CARAMELIZED ONION AND BLUE CHEESE QUICHE
This Caramelized Onion and Blue Cheese Quiche makes a wonderful meatless main dish, light dinner or a side dish served with just about any kind of Meat/Poultry.

Steps:
- Pre-heat the oven to 180 deg C (350 deg F) - spray a 24cm ( 10 inch ) quiche or pie dish with cooking oil
- Roll out the Pastry and roll a little bigger to fit into your dish - position on the base and up the walls of the dish - cut away any excess pastry - prick the Pastry several times with a fork - bake 15 minutes
- Heat the Oil over medium heat - saute the Onions until loose and soft - stir in the Sugar and cook until caramelized (2 - 3 minutes) - remove from heat.
- Remove the half baked Pastry from the oven - arrange the Onions on the base
- Beat together the Eggs, Cream, Milk and sachet of KNORR Potato Bake in a medium bowl - pour over the Onions in the dish
- Sprinkle over the Blue Cheese - bake a further 30 - 35 minutes or until the center of the Quiche has set
- Remove from the oven - let stand at least 10 minutes before slicing into servings

CARAMELIZED ONION & BLUE CHEESE QUICHE
Steps:
- For the onions, heat 1 Tbsp. butter with oil in a large sauté pan over medium-high. Add onions, thyme, and rosemary; season with salt and pepper. Cover pan and cook 8-10 minutes, stirring frequently. (If pan gets too dry, stir in 1-2 Tbsp. water.) Reduce heat to mediumlow and cook onions until golden brown, stirring occasionally, 15-20 minutes; chill.
- For the crust, combine 1 cup flour and 1 tsp. salt in the bowl of a stand mixer with the paddle attachment. Add 1½ sticks butter and cream cheese; blend on medium-low speed until both are fully incorporated. Add remaining 1 cup flour and 2 Tbsp. ice water. (Add more if the dough doesn't come together.) Shape dough into a disk, cover with plastic wrap, and chill at least 30 minutes or overnight.
- Preheat oven to 375°. Coat a 9×2-inch fluted tart pan with a removable bottom with nonstick spray.
- Roll dough on a lightly floured surface to ¼-inch thick. Press dough against bottom and sides of pan; let excess hang over sides.
- Freeze crust 20 minutes, then line with parchment paper and dried beans; place on a baking sheet. Bake crust until edges are light golden and bottom is set, 40-45 minutes. Remove beans and parchment, return crust to oven, and bake until bottom is golden brown, about 20 minutes. Let crust cool completely. Reduce heat to 325°.
- For the custard, blend milk, cream, eggs, 1½ tsp. salt, and nutmeg in a blender until frothy. Scatter half the onions and blue cheese onto bottom of crust. Pour in half the custard. Scatter on remaining onions and blue cheese, then pour in remaining custard.
- Bake quiche until an instant-read thermometer inserted into center registers 160° and filling is set, about 2 hours. Let quiche cool on a rack to room temperature, about 2 hours, then refrigerate up to 2 days before serving.
- To serve, preheat oven to 375°. Break overhanging crust from pan's edge and cut quiche into eight servings. Reheat quiche on a baking sheet until hot, about 20 minutes. (To test if hot, insert a butter knife into center of quiche piece, then touch to your lip.)

- Preheat oven to 375 degrees.
- In a cast iron skillet or large saute pan, heat olive oil over medium heat. When oil is hot, add sliced onions, season with salt, and saute until caramelized (approx 20-30 minutes).
- Put pie crust in 8-9 inch pie pan or tart pan. Bake for 6 minutes (you may want to put parchment paper and rice or dry beans over the crust to keep it from bubbling up).
- In a medium bowl whisk eggs, heavy cream, sour cream, tarragon and salt and pepper until combined.
- Remove pie crust and discard parchment paper (if used). Spread crumbled blue cheese on the bottom of pie crust. Cover the crumbled cheese with the caramelized onions and spread evenly to cover the bottom of the crust. Poor egg and cream mixture over the onions and cheese.
- Bake for 35-40 minutes until golden brown and set in the middle. The filling may rise. Allow to cool slightly and settle in crust before serving.

