Cheat's chicken ramen image

This speedy version of the classic Japanese noodle soup makes a delicious everyday dinner or warming lunch - and it's low in fat and calories too

1.2l good-quality chicken stock
small pack coriander, stalks and leaves separated
1 red chilli (deseeded if you don't like it too hot), sliced
2 tbsp light soy sauce
100g grey oyster mushrooms, sliced
100g pack baby pak choi
2 skinless cooked chicken breasts, sliced
100g egg noodles
50g sliced bamboo shoots

Steps:

  • Set a large saucepan over a medium heat and pour in the stock. Finely chop the coriander stalks and add to the stock with most of the chilli. Bring to the boil and add 200ml water. Once boiled, reduce the heat and simmer for 5-10 mins to infuse the coriander and chilli.
  • Add the soy sauce and a grinding of black pepper, then the mushrooms, pak choi, chicken and noodles. Simmer for 2 mins until the noodles soften, before adding the bamboo shoots.
  • Serve in deep bowls topped with coriander leaves and the remaining chilli slices.

1/2 cup pineapple preserves
2 tablespoons teriyaki sauce
For the chicken fingers:
1 large egg white
2 3-ounce packages chicken-flavored ramen noodles, broken into chunks
2 large skinless, boneless chicken breasts, each cut into 8 strips
2 tablespoons sesame seeds
Vegetable or peanut oil, for frying

Steps:

  • Make the dipping sauce: Whisk the pineapple preserves and teriyaki sauce in a bowl.
  • Make the chicken fingers: Combine the egg white and the flavor packet from one ramen package in a large bowl (discard the remaining flavor packet). Add the chicken and toss to coat.
  • Pulse the ramen noodles in a food processor to make fine crumbs. Transfer the crumbs to a baking sheet and stir in the sesame seeds.
  • Heat 1/2 inch of vegetable oil in a large skillet or heavy-bottomed pot until hot but not smoking. Remove the chicken from the egg white mixture, shaking off any excess, and coat with the ramen crumbs, pressing firmly to adhere. Fry the chicken in batches, adjusting the heat if necessary, until golden brown and cooked through, about 2 minutes per side. Transfer to a rack set over a baking sheet to drain. Serve with the dipping sauce.

½ tablespoon chicken bouillon powder
½ teaspoon salt
½ teaspoon garlic powder
2 tablespoons shredded carrots
¼ cup corn, cooked
¼ cup shredded rotisserie chicken
½ cup yakisoba noodle
1 tablespoon scallion, chopped
1 ½ cups hot water

Steps:

  • Make the seasoning: Combine the chicken bouillon, salt, and garlic powder in a 16-ounce (480 ml) mason jar. Stir with a fork until combined.
  • Add the carrots, corn, chicken, Yakisoba noodles, and scallions.
  • Store in the refrigerator for up to 2 days.
  • When ready to eat, shake well to combine, then add hot water. Let sit for 2 minutes, then enjoy!
  • Enjoy!

  • Bring a small pan of water to the boil. Heat the sesame oil in a large saucepan and fry the white part of the spring onions with the ginger, finely chopped chilli, coriander stalks and shiitake mushrooms for 3-4 minutes.
  • Meanwhile, squeeze the miso soup 5 paste from the sachets into a large jug, pour over 700ml boiling water and stir well, to make the miso broth.
  • Drop the eggs into the pan of boiling water and cook for 6½ minutes. Drain and rinse under cold water until cool enough to handle.
  • Add the miso stock, chicken and noodles to the pan with the mushrooms. Bring to a simmer, stir to separate the noodles and cook gently for 3-4 minutes.
