MAPLE-CARDAMOM SAFFRON STICKY BUNS



Maple-Cardamom Saffron Sticky Buns image

I love to sprinkle nigella seeds over the tops of these fragrant buns - they look great and the savory nigella contrasts well with the sweet dough. (Sesame seeds would work, too.) Clotted cream is the perfect accompaniment, but if you can't find it, crème fraîche or mascarpone would also be lovely - whether at breakfast or teatime.

1/2 cup plus 1 tablespoon/140 milliliters whole (full-fat) milk
3 tablespoons/40 grams unsalted butter cut into 6 small cubes, more for greasing the pan
2 tablespoons granulated or superfine sugar (caster sugar)
1/8 teaspoon crushed saffron strands
1 1/2 teaspoons fast-acting (instant) yeast
1 1/3 cups/175 grams all-purpose flour (plain flour), more for dusting
1 1/3 cups/175 grams bread flour (strong flour)
1/2 teaspoon salt
7/8 cup/200 milliliters maple syrup
3 tablespoons/45 grams unsalted butter
3 cardamom pods
1 vanilla bean (vanilla pod)
1/2 teaspoon coarse sea salt, such as Maldon or fleur de sel
1 teaspoon nigella or sesame seeds (optional)
1 1/2 to 2 cups/300 to 400 grams clotted cream, mascarpone cheese, or crème fraîche, for serving

Steps:

  • In a small pot, combine milk, butter, sugar and 1/3 cup/60 milliliters water over medium heat and heat about 1 minute, until butter has melted and the mixture is just lukewarm. (Too much heat will kill the yeast when it's added.)
  • Transfer to a bowl, add saffron and yeast, whisk to combine and then set aside until the mixture is yellow and lightly frothy, 15 to 30 minutes.
  • In a stand mixer fitted with a dough hook, combine both flours, the salt and the milk mixture. Knead for 3 minutes, starting on the lowest speed and gradually increasing to medium, pausing every now and then to scrape down the sides and incorporate any dry bits on the bottom of the bowl. (If there is flour that refuses to be incorporated, add a teaspoon or two of water.)
  • Transfer dough to a lightly floured work surface. Knead by hand for 5 minutes, until smooth and elastic. Cover dough with a damp cloth and let rest for 10 minutes.
  • Grease a 9-inch/24-centimeter cake pan and line it with parchment paper. Divide the dough into 8 equal pieces and roll each into a smooth ball. Place 1 dough ball in the center of the cake pan and then arrange the rest in a circle around it, leaving a 1/2-inch/1-centimeter gap on all sides of each ball. Cover with a slightly damp cloth and leave to rise in a warm place for about 1 1/2 hours, until doubled in size. The buns will press against one other and against the sides of the pan.
  • Toward the end of the rising, heat oven to 375 degrees Fahrenheit/200 degrees Celsius. Bake the risen buns for 20 to 25 minutes, until golden-brown and a skewer inserted in the middle comes out clean.
  • While the buns bake, make the syrup: Use the flat side of a heavy knife to crush the cardamom and discard the papery outer pods, reserving the seeds. Use the knife or a mortar and pestle to lightly crush the seeds. Slit the vanilla bean lengthwise and use the tip of a small knife to scrape out the seeds from both sides. In a small pot, combine maple syrup, butter, cardamom and vanilla seeds over medium heat and cook 5 minutes, whisking occasionally, until the butter has melted and the syrup has thickened. Reduce the heat if necessary to prevent scorching. Set aside and keep warm.
  • As soon as the buns are baked, use a pastry brush to coat them evenly with syrup, then immediately sprinkle with the sea salt and seeds (if using). Let cool 10 minutes before transferring to a serving plate. To eat, slice the bun across the middle, and spread generously with clotted cream.

Desserts made with seviyan - toasted vermicelli noodles - are popular all over South Asia. Sumayya Usmani, who writes the food blog My Tamarind Kitchen, remembers eating this particular dish, Muzaffar Seviyan, every year in Pakistan, where she grew up, to celebrate Eid al-Fitr, the feasting holiday that signifies the end of Ramadan. Toasting the broken noodles in butter until they smell nutty is the key to the dish's depth; the next layer of flavor comes from cooking them in spice-scented milk or syrup; finally, nuts and dried fruit provide crunch and chew.

