combined.
- • Rub one side of each tortilla with a drizzle of oil. Place tortillas oiled sides down on a baking sheet. Add half the cheese mixture to one half of each tortilla. Top with veggies and remaining cheese mixture. Fold tortillas in half to create quesadillas.
- • Broil quesadillas on top rack until golden brown, 1-2 minutes per side. TIP: Watch carefully to avoid burning. • Cut quesadillas into wedges and divide between plates. Top with pico de gallo and drizzle with ranch crema. Serve with remaining lime wedges on the side.

I have spent many, hungry nights reminiscing about the mouth-watering Mexican food I used to binge on back in college. Weekend rituals involved scrambling to find a ride from campus into town, where we would set up shop at El Azteca in Poughkeepsie, NY with a couple of steak quesadillas. I sometimes daydream about sneaking away Upstate for lunch, but unfortunately, a two-hour train ride just isn't in the cards for me during the work week. That's why I needed a quesadilla recipe that would hit all the right notes and satisfy my craving, any time it hits. Plus, who in their right mind doesn't love meat and melted cheese jammed together into a flour tortilla sandwich?! Now that you understand why I'm so invested in building the perfect quesadilla, let's break down the layers. I use a standard flour tortilla because it gets so perfectly golden in the pan for peak crispiness. Once you're ready to get cheesy, I'm here to tell you that I'm team Monterey Jack. It's got the bite of a sharp cheddar, while pairing perfectly with steak. Plus, it melts beautifully for getting that perfect cheese pull! I turn up the heat in these, since I LIVE for spicy food. (Ask my co workers; they claim their spice-tolerance has increased since I started cooking for them!) For this recipe, the steak is marinated in adobo sauce with cumin and coriander, but once cooked, you throw in more chipotle peppers for an extra kick and a hint of smoke. Lastly, a layer of pico de gallo is my little secret to making these steak quesadillas so damn addictive. The onions and tomatoes cook just enough to mix all their delicious flavors into the cheese and steak. An important step is to discard the seeds from the tomatoes! This helps remove all the excess liquid from the tomato that would make your quesadillas soggy. (FYI, there is nothing sadder than a soggy quesadilla.) Throwing a big party? Feel free to get ahead and cook the steak and make the pico in advance. You can even have all the ingredients prepped out so you can encourage your guests to get involved in assembling. - In a shallow baking dish toss steak with adobo sauce, 1 teaspoon of salt, coriander, cumin and water. Cover and refrigerate for at least one hour and up to overnight.
- Meanwhile, in a medium bowl toss diced tomatoes, onion, cilantro and lime juice to combine. Season with salt and set aside.
- Remove the steak from the refrigerator, wiping off any excess marinade and discarding it. In a medium skillet, heat 2 tablespoons oil over medium-high. Add steak and cook, flipping once, until golden brown and cooked to medium, about 4 minutes per side. Transfer to a cutting board and let rest for 10 minutes, then cut against the grain into ½ inch cubes. Transfer to a bowl and mix with chipotle peppers.
- Place one tortilla down on a plate or cutting board and layer with ½ cup grated cheese, ½ cup steak, ⅓ cup pico de gallo and another ½ cup cheese. Top with another tortilla. Repeat until you have 4 assembled quesadillas.
- In a large skillet (big enough to fit the tortilla), heat 1 tablespoon oil over medium heat. Using a wide spatula carefully place the quesadilla in. Cook, flipping once, until golden brown and crisp, 5-6 minutes per side. Transfer to a cutting board and repeat with the remaining oil and assembled quesadillas.
- Cut each quesadilla into 4 triangles and serve with any remaining pico de gallo.
GRILLED CHIPOTLE-CHICKEN QUESADILLAS

- Brush chicken breasts with olive oil and sprinkle with salt and pepper. Lay chicken on a grill over medium heat (you can hold you hand 1 or 2 inches above grill level only 4 to 5 seconds) or put chicken in a grill pan over medium heat. Cook chicken 4 to 5 minutes per side, or until cooked through (cut to check). Slice cooked chicken breasts into 1/4 in.-thick slices. Keep grill or grill pan hot.
- In a small bowl, whisk together chipotle chile, sour cream, mayonnaise, lime juice, and cilantro.
- Spread 1 tablespoon chipotle-lime sauce on each of the tortillas. Top 4 of the tortillas each with 1/2 cup cheese and a quarter of the chicken slices, then cover with the remaining tortillas (sauce side down). Put each quesadilla on a dinner plate.
- Slide quesadillas off the plates onto the grill over medium heat, or slide into a grill pan over medium heat (you may need to grill the tortillas in batches). Grill uncovered turning once, until cheese is melted and both sides are golden, about 2 minutes each side (use a large spatula and tongs to flip the quesadillas). If grilling in batches, keep finished quesadillas warm in a 200 degree oven until ready to serve.
- Slice each quesadilla into wedges and serve with salsa on the side.

