This cole slaw has a vinaigrette-style dressing instead of a traditional creamy dressing. It would be good for picnics or where a salad needs to sit out. If you like vinegar-based dressings, this one can be addictive.

6 cups shredded green cabbage
1 ½ cups shredded carrot
1 cup shredded red cabbage
½ cup shredded onion
¼ cup kosher salt
1 cup cider vinegar
1 cup white sugar
1 tablespoon celery seed
1 tablespoon dry mustard
¼ cup vegetable oil
ground black pepper to taste

Steps:

  • Toss green cabbage, carrot, red cabbage, and onion in a colander and sprinkle with kosher salt. Set aside to drip for 30 minutes.
  • Heat cider vinegar, sugar, celery seed, and dry mustard together in a small saucepan over medium-low heat, stirring until sugar has dissolved. Remove from heat and let cool.
  • Squeeze as much juice as possible from cabbage mixture and transfer vegetables to a serving bowl. Pour vinegar mixture to taste over vegetables and drizzle vegetable oil over the top. Sprinkle with black pepper and stir coleslaw to coat with dressing. Refrigerate 2 hours before serving for flavors to blend.

1 (16 ounce) package Coleslaw (grated cabbage and carrots)
4 green onions, chopped
6 tablespoons olive oil
3 tablespoons red wine vinegar
3 tablespoons sugar
1 package ramen noodles (beef flavor)
1/2 cup slivered almonds
1/2 cup sunflower seeds

Steps:

  • Toss together cole slaw and green onions.
  • In a small mixing bowl, whisk together oil, vinegar, sugar, and ramen seasoning packet.
  • Pour over salad and toss together.
  • Just before serving, add ramen noodles (broken into small pieces), almonds and sunflower seeds and toss together.

6 carrots, peeled
1 small white cabbage
large pinch, golden caster sugar
3 tbsp cider vinegar
1 tbsp mustard (any you've got)
200g mayonnaise
1 red apple, cut into matchsticks (optional)
100g cheddar, grated (optional)

Steps:

  • Coarsely grate the carrot and finely shred the cabbage (use a food processor with a grating/ slicing blade or do it by hand) and tip into a bowl. Season with salt, then add the sugar and vinegar and toss everything together. Leave for 20 mins for the vegetables to very lightly pickle.
  • Stir through the mustard and mayonnaise and add any other bits you want to, then serve. Can be made a day ahead and chilled.

1 small green cabbage, sliced thin or 1 (16 ounce) bag coleslaw mix
0.5 (8 ounce) bag red cabbage, sliced
1/2 cup mayonnaise
1/4 cup apple cider vinegar
1 teaspoon Dijon mustard
2 tablespoons sugar
1 pinch salt
ground pepper
1 teaspoon celery seed

Steps:

  • Mix all dressing ingredients, add cabbage and stir.
  • Refrigerate 2-4 hours or up to 3 days.