4 to 5 green cardamom pods
1/2 teaspoon saffron
2 tablespoons ghee, clarified butter or high-fat butter
1/2 cup chopped pistachios, plus 1 tablespoon whole pistachios
6 ounces vermicelli noodles, broken into 1-inch pieces (about 1½ cups)
1 cup sugar
2 tablespoons sweetened or unsweetened flaked coconut, for serving
1 tablespoon raisins, for serving
1 tablespoon slivered almonds, for serving
1 cup khoya (thickened milk solids) or heavy cream, for serving

Steps:

  • Crush cardamom pods with a mortar and pestle or the side of a chef's knife and remove seeds (discard husks).
  • Bring 2 cups water to a boil in a small saucepan. Remove 1 tablespoon of boiling water and use it to steep the saffron. Keep remaining water hot.
  • Heat the ghee in a wok or large skillet over medium-high. Add chopped pistachios and cardamom seeds and stir-fry until the cardamom is fragrant and the pistachios begin to lightly brown, about 1 minute. Reduce heat to medium and add vermicelli. Cook, stirring constantly, until vermicelli is browned and toasted, 3 to 4 minutes.
  • Reduce heat to medium low and add boiling water and steeped saffron. Cook, stirring occasionally, until vermicelli is tender and all the water is absorbed, about 8 minutes.
  • Stir in sugar until dissolved and cook 2 minutes more. Serve warm topped with the coconut, raisins, almonds, whole pistachios and khoya.

Seedless cucumbers often have small seeds; remove them for this Asian-inspired Cellophane-Noodle Salad recipe. Do not rinse the noodles after cooking; it will make them stick.

3 stalks celery, trimmed
4 carrots, peeled and trimmed
1 8.8 ounce bag cellophane noodles (available at gourmet supermarkets and Asian markets)
1 tablespoon plus 1 teaspoon salt
2 tablespoons plus 2 teaspoons rice-wine vinegar
1 teaspoon Szechuan hot-bean paste
1 seedless cucumber (1 pound), skin on, any seeds removed, julienned
2 teaspoons sesame oil, or more to taste

Steps:

  • Thinly slice celery and carrots diagonally.
  • Soak noodles in cool water for 1 hour. Cut into 5-inch lengths with kitchen shears. Cook in boiling water until clear, 2 to 3 minutes. Drain (don't rinse). Place in a bowl.
  • Add celery, carrots, and salt. Toss with tongs for 2 to 3 minutes. Add vinegar and bean paste; toss. When cool, toss in cucumbers and oil. Serve at room temperature.

MILK DUMPLINGS IN CARDAMOM AND SAFFRON SYRUP



Milk Dumplings in Cardamom and Saffron Syrup image

2 1/2 ounces (1 cup) nonfat dry milk, plus more as needed
1 1/4 ounces (1/4 cup) all-purpose bleached flour
1 pinch of baking soda
1/2 cup whipping cream
Water, as needed
Canola or peanut oil, for deep-frying
Syrup
1 1/2 cups water
1 1/4 to 1 1/2 cups sugar (use maximum if you have a sweet tooth)
3 or 4 whole green cardamom pods, slightly crushed
4 or 5 saffron threads (optional)
About 2 teaspoons rose water (optional)
1 teaspoon finely chopped pistachios, for garnish

Steps:

