1 (10 1/2 ounce) can cream of chicken soup

Steps:

  • Defrost potatoes, melt butter, and mix together all ingredients.
  • Bake at 350 degrees for 1 hour in a 9x13 baking dish.

1/2 cup bacon crumble
2 cups shredded double cheddar cheese blend
1/4 cup bacon crumble

Steps:

  • Preheat oven to 400F.
  • Dump cream of bacon soup, milk, salt, pepper, garlic powder and onion powder into a large mixing bowl. Stir well.
  • Add the frozen diced hash brown potatoes to the bowl.
  • Stir until the potatoes are well coated in the soup mixture.
  • Add the shredded mozzarella cheese, diced onion and bacon crumble to the bowl. Stir well.
  • Dump the potato mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  • Place the dish in the oven and bake for 40 minutes.

  • Place potatoes on a baking sheet and poke holes in two sides with a fork.
  • Coat potatoes with olive oil, and sprinkle with salt and pepper.
  • Bake for at 425°F (220°C) for 45 minutes.
  • Remove potatoes from oven, and let cool. Chop into 1-inch (2 ½ cm) pieces.

1-2 tbsp olive oil
2 tsp salt
250 g (+-9oz) streaky bacon (chopped)
1 onion (finely chopped)
2 garlic cloves (crushed)

½ cup milk
¾ cup heavy/whipping cream
2 tsp salt
1 tsp pepper

Steps:

  • Pre-heat the oven to 180ºC.
  • Toss the potatoes with olive oil and salt and transfer to a baking sheet. Allow to bake until crisp and golden (approximately 30 minutes) then remove from the oven.
  • In the meantime, fry the onion and bacon until the bacon is crisp. Add the garlic and cook for another 20 seconds then remove from the heat.
  • Place the potatoes, bacon and onion mixture and half of the cheese into a casserole dish.
  • Whisk the eggs, milk, cream and seasoning together and pour over the potatoes and bacon. Top with the remaining cheese and place in the oven.

Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish for any meal.

1/2 pound bacon
3 extra large russet potatoes (peeled and chopped into 1/2"-3/4" pieces, about 6 cups worth)
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 1/2 cups shredded cheddar or Mexican blend shredded cheeses
3 green onions (sliced thin)

Steps:

  • COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
  • COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
  • Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

6 potatoes; peeled & thinly sliced
1/2 c onion; chopped
2 c cheddar cheese; shredded
1 c bacon; cooked and crumbled; approx. 1 pound
2 c milk
1/2 c half & half
4 Tbsp flour
4 Tbsp butter

Steps:

  • 1. Use a large pot. Saute chopped onions in butter till soft but not browned.
  • 2. In a small bowl, combine flour, salt and pepper. Stir flour mixture into onion mixture.
  • 3. Add milk and half and half. Stir and cook over medium heat till mixture begins to thicken (about 3 minutes).
  • 4. Turn off heat.
  • 5. Add 1 1/2 cups cheese to the sauce and stir till melted and smooth.
  • 6. Add sliced potatoes, bacon and stir well to combine.
  • 7. Pour mixture into a casserole dish sprayed with no stick spray. Cover with foil and bake at 350 for 35 minutes.
  • 8. Remove foil, sprinkle reserved cheese over top and return to oven to bake another 30 minutes or until potatoes are soft, cheese is melted and edges begin to brown.

5 medium russet potatoes (peeled and sliced into chunks or rounds)

10 slices bacon (chopped, divided)
4 medium onions (thinly-sliced)
1-2 tablespoons fresh garlic (minced, addmore or less to taste)

seasoned salt
2 cups shredded cheese (divided, add more or less to taste)
3 tablespoons unsalted butter (melted)
1/2 cup chicken broth
cooking spray or butter, for greasing

Steps:

