Cheese, Onion and Potato Pasty image

This cheesy pasty is a delicious alternative to the regular Cornish pasty and is quick and easy to make.

Number Of Ingredients 7

450g / 1lb packet puff pastry
2 medium potatoes diced small
1 medium onion
220g / 8oz Cheddar Cheese
1 egg
1 Tablespoon chopped parsley
Salt and pepper to taste

Steps:

  • Peel and chop the potato into small chunks and the onion finely chopped and grate the cheese. Finely chop the parsley.
  • Mix all the ingredients together well in a bowl.
  • Divide the pastry in 4 and roll each piece into a round about 15 cm (6 inches) in diameter.
  • Put a quarter of the cheese mixture on each one, dampen the edge with a little water, then fold over and crimp the edges.
  • Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
  • Bake them for 45 minutes.

500 g pastry dough, short crust or 500 g bought pastry dough
2 cups grated cheese, mature cheddar
1 onion, large, finely chopped
1/2 teaspoon pepper, course black

Steps:

  • Cut pastry into rounds, I use a side plate and just cut around it.
  • Pre heat the oven to 210°C.
  • Mix the grated cheese with the onion adding the pepper and salt,.
  • Beat the egg and brush around the edge of the pastry and carefully lift the pastry up and pinch together, brush the egg over the outside and poke a few vent holes on either side, I use a satay stick to do this.
  • Cook in the oven for approximately 15 minutes or until light golden brown.

The traditional Cornish recipe uses a cheese such as Double Gloucester or English Cheddar, but I have made some very tasty varieties using Stilton, Feta, Bleu Cheese, and even Havarti.

puff pastry (I use frozen, but homemade is fine if you are a purist)
1/2 ounce unsalted butter
2 medium onions, finely chopped
1/2 lb double Gloucester cheese or 1/2 lb cheddar cheese, grated

  • Thaw the pastry.
  • If using homemade, put your dough in the refrigerator to chill.
  • Preheat oven to 400°F.
  • Melt the butter in a frying pan on a low heat.
  • Mix in the onions and cook them until they are just beginning to soften.
  • Mix them with the cheese and parsley.
  • Roll out the pastry and cut out 4 rounds, each about 6 inches in diameter.
  • Put a quarter of the cheese mixture on one half of each one.
  • Fold over the other side and crimp the edges together.
  • Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
  • Bake them for 30 minutes and serve hot.

2 large egg yolks
1 heaping teaspoon salt
2 tablespoons cold water
1 2/3 cups all-purpose flour
2 tablespoons vegetable shortening, teaspooned out
7 tablespoons cold, unsalted butter, diced
2 4-cup popover pans
2 large potatoes (boiling, not baking)
Scant 1/2 cup finely chopped green onions (about 6)
4-5 ounces sharp Cheddar: 1/3 cup grated, 1/4 cup diced
2 tablespoons grated parmesan
1/4 cup Red Leicester cheese, grated
2 tablespoons chopped parsley
4 tablespoons creme fraiche to bind
Salt and pepper

Steps:

  • Make the pastry by the usual method, then halve it, form each half into a disc, wrap in plastic wrap, and leave in the refrigerator for 20 minutes.
  • Preheat the oven to 400 degrees.
  • Meanwhile, peel and dice the potatoes, put them in a saucepan with plenty of cold water, and bring to the boil. Boil gently for 5-10 minutes, or until the cubes are cooked but still retain their shape. Drain and leave to cool.
  • In a large bowl, combine the green onions, cheese, slightly cooled potato, and parsley. Bind with the creme fraiche and season with salt and pepper. Roll out one of the pastry discs, cut 8 rough circles slightly larger than the indents, and push 4 into the first tray to make the bases. Fill each with an eighth of the mixture and put the remaining 4 circles on as lids. Seal the pie edges with the back of a knife, making a little hole in each one. Repeat for the second tray with the other disc and the remaining half of the filling.
  • Cook for 20 minutes, by which time the pastry should be firm, beginning to turn gold, but still pale, and let the pies stand a little out of the oven in their trays before easing them out of the molds.