CARAMELISED ONION QUICHE WITH CHEDDAR & BACON

- Melt the butter in a large non-stick frying pan, add the onions and cook for 20 mins, stirring now and then, until they are soft and golden brown. Season, stir in the thyme leaves, then transfer to a plate to cool.
- Heat oven to 200C/180C fan/gas 6 with a large baking sheet inside. Roll out the pastry on a lightly floured surface until large enough to line a 25cm loose-bottomed tart tin, with a little overhang of pastry all the way round the top. This will stop the pastry shrinking in the oven later. If there is more overhang than you need, trim off the excess with scissors. Gently press the pastry into the sides of the tin and prick the base with a fork. Chill for 15 mins.
- Line the pastry case with a sheet of baking parchment and fill with ceramic baking beans. Bake for 15 mins on the hot baking sheet (this helps to prevent a soggy bottom). Carefully remove the parchment and beans, then return to the oven for 10 mins more until the pastry looks cooked like shortbread, but is not too brown.
- Meanwhile, put the bacon in the pan you cooked the onions in (there's no need to wash it first or add any oil) and fry for 10 mins until golden. Lift from the pan onto kitchen paper to remove any excess fat. Beat the cream, milk and eggs with seasoning and nutmeg, then stir in the bacon and half the cheese.
- Remove the pastry case from the oven and reduce heat to 190C/170C fan/gas 5. Spoon the caramelised onions evenly over the base of the pastry case. Pour in the bacon mixture, then scatter with the remaining cheese, the thyme sprigs and a little nutmeg. Bake for 25-30 mins until golden and the filling is just set with a slight wobble in the centre.
- Trim the excess pastry and leave to settle for 10 mins, then remove from the tin and slice.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- While pasta is cooking, heat butter and oil in a large skillet over low heat. Cook onion in this mixture until golden brown, 20 to 30 minutes. Remove from pan with a spoon and drain on paper towels.

CARAMELISED ONION TART

- Heat oven to 190C/fan 170C/gas 5. Slide a baking sheet in to heat. Roll the pastry out enough to line a deep 20cm flan tin or a shallow 23cm one. Chill for 10 mins.
- Put a few balls of crumpled foil in the base of the pastry case and bake on the baking sheet for 10 mins. Remove the foil and bake for 5 mins more, until light golden.
- Meanwhile, cook the onions in the oil until starting to soften, then add thyme, pepper, and salt if you want to. Cook slowly for about 15 mins until the onions are soft and tinged brown.
- Beat the eggs, beat in the milk and half the cheese and some pepper. Spread the onions over the flan case and pour in the egg mix. Sprinkle the remaining cheese on top and bake the tart on the baking sheet for 30-40 mins until the filling is firm and golden, and the pastry crisp. Serve warm or cold.

QUICHE WITH CARAMELIZED ONIONS, CREAM CHEESE AND HERBS
A recipe I found on About.com under the Moroccan food section(under eggs). This recipe is untried by me as of yet, but definitely will be making this in the near future, sounds delicious!! Here is what is stated about the recipe: "Quiche is most likely to show up on Moroccan tables during the month of Ramadan, when a variety of foods are offered to break the daily fast. This one features a savory filling with caramelized onions, cream cheese and herbs. Sometimes I throw in a small handful of chopped merquez sausage, smoked turkey, kefta or other leftover cooked meat. If you're making your own pastry shell, allow additional time for chilling the dough and pre-baking the shell as described below. The quiche can also be made in individual sized puff pastry shells."

- Make the Pastry Shell.
- Combine the flour and salt in a medium bowl. Add the pieces of butter and toss to coat with flour. With a fork or pastry cutter, blend the butter into the flour until the mixture looks like coarse meal. Sprinkle 3 tablespoons cold water over the mixture and quickly stir with a fork just until a dough forms. Use the last tablespoon of water only if necessary. Gather up the dough with your hands and shape it into a disc. Cover the dough with plastic and chill for one to two hours.
- Preheat an oven to 475° F (240° C). On a floured pastry cloth, roll out the dough into a large circle and fit into a pie or tart pan. Trim and shape the edges of the pastry as desired. Prick the pastry all over with a fork and bake in the hot oven for about 7 to 8 minutes, just until the dough starts to set. Remove the shell from the oven and set aside.
- Prepare the Filling.
- Heat the olive oil in a skillet and add the onions. Add a pinch each of salt, pepper and sugar. Saute the onions over medium-low heat until tender and caramelized, about 20 to 30 minutes. Stir in the parsley and chives and transfer the onions to a pre-baked pie shell. Break the cream cheese into small bits and scatter it over the onion mixture. (Also add any chopped meat, if using.).
- Bake the Quiche.
- Preheat the oven to ° F (190° C). In a medium bowl, beat the eggs with a fork, then beat in the milk, cream and seasoning. Pour the egg mixture into the pie shell and place in the oven. Bake for 30 to 40 minutes, or until set and nicely colored. Serve warm.
