I had never thought of celery as the basis of a dish until I saw this recipe in the "Betty Crocker's New Int'l Cookbook" almost 15 yrs ago. Honestly I only tried it because we were on such a tight budget that I had no other veggies in the house one night. Boy, were we surprised! We have it fairly frequently, even when we don't have the cheese on hand, and it's a great conversation piece at dinner parties because it's so unexpected, so simple, and yet so good. When I want something totally vegan, I just substitute veggie broth for the chicken bouillon.

Number Of Ingredients 6

6 large celery ribs, cut in 2 inch pieces (about 4 cups)
3/4 cup water
1/2 teaspoon instant chicken bouillon
2 tablespoons margarine or 2 tablespoons butter
1/4 cup grated parmesan cheese
snipped parsley

Steps:

  • Place celery, water, and bouillon in med saucepan; bring to boil.
  • Reduce heat, cover and cook approx 15 minutes or until celery is crisp-tender.
  • Drain, add butter, cover and let stand until butter melts.
  • Sprinkle with cheese and parsley.

1 tablespoon olive oil
1/2 medium onion, diced
1 lb celery (about 6 ribs of celery)
1 cup canned diced tomato
1 -2 tablespoon capers
8 large olives, chopped
2 tablespoons minced fresh basil
salt & pepper

Steps:

  • In a large skillet, heat the oil on medium heat until shimmery.
  • Add the onion, stir well to coat with oil, let cook while preparing the celery.
  • Trim the celery ends, cut ribs in thirds lengthwise, then into two-inch lengths.
  • Add the celery, stir well, then let cook undisturbed for 4 minutes. Stir, then pour in tomatoes, turn down the heat to medium low, cover and let cook until celery is tender, about 20 minutes.
  • Uncover and stir in capers and olives and cook til warmed through and tomato juice cooks almost all the way down. Stir in basil.
  • Season to taste.
  • Serve immediately. Enjoy!

This is a wonderful recipe that my Aunt Stevie shared with me at my engagement party over 35 years ago! This is a super easy, rather elegant, slightly crunchy, kinda nutty side dish--and I really don't even care much for celery.

2 tablespoons butter
⅓ cup slivered almonds
4 cups sliced celery
1 tablespoon dried minced onion
1 cube chicken bouillon
½ teaspoon white sugar
⅛ teaspoon ground ginger

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir almonds until golden, 2 to 3 minutes. Stir celery, onion, bouillon, sugar, and ginger into almonds. Continue to cook and stir until celery is tender, about 10 minutes.