1 lb onion, peeled and sliced
1 lb sharp cheddar cheese, grated
2 tablespoons vegetable oil
salt and pepper
1 egg, beaten, for glazing

Steps:

  • Heat the oven to 400°F
  • Roll out the pastry and cut out 6 circles 8in in diameter.
  • Heat the oil and cook the onions in it until starting to soften.
  • Take off the heat and cool. Stir in the grated cheese and season well.
  • Divide the mixture between the 6 circles and crimp the edges together. Brush with a little of the beaten egg.
  • Put on a baking sheet and bake in the oven for 20-30 minutes until the pastry is golden.

1 tbsp vegetable oil
2 onions, sliced
4 thyme sprigs, leaves picked
150g mature cheddar (or a mixture of strong hard cheeses), grated
1 tbsp wholegrain mustard
4 spring onions, sliced
250g plain flour, plus extra for dusting
125g cold butter
large pinch of cayenne pepper
½ tsp English mustard powder
1 large egg, beaten

Steps:

  • First, make the pastry. Tip the flour into a bowl. Holding the block of butter in its wrapper, grate it directly into the flour (you may need to dip the end of the butter into the flour occasionally if it becomes sticky). Add the cayenne pepper, mustard powder and half the beaten egg, and season with a pinch of salt. Bring everything together with your hands until the mixture starts to clump together. Tip the pastry onto the work surface and knead very briefly into a smooth ball, adding up to 3 tbsp cold water if it's too dry. Squash the pastry into a disc. Wrap and chill while you make the filling.
  • Heat the oil in a frying pan and cook the onions and thyme leaves for 8-10 mins until the onions have softened and started to caramelise. Tip into a bowl and leave to cool. Once cool, mix in the grated cheese, mustard and spring onions.
  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Roll the chilled pastry out on a lightly floured surface to the thickness of a £1 coin. Cut out as many 10-12cm circles as you can (you can use a cup or mug as a template), then re-roll any off-cuts and repeat. You should get about 10-12 circles in total.
  • Spoon a mound of the filling into the centre of each pastry circle, leaving the edges clear. Working with one circle at a time, brush a little of the remaining beaten egg around the edge, then bring two sides up to meet in the middle in a half-moon shape. Pinch the pastry together, crimping the edge to seal. Transfer to the baking tray and repeat with the remaining pastry circles and filling. Brush all the pasties with some beaten egg. Will keep frozen for two months.
  • Bake the pasties for 20-25 mins (or 40-45 mins from frozen) until the pastry is deep golden brown. Leave to cool for at least 10 mins before eating warm, or cool completely and pack into containers for a picnic. Will keep in an airtight container for up to three days.

Pastry can be something you really miss if you can't eat gluten. These pasties have a rich and buttery crust and the filling has a mellow kick.

Yield Makes Two large pasties or three smaller ones.

200g gluten free plain flour
100g unsalted butter
Half tsp xanthan gum
1 egg (beaten)
2-4 tablespoons of cold water for binding.

1-2 cloves of garlic finely chopped (optional)
100g cheddar cheese grated
1 small potato peeled and diced

Steps:

