CAULIFLOWER CHEESE WITH HAM HOCK

Steps:
- Place the ham hock, cloves, bay leaves and peppercorns in a large saucepan and cover with cold water and bring to the boil over medium heat and then reduce the heat to low and simmer (adding extra water to keep the ham hock covered) for about 3 hours, or until tender and the meat starts to fall frm the bone.
- Allow the ham hock to cool before shredding the meat and then place the shredded meat evenly along the bottom of a buttered casserole dish.
- Preheat oven to 180°C.
- Cut your cauliflower into florets and place in a steamer and cook for 4 to 5 minutes and then place the cauliflower over the ham in the casserole dish.
- Melt the butter in a saucepan, add the onion and cook until soft and then stir in the flour and allow to cook for a few minutes before adding the cream and bay leaves and stir continuously while the sauce thickens.
- When the sauce is ready, turn off the heat and remove the bay leaves and stir in the mustard and tasty cheese (or cheddar) and season to taste with salt and pepper.
- Pour over the cauliflower and sprinkle with the parmesan and bake for 30 minutes or until golden brown on top, serve it hot.

- Mix cauliflower, ham, egg, Cheddar cheese, flour, green onions, oil, and pepper together in a large bowl until evenly combined.
- Set waffle iron to the highest heat setting and spray both griddles with nonstick spray. Spoon 1 cup of the cauliflower mixture into the center of the waffle iron. Keep the rest of the batter refrigerated. Close lid and cook for 10 minutes. Gently remove the waffle using a spatula and fork. Cook remaining batter.

I came up with this recipe myself when I had a ham hock and wanted to make something other than the usual split pea soup. The resulting chowder was satisfying and good-tasting. Mashed potatoes help give it a rich, creamy texture.

- In a soup kettle, simmer ham bone in water for 1-1/2 hours. Remove ham bone; set cooking liquid aside. When cool enough to handle, remove meat from bone; discard bone. Return ham to cooking liquid; set aside. , In a saucepan, saute onion and green pepper in butter until tender. Stir in flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add to ham and liquid. Add cauliflower and potatoes. Cook until heated through. Sprinkle with parsley if desired.

- In a large saucepan, cook cauliflower and celery in broth for 4-5 minutes or until vegetables are crisp-tender. Do not drain. Stir in the soup, cream and pepper. , Combine cornstarch and water until smooth; gradually stir into cauliflower mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. - Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender yet firm to the bite, 2 to 6 minutes.
- While cauliflower steams, heat milk in a saucepan over medium-low heat. Mix softened butter and flour together until it forms a ball. Melt flour ball into heated milk; lower heat and stir constantly until thickened. Add Cheddar cheese, onion, garlic powder, salt, and pepper; heat until cheese is completely melted.
- Combine cauliflower, ham, and cheese sauce in a large bowl. Gently mix together. Pour into the prepared baking pan.
- Bake in the preheated oven, uncovered, for 20 minutes. Top with french-fried onions and bake for 10 minutes more. Let sit for 5 minutes or more before serving.

- preheat oven to 180*c/375*F.
- break cauliflower into florets and soak in warm salted water for 3-4 minutes.
- Drain, place in pan with hot water, cover and bring to boil. Reduce heat to simmer until florets are tender.
- While cauliflower is cooking, melt butter in a pan, add flour, stir over heat heat until flour starts to bubble, remove from heat. Stir in milk, return to heat and stir until mixture boils and thickens.
- Remove from heat and add cheese - let it melt into sauce.
- Drain cooked cauliflower, place on serving plate and spoon cheese sauce over it. Sprinkle with Parsley. If you want you can place cauliflower in dish, top with cheese sauce and broil for a minute until sauce browns.
