Steps:
- Preheat oven to 250*.
- Combine crackers and nuts in a greased, large shallow baking pan.
- In a saucepan, bring butter, sugar, and corn syrup to a boil and cook for 5 minutes.
- Remove from heat and add vanilla and soda.
- Pour caramel mixture over crackers and nuts; stir well.
- Bake for 1 hour, stirring every 15 minutes.
- Pour onto waxed paper and break apart; allow to cool.
- Store in airtight container.

- In a large greased bowl, combine crackers and peanuts; set aside. In a large heavy saucepan, combine the brown sugar, butter and corn syrup. Cook over medium heat until a candy thermometer reads 280° (soft-crack stage), stirring occasionally. , Remove from the heat. Stir in baking soda and vanilla. Pour over cracker mixture; quickly stir until evenly coated. , Transfer to two greased 15x10x1-in. baking pans. Bake at 250° for 1 hour, stirring every 15 minutes. Cool; break apart. Store in airtight containers.

Steps:
- Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer.
- In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, about 2-3 minutes.
- Remove from the heat and add one teaspoon pure vanilla extract.
- Pour over the crackers, covering them evenly.
- Put the pan into the oven and bake for about 5 minutes, or until just bubbly, watching carefully.
- Remove from the oven and pour the chocolate chips over the crackers.
- When the chips melt a bit, spread them over the crackers with a knife.
- Cool completely. You can put the pan into the freezer for 15 to 20 minutes to get completely cold.
- Break up into pieces. Store in an airtight container.

- Microwave caramels with 1/4 cup milk and 1/2 cup COOL WHIP in microwaveable bowl on HIGH 1-1/2 min.; stir until caramels are completely melted and mixture is well blended. Reserve for later use.
- Microwave apples and cinnamon in separate microwaveable bowl 2 min. or until apples are softened. Cool 10 min. Meanwhile, beat pudding mix, apple juice concentrate and remaining milk in large bowl with whisk 2 min. Let stand until apples are cooled.
- Add apples and remaining COOL WHIP to pudding mixture; mix well.
- Cover bottom of 8-inch square dish with 9 graham squares, overlapping as necessary to form even layer; top with half the apple mixture. Repeat layers. Cover with remaining graham squares. Spread reserved caramel mixture over top of dessert.
- Refrigerate 3 hours.
- Sprinkle with nuts before serving.

CHOCOLATE CARAMEL GRAHAM CRACKERS
Steps:
- Preheat oven to 375°F. Line a 15- by 10- by 1-inch baking pan with foil, leaving a 2-inch overhang at each end.
- Line bottom of pan with graham crackers (it will be a tight fit).
- Melt butter in a 1 1/2- to 2-quart heavy saucepan over moderately low heat, then add brown sugar and salt and cook, whisking, until mixture is smooth and combined well, about 1 minute. Pour over crackers, spreading evenly, and bake in middle of oven until golden brown and bubbling, about 10 minutes.
- Scatter chocolate chips evenly over crackers and bake in oven until chocolate is soft, about 1 minute. Remove pan from oven and gently spread chocolate evenly over crackers with offset spatula. Sprinkle nuts evenly over chocolate and cool crackers in pan on a rack 30 minutes. Freeze until chocolate is firm, 10 to 15 minutes.
- Carefully lift crackers from pan by grasping both ends of foil, then peel foil from crackers. Break crackers into serving pieces.
