COBB CLUB SANDWICH
You'll need both hands to grab hold of this double-decker sandwich that incorporates all the elements of a classic Cobb salad, stacked up high.

Steps:
- Combine oil, vinegar, and mustard in a small bowl. Season chicken with salt and pepper, and place in the bowl, stirring to coat. Marinate, covered, for at least a half an hour.
- Preheat a grill or a grill pan to medium hot. Grill chicken until cooked through, 7 minutes on each side. Let cool slightly; slice thinly at an angle.
- In a large heavy skillet over medium heat, cook bacon until crisp, and drain on paper towels. Toast bread under a broiler until lightly golden on both sides. Quarter and thinly slice avocado, and drizzle with lemon juice to prevent discoloration.
- Assemble the sandwich in this order: bread, mayonnaise, lettuce, tomato, avocado, bread, mayonnaise, chicken, bacon, cheese, mayonnaise, bread. Serve immediately.
COBB CLUB SANDWICHES
In this cobb club sandwich, I take the staple ingredients of a cobb salad--avocado, bacon, egg, chicken, and blue cheese--and re-imagines it as a triple-decker club sandwich.

Steps:
- Place tomato slices on several layers of paper towels and sprinkle with salt. Let sit for 15 minutes, then press with additional paper towels to extract excess moisture.
- Using fork, mash 1/3 cup mayonnaise and blue cheese together in small bowl until smooth.
- Spread blue cheese mixture on 8 slices toast. Spread 3 tablespoons mayonnaise on remaining 4 slices toast. Place 4 cheese-coated toasts on work surface. Layer each with sliced tomato, egg, and avocado. Place plain mayonnaise-coated toasts, mayonnaise side down, over avocado; spread tops of toast with remaining mayonnaise. Continue layering with 2 strips bacon and sliced chicken. Top with remaining blue cheese-coated toasts, facing down. Cut each sandwich into triangles. Serve.

CALIFORNIA CLUB SANDWICH
A signature trademark of the California club sandwich is the use of avocado, either sliced or as guacamole. This recipe was adapted from www.food.com, and although not stated in the ingredients, you can also add slices of either Cheddar or Swiss cheese like Gruyère to make the sandwich richer and more filling.

- To prepare the bread, toast it whichever way you like, in the oven, in a toaster, or under a broiler. Both sides must be toasted.
- Spread one side of each bread slice with mayonnaise. Top two of the bread slices in the following order. Lettuce, two tomato slices, seasoning of salt and pepper (to taste), two slices of bacon, chicken slices, avocado slices, and again a seasoning of salt and pepper to taste.
- Place one layered bread slice chicken side up onto the second layered bread slice and then cover everything with the remaining bread slice mayonnaise side down.
- Secure the sandwich layers by inserting through the top four toothpicks in a diamond-like pattern. Make sure that you've pierced the sandwich all the way to the bottom.
- With a serrated knife, cut the sandwich into four triangular pieces.
CALIFORNIA CLUB SANDWICH
Really nothing more than a traditional club sandwich with avocado, but it really makes a difference in texture as I have always found club sandwiches to be a little dry.

- Toast the bread in a toaster, or under a broiler on both sides.
- Arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with the chicken (without letting any hang over the sides).
- Add avocado slices & season with a pinch of salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, chicken side-up. Cover with the third bread slice.
- Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice.
- Using a serrated knife cut sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword).

CALIFORNIA CLUB SANDWICH
A longtime favorite sandwich of mine, since first trying the California Sandwich many moons ago at a little "healthfood" deli stand in Pacific Beach, California. This is my version. Use recipe #173076 for ease of preparation. Also good with thinly sliced tomatoes, in place of the cucumbers. I hope you enjoy!

- Toast bread lightly.
- Spread 4 slices toasted bread with mayo, and the other 4 slices with cream cheese.
- Assemble the sandwiches:.
- For each sandwich use one slice mayo toasted bread and one slice cream cheese toasted bread. Per sandwich use 2 smoked turkey slices, 1 provolone cheese slice, 1 bacon, avocado strips, 4 thin cucumber or tomato slices, and sprouts or lettuce.

CLASSIC CLUB SANDWICHES
I love Club Sandwiches and came up with this one afternoon using DH's favorite sandwich ingredients which are Turkey, Bacon and Swiss Cheese. He declared it delicious! :) The technique is not hard as long as you get your ingredients together and create an assembly line. Use a good sharp serated knife to easily cut these into bite size triangles.

- Spread mayonnaise over 1 side of each slice of toast, (this will be the glue that holds your sandwich together).
- Place 1 slice of cheese and 2 slices of turkey on each of 6 toast slices. Cover with second slice of toast. Top with lettuce leaf, 3 slices tomato and 2 slices bacon. Sprinkle with salt and generous amount of cracked black pepper. Cover with third slice of toast; secure with wooden picks. To serve, cut diagonally into triangles. 6 servings.

- Spread butter over 1 side of each bread slice. Place 1 slice cheese on each unbuttered side of bread. Toast bread slices, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 4-5 minutes., Layer 1 toast with lettuce, tomato, turkey and avocado.