  • Making the pastry (1). Gluten free pastry can be tricky. A small amount of xanthan gum and a little time for it to absorb the water can make it a lot easier to handle. The addition of some egg will help too; it will also make the pastry light and flaky. Mix the flour and xanthan gum together in a bowl. Add the butter in small chunks. Rub the flour/gum mixture and the butter together with your fingertips to form "breadcrumbs."
  • Making the pastry (2). Add 2/3 of the beaten egg to the breadcrumbs and mix. Save the rest of the egg for glazing. Add a little cold water to the mix and work into pastry. You want the pastry to be a little sticky, slightly stickier than conventional pastry as the xanthan gum absorbs water. Wrap it in a plastic food bag and put it in the fridge for an hour.
  • Making the filling. The garlic is optional but, as it's roasted, adds a lovely extra flavour. Mix the cheese, onion, garlic (if using) and potato.
  • Assembling the pasties (1). Heat the oven to 220°C (200°C fan) and lightly oil and flour a baking sheet. Take the pastry out of the fridge and put it on a board lightly covered with gluten free or rice flour. Cut into either two or three equal pieces. Roll each piece into a rough round big enough to fold over into a pasty. Spoon the filling into the centre of each round.
  • Assembling the pasties (2). Brush water round the edges of each pastry circle and fold the pastry over the filling so the edges roughly align. Pinch the edges together and fold them into a thick edge where they meet. Be careful as gluten free pastry is prone to cracking. Use the water and brush to help fix any cracks. Put the pasties on the baking sheet and brush them with the remainder of the beaten egg. Bake for 35-40 minutes. When they come out leave for a couple of minutes then put them on a rack to cool. Eat hot or cold.

2 carrots , cut into 1cm dice
300g jar caramelised onion chutney
1 tbsp thyme leaf , chopped
1 tbsp Dijon mustard
140g mature cheddar , grated
500g block shortcrust pastry
beaten egg , for brushing
poppy seeds , for sprinkling
green salad , to serve (optional)

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a baking tray with baking parchment. Boil the potato and carrots in salted water for 5 mins until tender. Drain well and tip into a mixing bowl.
  • Add the chutney, thyme, mustard, cheese and some seasoning, and gently mix to combine. Put in the fridge to cool.
  • Roll out the pastry to the thickness of a £1 coin, then cut out 8 x 13cm squares. Divide the filling between the squares and brush the pastry edges with the egg. Bring together the 4 corners of each square in the middle, then press all the seams together like a square envelope. Brush with more egg and sprinkle over the poppy seeds. Put the pasties on the baking tray and bake for 30 mins until golden. Serve with a salad, if you like.

1/2 cup solid vegetable shortening (preferably nonhydrogenated), frozen
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
7 tablespoons (or more) ice water
Filling:
4 teaspoons olive oil
2 large onions, thinly sliced
1/2 cup dry white wine
1/2 teaspoon dried thyme
10 ounces skirt steak, cut crosswise on diagonal into 1/4-inch-wide strips
1 teaspoon coarse kosher salt, divided
6 ounces coarsely crumbled Stilton blue cheese (11/3 to 11/2 cups), divided
1 large egg white, beaten to blend

Steps:

  • For crust:
  • Blend both flours and salt in processor 5 seconds. Drop in shortening by tablespoonfuls. Cut in until coarsely diced. Add butter. Cut in until coarse meal forms. Transfer to bowl. Add 7 tablespoons ice water. Toss with fork until moist clumps form, adding more water by teaspoonfuls if dry. Gather dough into ball; divide into 4 equal pieces. Shape each into disk; wrap and chill at least 45 minutes and up to 1 day.
  • For filling:
  • Heat oil in heavy large skillet over medium heat. Add onions. Sauté until deep brown, reducing heat if necessary to avoid burning, about 30 minutes. Add wine and thyme. Simmer until liquid evaporates, stirring often, about 3 minutes.Season with salt and pepper. Cool. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F. Roll out each dough disk between sheets of parchment paper to 9-inch round. Peel top parchment off each. Spread 1/4 of onion mixture on half of each round, leaving 1-inch plain border. Top onions with beef strips. Sprinkle 1/4 teaspoon coarse salt over beef on each, then top each with 1/4 of cheese. Sprinkle with pepper. Brush dough border with some egg white. Using bottom parchment as aid, fold plain dough half over filling. Seal edges. Fold sealed edge over again; press with fork to double-seal.
  • Brush each pasty with egg white. Cut 3 slits in each top crust. Divide pasties (still on parchment) between 2 large rimmed baking sheets.
  • Bake pasties until crust is golden brown and filling is cooked through, about 30 minutes. Cool 10 minutes; serve.
