It doesn't get much more simple than this. It's from Mark Bittman's book, "The Best Recipes in the World". This has so few ingredients that it really does need to be made with homemade stock. If you want the creaminess of using cream, but not the fat, you could use skim-milk evaporated milk.

1 cup peanut butter
1 medium onion, peeled and quartered
4 cups chicken stock, preferably homemade (or vegetable stock)
1 cup milk (or cream)
salt
hot red pepper flakes or Tabasco sauce

Steps:

  • Put peanut butter in food processor. Add onion. Process until well-combined. With the machine running, pour in stock.
  • Put it in a saucepan over medium-low heat. Simmer until it thickens, about 7 minutes. Stir occasionally; don't let it scorch. Slowly stir in milk or cream. Season with salt and cayenne. Serve with simple crackers.

Steps:

  • Place the whole onion, pepper, tomatoes and chicken pieces in the pot and top with the stock. Cover, bring to the boil and reduce to simmer for 15 minutes till vegetables are soft and tender. Remove the vegetables.
  • Blend the vegetables and ginger in a food processor and return to the soup. Bring to the boil then reduce to simmer while you make the peanut butter sauce. If you are using boiler chicken, it can be quite tough, so it may need extra time cooking.
  • Meanwhile, make the peanut butter sauce. There are different ways of doing this, I have opted to go for what is easier for me. Scoop the desired amount of peanut butter into a saucepan and put on gentle heat with constant stirring, peanut butter burns easily.
  • Add water a little at a time. This can be quite tricky as the water instantly changes the runny peanut butter properties. I would say it is a similar experience to white sauce, when the milk is added to the flour and butter mixture. Once a smooth sauce is achieved, allow to simmer. You will find the peanut oil begins to separate from the peanut butter. When this happens, you can add the peanut butter sauce to the rest of the soup and simmer for 20 minutes till oil rises to the surface of the soup.
  • Check seasoning to your taste. Serve with your favourite carbs such as boiled sliced yam, potatoes or rice.

2 cups unsalted roasted peanuts or 1 cup peanut butter
1 medium onion, peeled and quartered
1 quart chicken stock or vegetable stock, preferably homemade
1 cup milk or heavy cream
Salt to taste
Cayenne, hot red pepper flakes, or Tabasco sauce to taste

Steps:

  • Place the peanuts in a food processor and process until the mixture is smooth and buttery, stopping the machine to scrape down the sides as necessary. If you are using peanut butter, just place it in the processor. Add the onion and process until well combined.With the machine running, pour in the stock.
  • Transfer the peanut mixture to a saucepan and place over medium-low heat. Simmer until the mixture thickens, about 7 minutes. Slowly stir in the milk, then season with salt and cayenne. Serve with simple crackers.

2 medium onions, chopped
2 teaspoons canola oil
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot
2 teaspoons ground coriander
1 teaspoon ground turmeric
1/2 teaspoon dried thyme
1/4 teaspoon ground allspice
5 cups vegetable broth
2 cups cubed peeled sweet potato
3 cups chopped fresh kale
1 cup frozen sliced okra
1 cup coconut milk
1 cup canned diced tomatoes, drained
1 cup canned black-eyed peas, rinsed and drained
2 tablespoons lime juice

Steps:

  • In a Dutch oven, saute onions in oil until tender. Add the garlic, ginger and spices; cook 1 minute longer., Stir in broth and potato. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in kale and okra. Return to a boil; cover and simmer 10 minutes longer or until potato is tender. Add the milk, tomatoes, peas and lime juice; heat through.

2 tablespoons olive oil
2 medium onions, chopped
2 large red bell peppers, chopped
4 cloves garlic, minced
1 (28 ounce) can crushed tomatoes, with liquid
8 cups vegetable broth or stock
¼ teaspoon pepper
¼ teaspoon chili powder
⅔ cup extra crunchy peanut butter
½ cup uncooked brown rice

Steps:

  • Heat oil in a large stock pot over medium high heat. Cook onions and bell peppers until lightly browned and tender, stirring in garlic when almost done to prevent burning. Stir in tomatoes, vegetable stock, pepper, and chili powder. Reduce heat to low and simmer, uncovered, for 30 minutes.
  • Stir in rice, cover, and simmer another fifteen minutes or until rice is tender. Stir in peanut butter until well blended, and serve.

2 tablespoons vegetable oil, divided, or as needed
1 onion, chopped
1 tomato, skin removed and flesh chopped
1 carrot, chopped
½ cup raw peanuts
4 cups beef broth
½ cup green peas
1 pinch red chile powder, or to taste
1 potato, cut into matchstick-size pieces
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Heat 1 tablespoon oil in a large pot over medium heat; cook and stir onion, tomato, and carrot until tender, about 10 minutes.
  • Grind peanuts in a blender or food processor until the consistency of peanut butter, avoiding big chunks. Mix peanut butter, beef broth, and peas into onion mixture; bring soup to a boil. Reduce heat and simmer for 30 minutes. Stir in red chile powder.
  • Heat 1 tablespoon oil in a skillet; cook and stir potato until crispy and browned, 5 to 10 minutes.
  • Ladle soup into bowls and top with crispy potato and parsley.

2 tablespoons vegetable oil
1 onion, finely diced
1 garlic clove, crushed
8 ounces stewing beef, trimmed of fat & cut into 1-inch dice
6 cups chicken stock
2 chicken breast halves, cut into 1-inch dice
4 tablespoons peanut butter
1 teaspoon sugar
1/2 teaspoon ground cumin
1/2 jalapeno, seeded & minced
1/4 teaspoon cayenne pepper
1/4 teaspoon salt

Steps:

  • Soak salt beef in water for 1 hour; then drain.
  • In saucepan, heat oil and saute onion over medium-high heat.
  • Add garlic, and stir for about 30 seconds.
  • Add beef and chicken stock and bring to a boil.
  • Let simmer until beef is tender (1 hour).
  • Add chicken and simmer for 40 more minutes, stirring frequently.
  • Whisk in peanut butter, then add sugar, jalapeno, salt, pepper, and cumin.
  • Simmer 25-30 minutes and serve hot.