- Microwave VELVEETA in microwaveable bowl on HIGH 1 to 2 min. or until VELVEETA is completely melted, stirring every 30 sec. Add meat, beans and peppers; mix well.
- Heat large heavy nonstick skillet on medium-high heat. Spoon about 1/2 cup meat mixture onto half of 1 tortilla; fold in half. - Beat the egg white, trim and slice the spring onions, peel and crush the garlic, shred the chicken, crumble the cheese into a bowl; add the spring onions, garlic, coriander, chicken, chilli sauce and lime juice and toss together.

QUESADILLAS AND BLACK BEAN PICO DE GALLO
Here is a fast, easy way to make a great snack with chicken. Kids will like the cheesy goodness. Adults will love the pico de gallo (literally, "beak of the rooster." It is an excellent chunky salsa with the nutrients kicked way up by the black beans. I use a combination of butter and olive oil in a skillet to get the crispier exterior. If you like, you can spray each quesadilla with cooking spray and bake at 350 degrees until the cheese is melted, but this does not give the same crispness. Prep time includes 3 hours refigeration time for the pico.

- Note: order Great American Land and Cattle company Steak and Meat Seasoning at www.grtamerican.com.
- Cook chicken in 1 T medium hot oil about five minutes per side until juices run clear. Remove from heat.
- Rinse and drain black beans. Add them to a mixing bowl. Add in cooked chicken.
- dice 1/4 C cilantro, cucumber, 5 roma tomatoes, 3 jalapenos (if you like heat, leave the seeds in, if you don't like it so hot, seed the peppers first), and 1/2 C onion.
- Add to a second smaller bowl.
- Add seasonings pico de gallo mixture bowl. Use Great American land and Cattle Company seasoning or use spice blend above.
- cover and refrigerate at least 3 hours for flavors to mix.
- Heat 2 T butter and 2 T olive oil in a large cast iron skillet.
- Mix filling ingredients together , (except for cheeses and pico de gallo)
- Spread 1 wedge Laughing Cow cheese on 1/2 of flour tortilla.
- Add about 1/4 of filling ingredients. Spread with back of spoon.
- add 1/8 C mozzarella cheese on top.
- Add salt and pepper to taste.
- Fold one side over to form a semi-circle.
- cook in hot oil about 5 minutes per side until lightly browned (be careful when flipping the quesadilla over--use one spatula to flip and one on top to hold the filling intact) Do not burn.
- Repeat with 3 remaining tortillas.
- Remove from pan and slice in 4 wedges each.
- Serve with tomato slices, avocado slices and sour cream.

- First assemble the pico de gallo, combine the diced tomatoes, jalapeño pepper, diced onions, cilantro, garlic and the lime juice.
- Mix the pico de gallo. Add salt until it tastes the way you like it and then place in fridge.
- Heat a large flat skillet on medium. After it gets hot, place several drops of vegetable oil in the skillet and wipe the entire surface of the pan.
- The pan will be coated with a sheen of oil.
- Place one tortilla into pan, sprinkle 1/2 cup of cheese over top of tortilla and add the chicken (if using refried beans add these now too).
- When cheese begins to melt fold over the tortilla and allow it to heat for 1 minute more.
- Place on plate and slice into triangles.
- Repeat steps for each tortilla.

- In a small bowl, combine the tomato, chopped onion, lime juice, cilantro, jalapeno, salt and pepper.
- Set the pico de gallo aside.
- 2 In a large skillet, heat 1/2 tablespoon olive oil.
- Add the chicken breast meat, and saute until cooked through and juices run clear.
- Remove chicken from skillet, and set aside.
- 3 Put the remaining 1/2 tablespoon of olive oil in the hot skillet and saute the sliced onion and green pepper until tender.
- Stir in the minced garlic, and saute until the aroma is strong.

- To make the quesadillas:
- Preheat oven to 400°F.
- In a shallow baking pan arrange squash, onion, and garlic in one layer and drizzle with oil, tossing to coat. Roast mixture in middle of oven 15 minutes, or until garlic is tender and transfer garlic to a work surface. Roast squash and onion until tender, about 15 minutes more. Discard peels from squash, onion, and garlic.
- In a food processor purée squash, onion and garlic with salt and pepper to taste until smooth. Squash purée may be made 2 days ahead and chilled, covered.
- Spread about one fourth squash purée on each of 4 tortillas and sprinkle each with about one fourth bell pepper and about one fourth cheese. Top each quesadilla with a plain tortilla, pressing gently together. Spread each side of quesadillas with 1/2 tablespoon butter.
- Heat a griddle or 7-inch non-stick skillet over moderately high heat until hot and cook quesadillas, 1 at a time, until golden, about 3 minutes on each side, transferring to a cutting board.
- Cut each quesadilla into 6 to 8 wedges and serve warm with chipotle dip.
- To make the dip:
- In a small bowl stir chili and lime juice into sour cram until combined well. Dip may be made 2 days ahead and chilled, covered. Makes about 1 cup.
