2 cups shredded or finely chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1/2 cup chopped red bell pepper
4 medium green onions, thinly sliced (1/4 cup)
1 can (15 oz) Progresso™ black beans, drained, rinsed
1/2 cup cooked white rice
1 package (11.5 oz) Old El Paso™ flour tortillas for burritos (8 tortillas)
3 cups shredded Monterey Jack cheese (12 oz)
Cooking spray
1 teaspoon olive oil
1 cup Old El Paso™ Thick 'n Chunky salsa
1/2 cup sour cream

Steps:

  • In medium bowl, mix chicken, bell pepper, green onions, beans and rice. Top half of each tortilla with 1/2 cup chicken mixture and 1/2 cup of the cheese. Fold other half of each tortilla over filling, press down slightly. Spray top halves of tortillas with cooking spray.
  • Heat 12-inch skillet over medium-low heat. Place 2 filled tortillas at a time, sprayed sides down, in skillet. Cook 4 to 5 minutes, turning once, until golden brown and hot. Cut into wedges. Serve with salsa and sour cream.

2 teaspoons olive oil
3 tablespoons finely chopped onions
1 (15 1/2 ounce) can black beans, drained and rinsed
1 (10 ounce) can whole kernel corn, drained
1 tablespoon brown sugar
1/4 cup salsa
1/4 teaspoon red pepper flakes
2 tablespoons butter, divided
8 (8 inch) flour tortillas, look for whole wheat, low calorie
1 1/2 cups shredded monterey jack cheese, divided
salsa, for garnish
sour cream, for topping if desired

Steps:

  • Heat oil in a large saucepan over medium heat. Stir in onion, and cook until softened, about 2 minutes. Stir in beans and corn, then add sugar, salsa, and pepper flakes; mix well. Cook until heated through, about 3 minutes.
  • Melt 2 teaspoons of the butter in a large skillet over medium heat. Place a tortilla in the skillet, sprinkle evenly with cheese, then top with some of the bean mixture. Place another tortilla on top, cook until golden, then flip and cook on the other side. Repeat with remaining tortillas and filling.

1 green pepper, cut into strips
1 onion, sliced
1/2 cup TACO BELL® Thick & Chunky Salsa
1/2 cup canned black beans, rinsed
6 flour tortillas (6 inch)
1-1/2 cups KRAFT 2% Milk Shredded Sharp Cheddar Cheese

Steps:

  • Cook chicken in large skillet sprayed with cooking spray on medium-high heat 4 min., stirring frequently.
  • Add peppers and onions; cook 4 to 5 min. or until crisp-tender, stirring frequently. Stir in salsa and beans; cook 3 min. or until heated through.
  • Spoon about 1/4 cup chicken mixture onto half of each tortilla; top evenly with cheese. Fold tortillas in half. Heat large nonstick skillet on medium heat. Add quesadillas to skillet in batches; cook 2 min. on each side or until lightly browned on both sides. Fold each quesadilla in half or cut into wedges to serve.

1 medium sweet yellow pepper, chopped
1 cup finely chopped onion
2 garlic cloves, minced
1 teaspoon canola oil
2 medium tomatoes, chopped
1 cup frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1/4 teaspoon pepper
1/8 teaspoon salt
10 flour tortillas (6 inches)
1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, saute the yellow pepper, onion and garlic in oil for 2 minutes. Stir in the tomatoes and corn; cook 2 minutes longer. Add the black beans, pepper and salt. Cook until vegetables are tender; drain., Spritz one side of each tortilla with cooking spray; place plain side up on baking sheets coated with cooking spray. Tasty tortillas filled with chicken, spring onions and goats' cheese or, for a milder cheese flavouring, replace the tangy goats' cheese with ricotta cheese or any other soft cheese. Served with avocado and garlic dip, diced cucumber and tomatoes, these are ideal for a light meal or a supper snack. Tortillas have been a staple of the Mexican diet since the time of the Aztecs. I have adapted this recipe, from an International Masters '1001 recipes for pan or wok' recipe card, and posted it for the 2005 Zaar World Tour. 350g = 12 ounces; 175g = 6 ounces.

1 egg white
1 bunch spring onions or 1 bunch shallot
4 garlic cloves
350 g chicken breast fillets, cooked
175 g goat cheese
2 tablespoons fresh coriander, chopped, plus sprigs to garnish
2 tablespoons sweet chili sauce
1 lime, juice of
8 flour tortillas
1 tablespoon sunflower oil
lime wedge, to garnish

Steps:

  • Beat the egg white, trim and slice the spring onions, peel and crush the garlic, shred the chicken, crumble the cheese into a bowl; add the spring onions, garlic, coriander, chicken, chilli sauce and lime juice and toss together.
  • Spoon equal quantities of chicken mixture onto the tortillas, brush the edges of each tortilla with egg white, fold in half and press to seal.
  • Brush a large non-stick pan with half the oil and gently fry half the tortillas for 5 minutes on each side, until browned. Keep warm and repeat with the remaining oil and tortillas. Garnish the quesadillas with coriander and lime wedges and serve.

2 x 400g cans mixed bean salad
3 tbsp chipotle sauce
small pack coriander , chopped
140g red leicester cheese, grated
pack 8 flour tortillas

Steps:

  • Drain the beans, reserving 2 tbsp of the can water. Tip into a bowl with the reserved water, chipotle sauce, coriander and half the cheese. Mash everything well with a fork or potato masher.
  • Lay out 4 tortillas, then spread each with ¼ of the cheesy beans. Top with the remaining cheese, then top with another tortilla and use your hands to press them together.
  • Heat a griddle on a medium-high heat. Microwave each quesadilla for 45 secs to start the cheese melting, then griddle for 1-2 mins on each side, until the quesadillas are golden and charred. Repeat with the rest, keeping warm in a low oven. Cut them into wedges to serve.

Steps:

  • Preheat oven to 350°F (180°C).
  • In a large pan over medium heat, cook the chicken, beans, corn, and salsa.
  • In a springform pan, lay down one tortilla, then top with chicken mixture and cheese.
  • Layer another tortilla on top and continue to stack until pan is full.
  • Top with more cheese.
  • Bake for 30 minutes or until cheese is melted.
  • Top with sour cream, guacamole, and salsa.
