LEMON CREAM CHEESE BUNDT CAKE
This lemon cream cheese bundt cake is a dense, but moist cake, and so decadent. It's got the perfect light lemon flavor in every bite, and the sweet cheesecake like filling is so creamy and delicious - it's the perfect summer cake!

- Preheat the oven to 325 degrees Fahrenheit. Spray a standard sized 10 inch bundt pan with nonstick spray, making sure to get into all the corners and crevices.
- In a medium sized bowl, add the flour, baking soda, and salt, and whisk them together. Set it aside.
- Add the butter and sugar to a stand mixer with a paddle attachment (or use a large bowl with a hand mixer) and mix them together until light and fluffy. Make sure to scrape down the sides.
- Add the eggs one at a time, stirring them in fully before adding the next one.
- Add in the lemon zest, lemon juice, and vanilla and mix to combine. Scrape down the bottom and sides of the bowl.
- Add in half the flour mixture, and mix until just combined. Then add in half the sour cream, mix it in. Then repeat with the rest of the flour, then sour cream. Make sure to scrape the bowl with a rubber spatula to get everything included.
- Add in the food coloring and mix it in well to your desired color, with no streaks. Set the batter aside.
- In another medium bowl, whip the cream cheese until nice and smooth with a hand mixer, or stand mixer.
- Add the sugar and stir until combined.
- Add in the egg, lemon zest, and vanilla extract and mix it until it's smooth and combined.
- Pour about half of the cake batter into the prepared bundt pan.
- Spoon the cream cheese filling over the top of the cake batter, keeping it away from the edges and middle of the pan.
- Add the remaining cake batter to the top, and smooth out the top evenly.
- Bake the cake for 60 to 75 minutes, or until a toothpick comes out clean. A few moist crumbs are okay.
- Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
- When the cake is cool, make the glaze by whisking together the powdered sugar and milk in a medium sized bowl until smooth. Start with 4 TBS of milk and add more if needed. The glaze should be thick, but pourable.
- Place the cake onto a cake stand, or serving plate. Pour the glaze evenly over the cake.
- Let the glaze sit for about 30 minutes until it is set.
- Slice it into slices and enjoy.

CHEESECAKE-STUFFED LEMON CAKE
I got this recipe in my email, but it's originally from the March 2008 issue of Oxmoor House. Only making chocolate things sometimes gets boring, so I like to switch it up. This cake uses shortcuts, but you could easily use your own homemade cream cheese frosting, lemon curd, and cheesecake. Just as a warning, the price of all the ingredients for this cake cost around $25. *Note: Prep time includes an hour of refrigeration.

- Preheat oven to 350°.
- Beat first 6 ingredients at low speed with an electric mixer 1 minute; beat at medium speed 2 minutes.
- Fold in chopped chocolate and lemon rind. Pour batter into 2 greased and floured 9-inch round cake pans.
- Bake at 350° for 30 to 32 minutes or until a wooden pick inserted into center comes out clean.
- Cool in pans on wire racks 10 minutes. Remove from pans to wire racks, and cool completely.
- Wrap and chill cake layers at least 1 hour or up to 24 hours.
- Using a serrated knife or a string of unflavored dental floss, slice cake layers in half horizontally to make 4 layers.
- Place 1 layer, cut side down, on a cake plate. Spread with 1/2 cup cream cheese frosting; sprinkle with one-third of chopped cheesecake and 1/2 cup raspberries. Repeat procedure twice.
- Note: When stacking the layers, press the middle of each layer down a little, so the cake doesn't have as much of a dome when you put the last layer on.
- Place final cake layer on top of cake, cut side down. Spread remaining frosting on top and sides of cake.
- Cover and chill in refrigerator until ready to serve.
- Just before serving, heat the lemon curd to liquid consistency and drizzle the lemon curd over the cake. Garnish with remaining raspberries, strawberries, and mint leaves (if using).
- Store in refrigerator.

CHEESECAKE-STUFFED BLUEBERRY MUFFIN
Bran muffins beware -- beneath the sugary tops of these dump-and-stir blueberry muffins is a creamy cheesecake surprise that makes them the only muffin you'll crave. Eat them for breakfast or dessert and add a little lemon zest to the batter if you like yours with some citrus zing.

