This is very rich and delicious and is perfect for impressing your company. I love it, but usually scale it down quite a bit since it's just me. It's in my B&B arsenal.

4 bananas, sliced
1 cup brown sugar
1/2 cup Bourbon
2 tablespoons butter
6 eggs
1/4 teaspoon salt
2 tablespoons vanilla
1/2 cup cream (you may sub in half & half)
8 slices thick white bread (I use Texas Toast)

Steps:

  • To make sauce: In a small pan, melt butter and brown sugar over medium heat; carefully add bananas and simmer for 2 minutes. Remove from stove and add bourbon; return to flame and continue simmering an additional 2 minutes. Cover and keep warm until ready to use.
  • To make batter: In a large bowl, whisk eggs and salt. Add vanilla. Pour in cream, continuing to whisk until well blended.
  • Melt 1 to 2 tablespoons butter in a large frying pan over medium-high heat. Dip each bread slice in batter and cook each side until golden brown. Repeat with remaining bread slices.
  • Transfer 2 bread slices to individual plates and top with banana slices and sauce. Serve with maple syrup or powdered sugar.

2 Tbsp unsalted butter
1⁄4 cup bourbon
divided
1⁄4 cup brown sugar
1⁄4 cup crushed walnuts
2 ripe but still firm bananas
sliced into 1⁄2" coins
1 cup 2% milk
3 eggs
1 tsp ground cinnamon
1 Tbsp vanilla extract
8 slices sturdy whole-grain bread like sourdough (day-old bread works great)

Steps:

  • Heat the butter in a medium nonstick pan over medium heat. Add 2 tablespoons of the bourbon and all of the brown sugar and stir to dissolve. Cook for 1 to 2 minutes until bubbly. Add walnuts and cook for an additional 2 minutes; add the bananas and heat through. Stir in 1⁄4 cup milk and keep warm. Whisk together the remaining 3⁄4 cup milk, eggs, cinnamon, vanilla, and the remaining 2 tablespoons bourbon. Heat a large cast-iron skillet over medium heat. When the skillet is warm, spray with a light coating of nonstick cooking spray. Working 2 pieces at a time, dip the bread into the bourbon-egg mixture. Let soak for 30 seconds. Flip each piece over and soak the other side for 30 seconds. Add the bread to the hot skillet. Cook until golden brown on the bottom, about 3 minutes. Flip and cook for an additional 2 to 3 minutes, until both sides are golden brown and slightly crispy. Serve with the warm banana topping.

Everyone wants to have a few great brunch recipes that can be made ahead of time. This is one of them. The flavor of this French toast? Think Bananas Foster-minus the rum.

1 1/2 cups packed brown sugar
1/2 cup butter or margarine, melted
1/4 cup light corn syrup
1/2 cup chopped walnuts
3 medium bananas, sliced
1 loaf (about 1 lb) sliced unfrosted firm cinnamon bread
6 large eggs
1 1/2 cups milk
1 teaspoon vanilla
Powdered sugar, if desired

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, stir brown sugar, butter, corn syrup and walnuts until smooth. Gently stir in bananas. Spoon mixture into baking dish.
  • Reserve ends of bread for another use because they don't soak up the egg mixture very well. Arrange 2 layers of bread on banana mixture, tearing bread to fit if needed.
  • In medium bowl, beat eggs, milk and vanilla with wire whisk until well blended. Pour over bread. Cover tightly; refrigerate at least 1 hour but no longer than 24 hours.
  • Heat oven to 325°F. Uncover; bake 45 to 55 minutes or until knife inserted in center comes out clean. Serve portions upside down, spooning sauce from bottom of dish over each serving. Sprinkle with powdered sugar.

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

2 -3 bananas
4 -6 tablespoons granulated sugar (or more)
cooking spray (regular or butter flavor)

Steps:

  • Slice bananas into thick coins or lengthwise strips, depending on your preference.
  • Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
  • Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
  • Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
  • Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
  • Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
  • Soak pan in hot water to facilitate cleaning.

My favorite 'special' breakfast. On the table in only 15 minutes. I like to use large sndwiches rolls cut into 4 long strips, but any bread works. Amounts given are approximate.

4 slices Texas toast thick bread or 3 sandwich buns, cut longwise into quarters
1 egg
1/2 cup milk
1 tablespoon butter
cinnamon (optional)
2 tablespoons brown sugar
1 banana, sliced in half twice lengthwise and crosswise

Steps:

  • Preheat nonstick skillet to 350, medium high.
  • In shallow dish, mix egg and milk until well incorporated. Dip bread into egg-milk mixture to coak. For softer french toast, allow to soak until all liquid is absorbed.
  • Let about 1 teaspoon butter melt in skillet. Cook french toast in butter about 1 min per side, until just golden brown. Is desired, sprinkle with cinnamon before flipping. (If using strips, cook on all four sides.).
  • Remove french toast to warm plate.
  • In skillet, combine brown sugar and remaining butter.
  • Add banana. Cook just enough to coat all sides with bubbling butter/sugar mixture, and carmelize slightly; less than 2 minutes total.
  • To serve, top french toast with caramelized banana and any of the butter/sugar mixture left in the pan.
