A whole-wheat quesadilla is filled with Cheddar and Parmesan cheeses, black beans, and salsa and then baked to crispy perfection. Serve with a pudding cup for dessert.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Mix salsa, Cheddar cheese, Parmesan cheese, black beans, and cilantro together in a bowl. Spoon salsa mixture on the center of 1 tortilla and spread evenly. Place remaining tortilla on top of filling. Arrange quesadilla on a baking sheet and brush top tortilla with butter.
- Bake in the preheated oven until top begins to brown and cheese is melted, 9 to 12 minutes. Slice quesadilla with a pizza cutter; garnish with guacamole and red bell pepper.

- Preheat the oven to 375°F.
- In a medium bowl, mix the cheeses, chili peppers, and scallions.
- Lightly oil a griddle and heat over medium heat. Add the tortillas, one at a time, and fry lightly until faintly colored on each side.
- Arrange 3 tortillas on a large baking sheet. Top each with one-third of the cheese mixture. Cover with the remaining tortillas and press together lightly.
- Bake for 10 minutes, or until the cheese begins to run. Cut into wedges and serve immediately.

These are so easy and taste so good. I learned this recipe when I worked in food service in college. We had to make 1000's of them so I got really good at it. I am not exaggerating when I tell you there are NEVER leftovers. You can even prepare them ahead of time and cook when you are ready.

Steps:
- Sprinkle approx 1/4 cup of cheese (I just sprinkle on as much as I want so this is a guess)on half the tortilla.
- Sprinkle approx a Tbls of Chilies ontop of cheese (usually sprinkle a little more cheese on top of chilies to make it stay together better).
- Fold the tortilla in half and butter it like a grilled cheese.
- Warm up non-stick griddle (I use my electric griddle you can use a skillet or frying pan).
- Fry like a grilled cheese untl golden brown on both sides or cheese is melted.
- Cut them in half and eat!
- 7. I like to dip it in sour cream or salsa.
- 8. *One sub I have made is getting fajita meat and add just like the chilies to make them more of a meal.
