4 1/4 cups all-purpose flour
1 teaspoon baking soda
1 1/2 cups butter, softened
1 1/4 cups white sugar
1 1/4 cups brown sugar, firmly packed
2 eggs
2 tablespoons vanilla extract
2 cups chocolate chips
sea salt (optional)

Steps:

  • Heat oven to 375°F (190°C).
  • Combine flour, baking powder, and baking soda in medium bowl; set aside.
  • Combine butter, white sugar and brown sugar in a large bowl. Beat at medium speed, scraping the bowl often, until creamy. Add the eggs and vanilla. Continue beating, scraping bowl often, until well mixed.
  • Reduce speed to low. Gradually beat adding flour mixture, until well mixed. Stir in chocolate chips.
  • Drop dough by rounded (heaping) tablespoonfuls, 2-inches (5 cm) apart, onto an ungreased cookie sheet. Flatten with back of tablespoon to make thin large cookies, or leave the way they are to make tall chubby cookies.
  • Bake for 12 to 15 minutes or until golden brown and soft in the center. Sprinkle a small amount of sea salt on top of each cookie while still warm.

This is such an easy chocolate chip cookie. No special equipment, no creaming -- a perfect cookie to do with kids. We love how versatile this dough is, too. It makes an awesome rocky road bar cookie.

1/2 cup (1 stick) unsalted butter
3/4 cup packed dark brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 (12-ounce) bag semisweet chocolate chips, or chunks
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon fine salt

Steps:

  • Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
  • Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.
  • Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool. Serve.
  • Store cookies in a tightly sealed container for up to 5 days.
  • For a Rocky Road Bar:
  • Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) Cool, cut and serve.

2 cups margarine (stick margarine only)
1 1/3 cups white sugar
1 1/2 cups packed brown sugar
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
2 eggs
2 cups chocolate chips

Steps:

  • Mix flour, soda and salt in a bowl; set aside.
  • Cream together margarine and sugars.
  • Beat eggs into sugar mixture.
  • Add vanilla.
  • Beat until fluffy.
  • Add the dry ingredients.
  • Add chocolate chips.
  • Drop onto ungreased cookie sheet and bake at 350° for 8-10 minutes .
  • Cookies should be brown around the edges and will finish cooking on the sheet when removed from the oven.

This has been my recipe for cc's (as my kids call them) for as long as I can remember. Do not substitute for the shortening - it makes a thick, crispy cookie. Bet you can't eat just one!

1 1/2 cups shortening
1 1/2 cups sugar
3/4 cup brown sugar
4 large eggs
3 teaspoons vanilla
4 3/4 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
18 ounces chocolate chips
1 1/2 cups chopped walnuts or 1 1/2 cups pecans

Steps:

  • Cream shortening and sugars.
  • Add eggs and vanilla and beat well.
  • Add dry ingredients and mix (if this is too much batter for your electric mixer, you may have to finish mixing in dry ingredients by hand.) Stir in nuts and chips by hand.
  • Drop by teaspoonful onto ungreased cookie sheet and bake at 375° for about 10 minutes.
  • Note: Start with 4 1/4 cups of flour and add more if needed.
  • Sometimes this batter comes out quite stiff.
  • Recipe can be halved successfully.

1/2 cup butter
1 cup packed brown sugar
2 tablespoons granulated sugar
1 egg
2 teaspoons vanilla
1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons instant coffee powder
1 1/2 cups chocolate chips

Steps:

  • Preheat the oven to 300°F.
  • Cream butter and sugars till light and fluffy. Add in the egg and vanilla and mix well for about another 45 seconds.
  • Sift the flour, salt, baking soda, baking powder and coffee together. Add the sifted ingredients into the butter/sugar/egg mixture and mix well.
  • Stir in your chocolate chips. Form the dough into rather large balls and place it on the cookie sheet, 3-inches apart. Press it down to make a 2-inch wide thick but slightly flat disc.
  • Bake in the oven for 20 minutes on a greased cookie sheet. Let cool on the sheets for about 4 minutes and then transfer to a wire rack to totally cool off.
  • Variations: chocolate-chocolate chip cookies - add 1/4 cup cocoa to the sifted ingredients.
  • You can also use peanut butter chips, or using the chocolate-chocolate version, Make white chocolate chip and macadamia nut cookies. The variations are endless!

1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips (President's Choice)
1 cup walnuts, chopped (I'd add more chocolate chips if you do not include walnuts, optional) (optional) or 1 cup pecans (I'd add more chocolate chips if you do not include pecans) (optional)

Steps:

  • In a large bowl, cream together butter and shortening; gradually mix in sugars, creaming thoroughly.
  • Beat in eggs and vanilla.
  • Combine flour, baking soda and salt; blend into creamed mixture. Stir in chocolate chips and nuts.
  • Chill for a few minutes or let stand at cool room temperature for 30 minutes.
  • Drop by rounded teaspoonfuls onto lightly greased baking sheets.