- Preheat the oven to 375 degrees F.
- For the cheesecake filling: Whisk together the cream cheese, sour cream and granulated sugar in a small bowl until well combined. Transfer to a medium plastic resealable bag and refrigerate until ready to use.
- For the batter: Line a 12-cup muffin tin with liners and coat with nonstick spray.
- Whisk together the flour, cornmeal, sugar, baking powder and salt in a medium bowl. Whisk together the milk, oil, vanilla and eggs in a large bowl. Fold the flour mixture into the egg mixture until well combined and smooth. Gently fold in the blueberries.
- Fill each muffin cup about three-quarters of the way with batter. Snip the tip off the plastic bag. Insert the tip into the center of each cup and pipe some of the cream cheese mixture into the batter. Sprinkle the top of each cup with 1 teaspoon coarse sugar. Bake until golden brown and a toothpick inserted in the side the muffins come out clean (not the cream cheese center), 14 to 16 minutes. Cool the muffins in the pan on a rack. Serve at room temperature.
LEMON CHEESECAKE CUPCAKE
Steps:
- For the graham cracker crumbs: In small bowl, combine the graham cracker crumbs and butter and stir. Set aside.
- For the cheesecake filling: Using an electric mixer, beat the cream cheese and confectioners' sugar for 3 minutes. Beat in the vanilla and egg white until smooth and creamy. Set aside.
- For the cake batter: Preheat the oven to 325 degrees F; line cupcake pans with 12 cupcake liners.
- In a medium bowl, combine the pastry flour, baking powder and salt and set aside. Using an electric mixer with a paddle attachment, cream the sugar, butter and cream cheese on medium speed until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the lemon juice, limoncello and lemon zest and mix until incorporated. On low speed, add the flour mixture and buttermilk alternately, beginning and ending with the flour.
- Sprinkle 1 tablespoon of the graham cracker crumbs in the bottom of each liner, fill about halfway with the cake batter and top with the cheesecake filling. Bake until an inserted toothpick comes out clean, 25 minutes.
- For the buttercream frosting: In the bowl of an electric mixer with a paddle attachment, beat the butter and shortening on medium speed until light and fluffy. Add the almond and lemon flavorings and beat for 2 minutes. Add the confectioners' sugar one cup at a time, alternating with 1/4 cup water, and beat until incorporated.
- Top each cupcake with some of the buttercream frosting.
LEMON CHEESECAKE WITH LEMON-ROSEMARY SHORTBREAD CRUST

- For the crust: Preheat the oven to 325 degrees F. Place an oven rack in the center position, without any racks above it.
- Place the cookies in a food processor; pulse to the texture of sand. Add the crushed cookies to a 10-inch springform pan and pour in the melted butter. Using your hands, mix together the cookie crumbs and butter until they are completely combined and hold together when pinched. Firmly press the cookie crust into the bottom of the pan. Press down on the crust with the bottom of a cup to ensure it is tightly packed.
- Bake the crust for 12 to 14 minutes, or until golden brown all over. Remove from oven and let cool. When the pan is cool enough to handle, wrap it in foil three-quarters of the way up the sides of the pan--this will prevent any water from getting into the cheesecake while it is baked in a water bath.
- For the cheesecake: In a stand mixer fitted with the paddle attachment, add the cream cheese, granulated sugar, sour cream, eggs, lemon juice, lemon zest, vanilla extract and salt. Slowly turn the mixer up to medium-high speed; continue to mix for 2 minutes, until the ingredients are completely combined and smooth.
- Set aside 1/4 cup of the lemon curd and reserve it for the topping. With a rubber spatula, fold the remaining lemon curd into the cheesecake mixture. Pour the mixture over the cooled crust and spread it evenly, making sure to flatten the top. Gently tap the pan a few times on a flat surface to even out the mixture.
- Use the reserved lemon curd to make a fun design in the top of the cheesecake. For instance, you can dollop 15 small dots, about a heaping 1/2 teaspoon each, around the border of the cake and then 6 small dots towards the center of the cake and 1 dot directly in the center. Drag a skewer around the center of the first ring of dots to pull the lemon curd into a teardrop shape. Repeat with the interior circle of lemon curd drops.
- Place the foil-lined springform pan in a large roasting pan. Fill the roasting pan with hot water until it reaches about 1 inch up the sides of the pan. Bake the cheesecake for 55 to 60 minutes, until the edges are set but the center still has a pudding-like jiggle. Remove from the oven and let sit 10 minutes before removing the pan from the water bath. Let the cheesecake sit another 30 minutes. While the cheesecake is still warm, run a paring knife around the inside edge of the pan and then release the sides of the pan. (If you do this after the cheesecake has cooled completely, the cake may tear slightly.) Let the cheesecake cool completely before slicing and serving. Refrigerate any cheesecake not being served immediately.
- Preheat the oven to 350 degrees F. Line a 13-by-9-inch baking pan with foil, leaving a 2-inch overhang on two sides. Lightly grease the foil and sides of the pan with butter.
- In a food processor, pulse the sugar with the lemon zest and rosemary until well combined. Remove 2 tablespoons of the sugar mixture and reserve.
- Add the butter, vanilla and salt to the food processor with the sugar and pulse until combined. Add the flour, about 1 cup at a time, pulsing to combine after each addition. After the last addition, you may have to stir and scrape down the sides of the food processor to help incorporate all of the flour. Continue to pulse until the dough comes together.
- Turn the dough out into the prepared baking pan and press it in evenly. Poke the dough all over with a fork and sprinkle it with the reserved sugar.
- Use a knife to cut the dough into approximately 3-by-1-inch rectangles (or whichever shape you prefer). Bake until golden brown at the edges and golden in the center, about 25 minutes. As soon as the cookies come out of the oven, use a bench scraper or knife to re-cut the lines of the cookies. Cool in the pan for 15 minutes, then carefully remove the cookies with the foil and cool completely on a rack.

- Crush the digestive biscuits in a food bag with a rolling pin or in the food processor. Melt the butter in a saucepan, take off heat and stir in the brown sugar and biscuit crumbs.
- Line the base of a 20cm loose bottomed cake tin with baking parchment. Press the biscuit into the bottom of the tin and chill in the fridge while making the topping.
