These easy Shredded Chicken Sliders make a great appetizer for a party or a filling meal. They can be made quickly using rotisserie or leftover chicken so they are perfect for a busy weeknight and they are a crowd pleaser that kids and adults love!

2 packages (12 pack Kings Hawaiian Rolls)
3 cups shredded chicken
12 slices provolone cheese
1/4 cup butter (melted)
4 tbsp dijon mustard
2 tbsp sugar
1 tbsp poppy seeds

Steps:

  • Preheat the oven to 350˚F.
  • Cut each of the Hawaiian rolls in half across the length of the rolls and then place the bottoms in a 9x13 baking dish.
  • Layer the chicken and cheese on top of the rolls and then place the top back on. Use a serrated knife to cut in between all of the rolls.
  • Mix the melted butter, mustard, sugar, and poppy seeds until combined. Then use a pastry brush to spread the mixture evenly over the tops of the rolls.
  • Bake on the middle rack for 20 minutes or until the tops of the rolls are golden brown. Serve hot and enjoy!

1 (14 ounce) package coleslaw mix

2 tablespoons red wine vinegar
1 teaspoon sugar
16 mini sweet rolls

Reynolds® Slow Cooker Liner

Steps:

  • Preheat the grill to high heat.
  • Line a hot grill with Reynolds Wrap® Heavy Duty Aluminum Foil.
  • Coat the chicken breasts with the oil and season on all sides with salt and pepper.
  • Place the chicken breasts directly on the hot grill lined with foil and cook for 3 to 4 minutes on each side or until grill marks have formed.
  • Transfer the chicken in a slow cooker lined with a Reynolds® Slow Cooker Liner and pour in water and BBQ sauce and cook on high heat for 3 hours or low heat for 5 hours.
  • Pull the chicken apart using two forks until it is shredded and keep warm.
  • Mix together the coleslaw mix, mayonnaise, vinegar, sugar and salt and pepper until combined.
  • Serve the pulled chicken on sweet rolls and top off with some creamy coleslaw.

1 14.5 oz. can Chicken Broth
4 Chicken Breasts
1 18 oz. BBQ Sauce (I used Montgomery Inn Sauce on mine)

Steps:

  • You can cook these fast, or you can cook these slow. It's up to you and how fast you want to eat these. For fast, heat your slow cooker to high and prepare to let it cook for 4 hours. For slow, heat your slow cooker to low and prepare to cook for 8 hours.
  • Once you have the slow cooker set, take the Chicken broth and poor into the bottom of the slow cooker. Then place the 4 chicken breasts on the bottom of the cooker and cover. Cook per setting you chose from above.
  • Once the chicken is finished, remove from the slow cooker, place in skillet, and begin to shred the chicken.
  • Heat your oven to 350. Once the chicken is shredded, place into a medium skillet and mix well with the BBQ sauce. Place in the oven and bake uncovered for an additional 30 minutes.

Steps:

  • Preheat oven to 350º. In a large pot over medium heat, combine apple cider vinegar, Worcestershire sauce, ketchup, garlic, and diced onion. Cook, stirring occasionally until onion is softened, 2 minutes. Season with salt and pepper, then add brown sugar and Dijon mustard and bring to a boil. Simmer for 2 minutes, then fold in shredded chicken and stir until chicken is warmed through.
  • Meanwhile, place sandwich buns on a sheet pan. Lightly butter each bun and toast until golden brown.

1 1/4 cups mayonnaise
3 tablespoons hot sauce (Frank's)
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon sweet paprika
1/3 cup pickled jalapeno pepper, finely chopped
6 boneless skinless chicken thighs
1 large egg, beaten to blend
1 tablespoon honey
kosher salt
1/2 cup extra virgin olive oil
2 1/2 cups panko breadcrumbs (Japanese bread crumbs)
12 potato rolls (preferably Martin's, buttered and toasted)
1/4 head iceberg lettuce, thinly sliced
sliced bread and butter pickles, and french fries (for serving)

Steps:

  • Whisk mayonnaise, hot sauce, onion, garlic, paprika, and jalapeños together in a medium bowl; set aside until ready to use.
  • Place a rack in middle of oven; preheat to 450°. Cut each chicken thigh in half crosswise; you should have 12 equal pieces. Whisk egg, honey and 1/4 cup spicy mayonnaise and 1 1/2 teaspoons salt, in a large bowl until completely combined. Reserve remaining spicy mayonnaise for the rolls. Toss chicken in the egg mixture until all pieces are coated and let sit uncovered at room temperature while you toast the bread crumbs.
  • Meanwhile, heat oil in a large skillet over medium-high heat. As soon as you see small wisps of smoke from the oil, add panko and 1/4 teaspoons salt and toss to coat. Cook, tossing often, until golden brown, 6-8 minutes. Let cool in pan 10 minutes.
  • Place a wire rack inside a rimmed baking sheet. Lift chicken from bowl, letting excess egg mixture drip back into bowl. Coat in toasted panko, pressing to adhere, then transfer to rack, spacing evenly apart. Repeat with remaining chicken and panko.
  • Bake chicken until cooked through, juices run clear when thighs are pierced with a knife, and panko mixture is slightly darkened in color, 15-20 minutes. Let chicken cool 10 minutes.
  • Liberally spread remaining seasoned mayonnaise over cut/toasted sides of buns. Build sandwiches with pickles, fried chicken, shredded lettuce, and more hot sauce, if desired.
  • Do ahead: spicy mayonnaise can be made 3 days ahead, cover and chill.
