POTATO AND CHEESE PANCAKES
Take your Latkes to the next level with this fresh take on the old favourite. Infused with cheese and served with our delicious Stewed Tomato Dipping Sauce, this recipe is sure to impress!

Steps:
- Working in batches, place potatoes in a potato ricer and squeeze firmly until all excess moisture is removed. Alternatively, excess moisture may be removed by wringing potatoes in a clean tea towel.
- Transfer potatoes to a large bowl. Add cheeses, eggs, pepper, garlic powder, onion powder, salt and smoked paprika. Stir to combine. Sprinkle with flour and stir to combine. Shape mixture into 12 patties.
- Heat oil in a large deep frypan over medium-high heat.
- Working in batches and using ¼ cup potato mixture for each pancake, spoon potato mixture into frypan. Using back of a spatula, flatten slightly. Cook until golden brown, about 3 minutes per side. Remove pancakes with a slotted spoon and drain on paper towels. Repeat with remaining potato mixture.
- Serve with Stewed Tomato Dipping Sauce.

Delicious and cheesy, these potato pancakes are a huge hit with my 3 boys! Great as a side dish or for snacking! These travel well wrapped in foil for the lunch box. Can be served plain or with ranch dressing as a dip.

- Mix together potatoes, eggs, and milk in a large bowl.
- Stir flour, Parmesan cheese, Cheddar cheese, bacon bits, onion salt, baking powder, salt, and black pepper into potato mixture using a fork.
- Heat corn oil and butter in a large skillet over medium heat.
- Spoon about 2 tablespoons potato mixture into per patty into skillet. Cook patties until golden brown, about 4 minutes per side.
- Drain cooked pancakes on paper towel-lined plate.

CHILI CHEESE POTATO CASSEROLE

Steps:
- Place diced potatoes in a large pot 3/4 full with water. Bring to a boil and simmer for 10-15 minutes, until fork tender. Drain and pour into a 13×9 casserole dish.
- In a large skillet, brown ground beef and onion. Drain. Add tomato sauce and crushed or diced tomatoes. Stir in chili powder, cumin, garlic powder, salt and cayenne pepper. Simmer for 15 minutes.
- While the chili simmers, melt 2 T. butter in a small saucepan. Whisk in flour and cook for 2 minutes. Whisk in milk, bring to a boil and simmer until thickened, stirring frequently. Remove from heat and stir in 1 1/2 cup cheese. Stir until cheese is completely melted. Season to taste with salt and pepper.
- Pour cheese sauce over the potatoes in the casserole dish.
- Top with the chili.
- Sprinkle the remaining 1/2 cup shredded cheese over the chili. Bake at 350F for 20-25 minutes, until bubbly and cheese is melted.

CHEESE & POTATO PANCAKES
These are great with smoked cheese but also work with any other hard cheese. Makes a nice snack. I got it from a cheese guide leaflet. It's lovely served with a poached egg.

Steps:
- Grate the potatoes into a colander, squeezing out the excess moisture.
- In a bowl, mix potatoes and all other ingredients, season to taste.
- Heat oil in a large frying pan and drop 2-3 heaped tablespoons of the mixture into the pan.
- Using a spoon flatten the mixture slightly and fry on medium heat for approx 7-10 minutes, turning halfway, until golden brown.
- Keep the potatoe cakes warm in the oven on low heat while finishing the rest.
- You'll need to add oil as necessary for the second batch.

- Preheat oven to 400°F Cut slit in end of each chile to allow release of steam during cooking. Brush chiles with oil and roast in oven 5 to 10 minutes, until skins are lightly charred and blistered. Place in plastic bag and seal. Let them steam 5 minutes; using small knife, carefully peel off skin. Slit each chile open from top to bottom and remove seeds.
- In boiling salted water cook potatoes until just tender, then drain and place in bowl. Crush with fork, mix in goat cheese, and season to taste with salt and pepper. Stuff chiles with this mixture and arrange single layer in baking dish.
- For sauce, in frying pan heat oil, then add red chiles, garlic, and scallions and cook about 2 minutes, until softened. Add tomatoes, corn tortillas, brown sugar, and oregano, and cook over gentle heat 10 minutes. Pour into blender and blitz to almost smooth but slightly textured sauce. Pour sauce over stuffed chiles and bake 10 to 15 minutes. Sprinkle top with grated cheddar cheese, pour sour cream over that, and serve. Makes 4 servings.

- Use the large holes of the grater to grate cheese and potatoes.
- Transfer the potatoes into a kitchen towel and squeeze as much liquid as you possible can.
- Place the potatoes into a large bowl. Add cheeses, onion, garlic powder, flour, salt, pepper and eggs. Stir to combine.
- Heat oil over medium high heat. Use an ice cream scoop to take equal amounts of potato mixture and add to the pan. Use the back of a spoon to flatten the patties. Cook about 3 or 4 patties at a time.
- Cook until browned about 4 minutes per side.
- Repeat with remaining potato mixture.
- Transfer the pancakes to a plate lined with paper towel to remove excess oil.
- Prepare the dipping sauce by mixing sour cream with chili garlic sauce.
- Serve the potato pancakes while still warm.