  • Preheat oven to 400 degrees. Prepare the baking dish with cooking spray or butter. Set aside.
  • Pull out all of the ingredients.
  • Wash and peel potatoes, then slice or chop.
  • Next, boil potatoes in salted water, until they start to become tender; usually not more than 10 minutes. Do not overcook them or they will become mushy! Depending on the size, timing is difficult to predict. When cooked, drain.
  • In the meantime, using a large skillet, fry the bacon pieces until crisp over medium heat. Use as much or as little bacon as you want. Drain on paper towel, crumble and set aside.
  • Keep a few tablespoons of the bacon fat in the skillet and add sliced onions. Stir onions, over medium heat, until onions become very tender and start to brown.
  • Add garlic, combine with onions and remove from heat.
  • Cover the bottom of the pan with potato slices or chunks. Sprinkle with seasoned salt and pepper.
  • Scatter onions all over top of potatoes, then the bacon.
  • Add cheese. Then repeat the process.
  • More potatoes.
  • Onions.
  • Bacon.
  • More cheese.
  • Totally cover the top with remaining potatoes. Try to cover up any holes with potato.
  • Drizzle with melted butter, remaining bacon and some seasoned salt and pepper to taste.
  • Pour chicken broth over top of casserole and cover with cheese.
  • Cover with foil and bake for 30 minutes.
  • Uncover and bake until cheese has completely melted and the top is golden brown; about another 15 minutes.
  • Allow to rest for at least 5 minutes before serving, if not 10. Serve with sour cream if desired. Enjoy!

2 large potatoes (cubed in 1/2 inch pieces)
2 slices thick cut bacon (sliced)
1 1/2 cups yellow onion (diced)
1 tablespoon butter
2 tablespoons butter
2 tablespoons all purpose flour
1 1/2 cups milk
1/4 cup heavy cream
3 oz. cream cheese ( or sour cream)
salt & pepper (to taste)
pinch nutmeg
1 cup white cheddar cheese (divided {such as Kerry Gold Dubliner})

Steps:

  • Place the diced potato into a small pot. Pour in enough cold water to cover potatoes. Cover with lid and bring to boil. Reduce to simmer for 5 minutes or until they barely are fork-tender. Drain and set aside. Wipeout pot with a paper towel and set aside.
  • While potatoes simmer, render out bacon slices and brown. Remove to a paper towel and pour off excess grease. Saute onions in 1 tablespoon butter in the same pan until tender, 5-7 minutes. Remove from heat.

This casserole is so easy and perfect for any gathering or holiday meal.

6 cups chopped potatoes
6 pieces bacon (cooked and chopped (save a little for garnish))
3/4 cup mayonnaise
2 cups shredded cheddar cheese (divided)
1 cup chopped green onion or can use regular onion
1/4 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons minced garlic
1/4 cup sour cream

Steps:

  • Put potatoes in a large mixing bowl, add cooked bacon, mayonnaise, 1 3/4 cups shredded cheddar cheese, chopped onion, black pepper, salt, garlic, and sour cream. Mix all ingredients together and place in a sprayed 9 x 13 baking dish. Cover with foil and bake in preheated 350 degree oven for 45 minutes.
  • Remove foil, add the other 1/4 cup cheddar cheese, extra bacon and onion if desired and cook another 15 to 20 minutes.

4 green onions, stalks chopped
12 eggs
1 cup half-and-half
2 cups diced potatoes, diced hash browns
1 1/2 cups shredded potatoes (hash browns)
1 cup diced cheddar cheese cube
2 cups shredded cheddar cheese, divided
1/2 teaspoon lawry's seasoning
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon yellow mustard powder
1/2 teaspoon paprika

Steps:

  • Preheat oven to 350. Grease a 9x13 inich baking dish with nonstick cooking spray and set aside.
  • Cook bacon according to package directions and dice once cool.
  • Crack 12 eggs into a large mixing bowl. Whisk in 1 cup of half and half or milk.
  • Stir in 1/2 teaspoon Lawry's seasoning, black pepper, salt, yelllow mustard powder, and paprika.
  • To the mixing bowl, add 2 cups diced breakfast potatoes and 1 1/2 cups shredded hash brown breakfast potatoes, 1 cup cheddar cheese cubes, and 1 cup shredded cheddar cheese. Mix well.
  • Reserve half cup fresh veggies/herbs and 1/2 cup chopped bacon for garnish. Add the remaining veggies/herbs and bacon to mixing bowl and mix well.
  • Pour mixture into prepared baking dish. Top with remaining bacon, veggies, herbs, and cheese.
  • Bake in oven 50 minutes or until egg mixture is set in center. Cover with foil half way through baking.
  • Allow casserole to slightly cool before serving.

2 Tbsp. GREY POUPON Dijon Mustard
1/4 cup KRAFT Grated Parmesan Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water 20 min. or just until tender; drain. Return to pan; cover with cold water. Let stand until cooled.
  • Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour; cook 1 min. Gradually add milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups shredded cheese; cook and stir 1 min. or until melted. Stir in mustard.
  • Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
  • Bake 25 to 30 min. or until heated through. Top with remaining cheeses and bacon; bake 5 min. or until shredded cheese is melted.