  • To make the dumplings, combine the dry milk, flour, and baking soda in a bowl. Stir to blend. Make a well in the center and pour in the whipping cream. Use a wooden spoon or spatula to stir the ingredients together into a rough ball of dough. Switch to using one hand to knead and incorporate all the bits, then transfer the dough to a work surface. Knead the dough until medium-soft and pliable. If it is slightly sticky at first, dust your hands with some dry milk. If the dough is crumbly, work in water by the 1/2 teaspoon.
  • Roll the dough into a 12-inch log and cut into 12 even-size pieces. Roll the pieces into smooth round balls, each one about 1 inch in diameter. Apply slight pressure as you roll to make each one as crack-free as possible; otherwise, fissures may form during frying. Set the balls on your work surface and loosely cover with plastic wrap or a kitchen towel to prevent drying.
  • Place a paper towel-lined platter near the stove. Pour 1 inch of oil into a shallow sauce-pan, wok, or deep skillet. Heat over medium-high heat to 290° to 300°F on a deep-fry thermometer. (If you don't have a deep-fry thermometer, stick a dry bamboo chopstick into the oil; if it takes about 4 seconds for bubbles to rise to the surface and encircle the chopstick, the oil is ready.) Slow and low-temperature frying guarantees that the dumplings cook all the way through, so they don't collapse later as they soak in the syrup, and the milk sugars caramelize nicely. When the oil is ready, steady it by decreasing the heat to medium-low. If you like, test-fry one dumpling. After you add it to the oil, it should remain at the bottom for about 20 seconds before rising to the top. If it rises much sooner, the oil is too hot. Fry the dumplings in 2 batches, stirring often with a slotted spoon or skimmer to ensure even cooking and browning. Adjust the heat as necessary to fry for 4 to 5 minutes, until the dumplings are a lovely reddish brown. Be patient. Lift the fried dumplings from the oil and drain on the paper towels.
  • To make the syrup, combine the water, sugar, cardamom, and saffron threads in a shallow, wide saucepan or deep skillet large enough to hold all the dumplings in one layer with a little room for expansion. Bring to a boil, then lower the heat to very gently simmer for 5 minutes. Add all the fried dumplings and simmer for 15 to 20 minutes, turning them occasionally, until the dumplings are soft and enlarged, and the syrup has thickened a bit.
  • Remove from the heat and gently stir in the rose water. Set aside to cool for about 20 minutes before serving; expect the dumplings to shrink during cooling. (The dumplings can be prepared up to 5 days in advance and refrigerated. Return to room temperature and reheat them over medium-low heat, adding a splash of water to move things along, until soft again.) Serve the dumplings warm or at room temperature. Present 2 or 3 dumplings in individual dessert bowls along with a little syrup; if some cardamom seeds are loose in the syrup, include them; they provide a great burst of flavor. Top each dumpling with a bit of pistachio for color and texture. Enjoy with spoons.

1/2 cup sugar

2 to 3 drops screw-pine essence (ruh-kewra), or rose essence
1/2 teaspoon ground green cardamom seeds
1/4 teaspoon saffron threads

Steps:

  • 1. In a small saucepan, mix together the arrowroot (or cornstarch) and 2 cups water, and cook over medium heat, stirring constantly, about 15 minutes. As it cooks, the mixture will bubble lightly andthicken considerably, then thin down and take on a gelatinous, translucent blue appearance Remove from the heat.2. Fill a large bowl with ice cold water. Pour the batter into the vermicelli press, fitted with a perforated disc with holes of about 0.1 inches. Working about 12 inches directly above the bowl of water, turn the handle of the vermicelli press. The batter will pass through the holes and the long noodles will firm up when they come in contact with the water. Keep turning the press until all the batter is used. Drain the noodles and transfer to a serving bowl.3. In a small-saucepan, mix the remaining 1/2 cup water and the sugar and., cook over high heat until thick, about 3 minutes. Cool and add to the noodles. Mix in the screw-pine or rose essence, cardamom seeds, and saffron threads and refrigerate at least 1 hour to blend the flavors.From "1,000 Indian Recipes." A Vietnamese soup using cellophane noodles, which just I found in a store (quite amazing since not many Asian things are available). Found this on recipehound.com. I'd boil the chicken longer than the recipe calls for.

4 ounces cellophane noodles
2 quarts water
1 lb chicken neck, skin removed
2 chicken legs with thigh
1/2 lb chicken giblets
3 tablespoons fish sauce
fresh ground black pepper
2 tablespoons coriander and scallions, chopped

Steps:

  • Soak the cellophane noodles in warm water for 10 minutes, then drain and cut into 3-inch lengths.
  • Bring the 2 quarts water to a boil and drop in the chicken necks, legs, and giblets. Boil for 7 minutes, then remove giblets; slice and reserve them for use later. Continue cooking the broth for another 15 minutes, then strain, discarding the necks. Remove and shred all meat from legs and thighs. Add the fish sauce, salt, sprinkle with black pepper. Just before serving, bring the soup to a boil and add the cellophane noodles.
  • To serve, remove the noodles from the soup and use to fill individual bowls half full. Sprinkle on some shredded chicken, giblets, and chopped scallion, and coriander.
  • Pour boiling broth over all, sprinkle on some black pepper, and serve.
