Because our family adores carrot cake, I experimented to find an easy way to make it so we could enjoy it all the time. This super moist dump cake version makes my family smile when it suddenly appears on the table. -Bonnie Hawkins, Elkhorn, Wisconsin

1 can (8 ounces) crushed pineapple
1 cup shredded carrots (2 medium carrots)
1 cup finely chopped walnuts
1 package spice cake mix (regular size)
3/4 cup unsalted butter, melted
Whipped cream, optional

Steps:

  • Preheat oven to 350°. Mix pineapple, carrots and walnuts; spread into a greased 11x7-in. baking dish. Sprinkle with cake mix; drizzle with butter., Bake until golden brown, 25-30 minutes. Cool on a wire rack. If desired, serve with whipped cream.

this is delicious, I started making it with a Duncan Hines carrot cake mix in the 1980's and had to switch to Betty Crocker when Duncan stopped making it. I actually made it for Miss Picky's first birthday and she will be 25 in June. The pineapple and raisins really make it moist and the the chopped pecans add a different texture. Try it with cream cheese frosting.

1 (18 1/2 ounce) package carrot cake mix, betty crocker
1/4 cup water, i usually substitute milk
1/2 cup vegetable oil
4 eggs
1 (8 ounce) can crushed pineapple with juice, undrained
1/2 cup chopped nuts, i always use chopped pecans
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a bundt pan.
  • I use Bakers Joy spray.
  • Beat cake mix, water (milk), oil, eggs and pineapple on low speed 3 minutes.
  • Stir in nuts and raisins.
  • Pour into prepared pan.
  • Bake for 50-55 minutes or until toothpick comes out clean.
  • Cool in pan 15 minutes.
  • Remove from pan and cool on wire rack.
  • Cool at least 1 hour before frosting.

1 1/4 cups granulated sugar
10 ounces hazelnuts
3 1/2 ounces sultana raisins
3 medium carrots (10 ounces)
6 egg yokes
6 egg whites
1 teaspoon cold water
Freshly ground salt
2 teaspoons lemon juice
1/2 teaspoon lemon zest (thin rind)
1 teaspoon all purpose flour
1/4 teaspoon cinnamon
4 teaspoons raspberry jam
1 tablespoon icing sugar (confectioners' sugar)

Steps:

  • Sift the granulated sugar. Crush the hazelnuts very small (best results in a blender). Wash the sultanas. Wash and grate the carrots. Grease the cake tin (9 by 12-inch deep). Place a bowl over a pan of hot water. Preheat oven to 350 degrees F. Into a warmed bowl place the egg yolks and 4 ounces of the granulated sugar and whisk together until the mixture thickens. (It should be doubled in bulk, lighter in color and creamy in texture). When this happens, set aside the yolk and sugar mixture for a moment (off the heat). Into a clean, cold bowl place the whites of eggs, add 1 teaspoonful cold water and some freshly ground salt and whisk quickly until they are stiff and peaked. Gradually beat into the fluffy whites of eggs the remaining 6 ounces of granulated sugar until it is fully incorporated. Set aside until required. Place the egg yolk mixture over the warm water and add the ground nuts and lemon juice. To this add the grated carrots and lemon zest. Fold in the 1 teaspoonful of flour and sultanas. Remove the bowl from the heated water. Fold in 2 tablespoonfuls of egg whites. Then put all the mixture into the remainder of the whites of eggs and fold in well. Add the 1/4 teaspoonful of cinnamon. Pour all the mixture into the greased cake tin and put it into the preheated oven set at 350 degrees F., on the middle shelf, for 60 minutes. Remove cake from the pan and cool completely. Cut cake in half, spread the jam over the bottom and replace top. Sprinkle with confectioners' sugar before serving.

1 cup canola oil

2 (4 ounce) jars carrots, baby food
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons vanilla
1 (8 ounce) package cream cheese
1 (16 ounce) box powdered sugar
1 teaspoon vanilla

Steps:

  • Cake method: Preheat oven to 350ºF.
  • Grease and flour a 9x13 baking pan.
  • Place first 9 ingredients (through 2 teaspoons vanilla) in a large mixing bowl.
  • Beat with electric beaters or mixer paddle for 2 minutes on medium speed.
  • Pour the batter into the prepared pan.
  • Bake in 350ºF oven for 30 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool completely; prepare icing in the meantime.

  • Icing Method: In a medium bowl, combine final three ingredients.
  • Beat until smooth and fluffy.
  • Ice completely cooled cake.

1 (8 1/4 ounce) package yellow cake mix (do not use the "pudding added" cake mix for this)
1/3 cup mayonnaise or 1/3 cup salad dressing
1 1/2 teaspoons cinnamon
1 pinch nutmeg
1 cup shedded carrot
1 cup chopped walnuts or 1 cup pecans
cream cheese frosting

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl whisk eggs, then add in all remaining ingredients except the cream cheese frosting; mix to combine well.
  • Transfer to prepared baking pan.
  • Bake for about 30-35 minutes or until cake tests done.
  • Cool completely then frost with cream cheese frosting.

I'm a dump cake fan due to the quickness of the recipes, but lots of them are too sweet for my taste. Put this one together and like Goldy Locks said, " This is just right!".

1 (15 ounce) can bartlett pears, diced (I buy them already diced)
1 (20 ounce) can apple pie filling (love Comstock brand)
1 (18 1/2 ounce) box carrot cake
1/2 cup butter, melted
chopped nuts (optional)
flaked coconut (optional)

Steps:

  • Pre-heat oven to 350 degrees.
  • In a 9x13 baking pan, put in the pears, leaving about two tbls of juice in can.
  • Spoon the apples over the pears. You can mix together if you wish.
  • Sprinkle the cake mix over the fruits so that all is amply covered.
  • Add any optional ingredients at this time (I did not use any).
  • Pour melted butter slowly over most of the area.
  • Place in oven and turn heat down to 325 degrees.
  • Bake 30 minutes, turn pan, bake another 15 minutes.
  • Allow to cool off some before serving.
  • Wonderful as is -- even better with vanilla ice cream sprinkled with some cinnamon.
