This aromatic rice pudding is flavored with cinnamon and cardamom, and gets a topping of pistachios and edible flowers.

½ cup + 1 tbsp basmati rice
1 tsp ground cardamom
½ tsp ground cinnamon
Scant ½ cup superfine sugar, plus 1 tbsp to decorate
3 cups whole milk, plus extra if needed
⅔ cup heavy cream
3 tbsp unsalted pistachios
1½ tbsp dried edible flowers (such as marigolds, roses, lavender)

Steps:

  • Place the rice, spices, sugar, milk, and cream in a large saucepan and set over a medium-low heat. Bring to the boil-but watch it doesn't boil over-then turn the heat down to a whisper and cook for about 30 minutes, stirring fairly frequently to make sure the rice doesn't stick and burn. If the mixture is getting too dry, add more milk, a little at a time. When the rice is nearly done, it will start to bubble and burp more furiously and will need more attention from you. When the rice is tender (i.e. there's no chalkiness in the center), take it off the heat and spoon into a serving bowl. Allow to cool, then cover and chill in the fridge until cold.
  • Just before serving, grind the remaining tablespoon of sugar, the pistachios, and edible flowers as finely as you can, using a mortar and pestle or electric spice grinder. Sprinkle over the top, and serve.

2 tablespoons butter
1/2 cup arborio rice
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
2 1/2 cups whole milk
2 tablespoons sugar
1/4 cup unsalted shelled pistachio, toasted
2 teaspoons liquid honey

Steps:

  • In a saucepan, melt the butter at medium heat. Add rice, cardamom, cinnamon and stir to coat the rice. Add milk and sugar and bring to boil. Reduce heat, cover and let simmer, stirring often, 25 to 30 minutes or until almost all liquid has absorbed and rice is tender. (You can prepare this step in advance, let cool and put in an hermetic container. It will be good up to the next day in the fridge). Serve the rice pudding warm, sprinkle with pistachios and honey.

Entered for safe-keeping, adapted from ifood.tv. This is a traditional dessert recipe for an Onam Sadhya in Kerala, using a pressure cooker to save time. The taste depends on raw, unpolished good-quality pink rice. Kerala Matta rice (also known as Rosematta rice, Palakkadan Matta rice, Kerala Red rice, or Red parboiled rice) is an indigenous variety of rice grown in Palakkad District of Kerala. Best bet: try an Indian market. If you can't find any of those, a non-sticky rice like Basmati will work, but it won't have as much of the Kerala flavor.

1/4 cup kerala red rice or 1/4 cup pink rice
1/2 liter milk (not skim)
1/2 cup sugar
1/4 teaspoon ground cardamom
1 teaspoon ghee or 1 teaspoon clarified unsalted butter
10 cashews

Steps:

  • Soak rice in water for one hour before making the payasam (pudding).
  • Drain rice, and put in pressure cooker along with raw unboiled milk and sugar.
  • Secure lid and on low heat, raise to low pressure, then adjust heat to stabilize at low pressure. Cook for 30 minutes.
  • Remove from heat and let pressure come down naturally.
  • Transfer the payasam to a serving bowl. Mix in ground cardamom.
  • In a fry pan, heat ghee and roast cashews in it.
  • Spread the roasted cashews over the payasam to garnish. Serve.

INDIAN JAGGERY RICE PUDDING (VELLAM PAYASAM)

This is my mom's recipe for authentic South Indian Jaggery pudding. 'Vellam' is the Tamil word for 'jaggery', while 'payasam' is Tamil for 'pudding'. Jaggery is tan coloured, unrefined sugar, made from the sap of palm trees or sugar cane, and is much more flavourful than granulated sugar. It's often sold in solid cakes, but it should crumble when you squeeze it. Look for it in Indian markets. In this recipe, preferably don't substitute the jaggery with anything else, since the pudding gets most of it's flavour from the jaggery. 1/2 cup uncooked medium grain rice
2 cups water
300 g palm sugar or 300 g brown sugar (Preferably don't substitute)
2 1/2 tablespoons ghee or 2 1/2 tablespoons clarified butter
1/2 teaspoon cardamom powder
1 teaspoon broken cashews
1/2 tablespoon ghee or 1/2 tablespoon clarified butter

Steps:

  • Add rice and water to a pot on a high flame and bring to a boil.
  • Lower the flame to low and simmer covered until the rice is cooked, about 15 minutes.
  • Uncover, add jaggery and 2 1/2 tablespoons of ghee and let the mixture simmer on the low flame, stirring every 2 minutes.
  • When the mixture starts to thicken to the consistency of pourable custard (about 10 minutes), remove from flame.
  • Sprinkle cardamom powder over the pudding.
  • In a small skillet, roast the broken cashewnuts in 1/2 tbsp ghee and pour over the pudding.
  • Mix well, and serve immediately, or cold, after refrigeration.

This recipe has been in my family for years, and is a favourite with all of us. 'Paal' means 'milk' in Tamil (a South Indian language) and 'Payasam' refers to 'pudding'. My mom makes this without the raisins and pistachios, but they add to the payasam's richness. Hope you enjoy this South Indian delicacy :)

1/2 cup basmati rice
4 1/4 cups skim milk
3/4 cup sugar
4 cardamom pods, skinned,powdered or 1/2 teaspoon cardamom powder
1 teaspoon cashews, broken
1 teaspoon pistachios, shelled,slivered
1 teaspoon raisins
1 teaspoon ghee or 1 teaspoon clarified butter

Steps:

  • Wash the rice well.
  • Place a heavy bottomed vessel on a high flame, add rice and milk, and bring to a boil, stirring continuously.
  • Reduce flame to low and simmer for 40 minutes, stirring every 3 minutes.
  • After 40 minutes, check if the rice is done (consistency of the pudding will be slightly thick, like milkshake).
  • After the rice is done, add sugar, and stir till dissolved.
  • Remove vessel from flame and set aside.
  • In a small frying pan, heat ghee on a low flame, and add cashews and pistachios.
  • Roast until the cashews turn slightly brown (around 2 mins).
  • Add raisins, which will swell up immediately.
  • Now quickly pour contents of the frying pan into the cooked pudding and mix well.
  • Sprinkle with cardamom powder and serve hot!
