Cheesy Southwest Chicken Stuffed Red Peppers image

Whenever a dish looks so impressive, tastes so good and is so easy to make, we call it a win. These Southwest-flavored peppers, stuffed with cheesy chicken and rice, and topped with crunchy tortilla chips, will make you feel like a dinnertime champ.

1 cup Old El Paso™ Thick 'n Chunky medium salsa (from 16-oz jar)
5 large red bell peppers
2 tablespoons olive oil
1/2 cup chopped onion
1 medium poblano chile, seeded and chopped
1 serrano chile, seeded and chopped
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1/4 teaspoon salt
3/4 cup uncooked instant white rice
1 1/4 cups shredded cooked chicken
1 1/4 cups shredded Cheddar cheese (5 oz)
1/2 cup crushed tortilla chips
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) baking dish with cooking spray; spread salsa in baking dish.
  • Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add onion, poblano chile and serrano chile. Cook 6 to 8 minutes, stirring occasionally, until vegetables are softened. Stir in taco seasoning mix, tomatoes, broth and salt. Heat to simmering. Stir in rice; remove from heat. Let stand 2 minutes to allow rice to absorb most of the moisture. Add chicken and cheese.
  • Stuff peppers with chicken and rice mixture. Stand peppers upright in baking dish.
  • Cover tightly with foil. Bake 20 minutes. Uncover; sprinkle tops of peppers generously with crushed tortilla chips. Bake uncovered 15 to 20 minutes longer or until peppers are tender and tops are lightly browned. Let stand 10 minutes before serving. Serve with sour cream.

6 medium green peppers
1-1/2 pounds ground beef
1 medium onion, chopped
1/2 teaspoon salt
2 cups shredded cheddar cheese
2-1/2 cups chopped tomatoes (3 medium)
1-1/2 cups cooked rice

Steps:

  • Cut tops off peppers and remove seeds. In a Dutch oven, cook peppers in boiling water 6-8 minutes or until crisp-tender., Meanwhile, brown beef, onion and salt in a skillet; drain. Cool slightly. Stir in the cheese, tomatoes and rice., Drain peppers and stuff with meat mixture. Place in a baking dish. Bake, uncovered, at 350° for 20 minutes or until heated through.

4 boneless skinless chicken breasts
2 oz sliced pepperoni
1/2 cup shredded mozzarella cheese (about 2 oz)
1 tablespoon olive oil
4 cups water
1 package (7 oz) uncooked elbow macaroni
1 jar (1 lb 8 oz) tomato pasta sauce (any variety)
Chopped fresh basil, if desired

Steps:

  • Place chicken breasts flat on cutting surface. With knife parallel to cutting surface, cut a lengthwise slit in each chicken breast, forming a pocket, keeping other 3 sides intact. Stuff each chicken breast with pepperoni and mozzarella cheese, pressing the edges of each chicken breast to seal.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil about 9 minutes, turning occasionally, until well browned on both sides. (Chicken pockets will open slightly during cooking.) Remove from skillet and set aside.
  • In same skillet, slowly add water so as not to splatter. Increase heat setting to high. Heat water to boiling. Add macaroni; cook about 3 minutes or until almost tender. Do not drain. Stir in pasta sauce. Heat to boiling. Return chicken to skillet. Reduce heat to medium . Cover and simmer 8 to 10 minutes or until juice of chicken is clear when center of thickest part is cut (170°F). Garnish with basil.

6 green bell peppers
1 1/2 lbs lean ground beef
1/2 cup chopped onion
3/4 cup cooked rice
1 egg
2 (15 ounce) cans Italian stewed tomatoes, divided
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 (8 ounce) package shredded cheddar cheese, divided

Steps:

  • Cut off portion of tops of bell pepper, and remove seeds, and membranes.
  • Place in roaster with salted water and boil.
  • Cook 10 minutes so they will be only partially done.
  • Drain and set aside to cool.
  • In a large skillet,, brown ground beef and onion and drain. Add rice,egg, 1 can tomatoes, worcestershire and seasonings, and simmer for 5 minutes.
  • Remove from the heat and add 1 cup cheese and mix well.
  • Stuff peppers with mixture and set upright in buttered, round baking dish(you may have to trim little slivers off bottoms of peppers so they will sit upright.).
  • Pour remaining can of tomatoes over top and around peppers.
  • Bake uncovered at 350 degrees for 25 minutes.
  • Remove from oven and sprinkle remaining cheese on top and return to oven for 10 minutes.

1 (8 ounce) package cream cheese, softened
¼ cup grated Parmesan cheese
¼ cup lemon juice, divided
⅛ cup buttermilk
2 tablespoons garlic powder
1 teaspoon ground black pepper, divided
1 teaspoon dried thyme, divided
1 cup mayonnaise
1 teaspoon garlic powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Split chicken breasts down the middle with a knife, but do not cut fully in half.
  • Mix cream cheese, Parmesan cheese, 2 tablespoons lemon juice, buttermilk, 2 tablespoons garlic powder, 1/2 teaspoon pepper, and 1/2 teaspoon thyme together in a bowl. Divide mixture and stuff evenly into split chicken breasts. Set into a casserole dish.
  • Mix mayonnaise, 2 tablespoons lemon juice, 1 teaspoon garlic powder, 1/2 teaspoon pepper, and 1/2 teaspoon thyme together in a separate bowl. Apply mayo mixture evenly to both sides of the chicken breasts.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

2 boneless skinless chicken breasts, cut in 1-inch cubes
1/2 cup Italian dressing (Kraft Roasted Red Pepper Italian with Parmesan recommended)
4 large square bell peppers
1 teaspoon garlic powder
1 teaspoon paprika
1 roma tomato, diced
8 ounces shredded muenster cheese
4 slices cheddar cheese

Steps:

  • Preheat oven to 375°F.
  • Place chicken pieces in a bowl and pour the dressing over them. Mix well.
  • Let marinate at room temperature 10 minutes.
  • Meanwhile, cut tops off peppers. Do not discard.
  • Remove seeds and membranes from peppers. Set peppers aside.
  • Heat a large skillet over medium-high heat.
  • Add chicken and marinade and cook, stirring, until marinade comes to a boil and chicken is lightly colored.
  • Stir in garlic, paprika and tomato, and cook, stirring, for 1 minute.
  • Reduce heat to medium-low and stir in shredded Muenster.
  • Cook, stirring, just until cheese melts.
  • Remove from heat and let cool slightly.
  • Spray a baking dish with cooking spray. Stand peppers upright in dish.
  • Spoon chicken mixture into peppers. Pour any leftover sauce over and around them.
  • Replace tops on peppers.
  • Bake for 30-40 minutes, or until chicken is cooked through and peppers begin to soften.
  • Remove dish from oven and remove pepper tops.
  • Place a slice of cheddar on each pepper. Replace tops.
  • Return to oven and bake just until cheddar melts, about 5 minutes.

They won't be as flavorful but it will allow you to skip this entire step.)
  • Mix up the chipotle sour cream and add half of it to a bowl for your filling. Reserve the rest of the chipotle sour cream for topping the stuffed peppers.
  • In a small saute pan, melt the butter and soften the red onion for just a few minutes. Add the chipotle pepper and the seasonings. Add to the bowl with the chipotle sour cream.
  • Shred the rotisserie chicken with your fingers and place it in the bowl with the chipotle sour cream. (You really only have to use about half of the meat off of 1 chicken to fill 4-6 peppers. Reserve the rest of the chicken for another use if you wish. If not you will have extra filling which can be used to make enchiladas, or a wonderful filling for sandwiches.)
