CEDAR-PLANKED BRIE AND BERRIES
Grilling brie on a cedar plank adds a smoky flavor that complements the mild cheese and sweet fruit.

Steps:
- Soak cedar plank in water at least 30 minutes. Meanwhile, heat gas or charcoal grill.
- Remove plank from water. Place cheese (in rind) on plank. Spoon mango and raspberries over cheese. Sprinkle with salt.
- Place plank with cheese on grill over medium heat. Cover grill; cook 15 to 20 minutes or until cheese is warm.
- Remove plank from grill. Transfer cheese and fruits to serving plate. Drizzle honey over cheese and fruits. Serve with bread slices.

BRIE-FILLED PUFF PASTY WITH BALSAMIC AND BLACK PEPPER STRAWBERRIES
Steps:
- For the strawberries: Put the balsamic vinegar and sugar in a heavy-bottomed saucepan. Bring the mixture to a boil over medium heat and cook until reduced by 2/3, about 30 minutes. Season with the pepper and some salt. Transfer to a small bowl and cool to room temperature, about 20 minutes.
- For the puff pastry: Preheat the oven to 350 degrees F. Cut four hearts from the puff pastry with the cookie cutter. Put 2 of the hearts on a baking sheet. Divide the Brie slices between the hearts on the baking sheet, leaving a small border.
- Mix the egg white with a splash of water and brush some around the edges of the filled hearts. Top them with the remaining 2 hearts and press the edges to seal. Brush the tops with egg wash, use a small paring knife to cut vents, and sprinkle with some coarse sea salt. Bake until puffy and golden, about 15 minutes.
- To serve: When the puff pastry comes out of oven, toss the strawberries in the balsamic mixture and serve them on the side.
CEDAR-PLANKED BRIE WITH RASPBERRY, ALMOND, AND HONEY TOPPING
I've never tried this recipe, but can't wait to, and don't want to lose this recipe. Sounds good, and an easy way to start using planks. Be sure to soak the planks in liquid for 1 hour prior to cooking.

Steps:
- Soak the cedar plank in cold water for a minimum of 1 hour.
- Preheat grill to medium heat, about 400*F.
- In a small bowl, combine raspberries, slivered almonds and fresh thyme, and season to taste with black pepper. Drizzle with honey and gently mix to combine.
- Remove plank from water. Place wheels of Brie on plank, evenly spaced.
- Top each wheel with half of the raspberry honey mixture.
- Place plank on grill and close lid. Plank cheese for 20-25 minutes, until cheese is golden brown and slightly puffy, topping is hot and almonds are light golden brown. Remove plank from grill and allow to cool for 1-2 minutes.
- Serve immediately with fresh sliced baguette, a few big spoons, and lots of napkins!
- Other options to top cheese are grilled mushrooms, fruit salsa, and tomato bruschetta.
