1 1/2 pounds large shrimp, peeled and deveined
6 tablespoons Essence, plus more for garnish, recipe follows
2 tablespoon extra-virgin olive oil
10 ounces andouille sausage, chopped
1/2 medium onion, minced
1 1/2 teaspoons crushed red pepper flakes
5 cloves garlic, minced
3 shakes Worcestershire sauce
1 pound linguine
2 cups heavy cream
1 cup whole milk
1 tablespoon freshly ground black pepper
1/2 teaspoon hot chili powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, sliced
1 1/2 cups grated Parmigiano-Reggiano
Chopped fresh flat-leaf parsley, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Place the shrimp and 3 tablespoons Essence in a large resealable plastic bag and shake. Place the bag in the refrigerator while you prepare the sauce.
  • Heat a deep 3-quart skillet over medium-high heat. Add 1 tablespoon olive oil and the andouille sausage. Saute sausage for 2 minutes, stirring often. Add onions and saute for 2 minutes. Add crushed red pepper flakes and garlic and cook 1 minute. Add Worcestershire sauce.
  • Meanwhile, cook the pasta in boiling salted water according to package instructions.
  • To the skillet, add cream, milk, remaining Essence, black pepper, chili powder, and salt. Stir to a consistent color. Add butter and stir until melted. Stir in cheese until melted. Lower heat to a simmer.
  • Heat the remaining olive oil in another large skillet over high heat and add the shrimp. Saute shrimp for 1 to 2 minutes per side or until they just start to turn pink. Add the shrimp and cooked, drained pasta to the first skillet. Stir to combine and blend flavors, about 1 minute.
  • Serve in a large pasta bowl. Sprinkle with parsley and Essence for garnish.
  • Combine all ingredients thoroughly.

1/2 cup bell pepper (chopped)
2 Tablespoons unsalted butter

Steps:

  • Cook onion and pepper in large nonstick skillet over medium heat for about 3-5 minutes or until vegetables are soft. Set aside.
  • Meanwhile, place a medium saucepan over medium heat. Melt butter, then stir in minced garlic cloves. Cook about 1 minute or until garlic is soft and fragrant, stirring constantly.
  • Slowly add the heavy cream to the saucepan, whisk until cream comes to a boil. Reduce heat and simmer about 3-5 minutes or until it starts to thicken.
  • Stir in Parmesan cheese and 2 teaspoons Cajun seasoning until smooth and thick. Add more Cajun seasoning as desired. Then stir in cooked onions and peppers.

Steps:

  • Cook sausage in 12-inch nonstick skillet over medium-high heat 4 minutes or until cooked. Remove sausage to paper-towel-lined plate.
  • Season chicken, if desired, with salt and pepper. Cook chicken in same skillet, stirring occasionally, 4 minutes or until chicken is thoroughly cooked. Remove chicken from skillet and set aside.
  • Stir red peppers and onion into same skillet* and cook, stirring occasionally, 4 minutes or until tender. Stir in garlic and cook, 30 seconds. 1 ½ teaspoons all-purpose flour
¾ teaspoon salt-free Cajun seasoning
5 ounces large shrimp, peeled and deveined

¼ cup unsalted chicken stock

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, 7 to 8 minutes. Reserve 1/4 cup of the cooking water and drain the remaining water.
  • Combine flour and Cajun seasoning in a small bowl. Pat shrimp dry and add to the bowl, tossing to coat.
  • Heat butter and olive oil in a skillet over medium-high heat. Place shrimp into the skillet once the butter bubbles and cook for 2 minutes per side. Transfer shrimp to a clean bowl. Add garlic to the same skillet and cook until fragrant, about 30 seconds. Pour chicken broth into the skillet and scrape up any brown bits.
  • Whisk in remaining flour-Cajun seasoning slowly until well incorporated. Season with white pepper and red pepper flakes. Reduce heat to medium-low and slowly whisk in cream; cook for 2 minutes. 2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions

Steps:

  • Preheat the oven to 350 degrees F.
  • Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
  • In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.

12 ounces fettuccine
1 tablespoon vegetable oil
6 ounces andouille sausage, sliced into rounds
4 scallions, chopped
1 celery rib, chopped
1 green bell pepper, chopped
1 teaspoon Cajun seasoning
1 cup heavy cream
1/2 cup freshly grated Parmesan, plus more for serving
2 tablespoons flat-leaf parsley

Steps:

  • Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions.
  • While the pasta cooks, heat the oil in a large skillet over medium-high heat. Add the sausage and cook, stirring occasionally, until golden brown on both sides, about 3 minutes. Add the scallions, celery, bell pepper, and Cajun seasoning and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes. Add the cream and simmer until slightly thickened, about 1 minute.
  • Once the pasta is cooked, transfer it directly from the boiling water into the cream sauce using tongs or a pasta fork. Sprinkle the pasta with the Parmesan and toss to combine. Add a splash of the starchy pasta water to help the sauce thicken and coat the pasta. Top with chopped parsley and serve with additional Parmesan.

3 cups heavy cream
2 tablespoons minced garlic
tony creole seasoning, to taste (as much as you like. You can use any creole seasoning, but I prefer Tony's!)
2 cups grated parmesan cheese
16 ounces fettuccine pasta

Steps:

  • Cut the chicken into bite size chunks and fry with the garlic.
  • When chicken is done, add the cream and stir just until bubbly.
  • Then add the Tony's seasoning and the parmesean cheese and cook until bubbling, but dont let it curdle.
  • Make fettucine according to package and mix all together when done!

4 tsp paprika
2 tsp kosher salt
2 tsp onion powder
2 tsp cayenne
1.5 tsp cumin
1.5 tsp black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp white pepper
1 lb fettuccine pasta
4 tbsp olive oil, divided
2 tbsp kosher salt-for pasta water
4 oz butter
1 cup heavy whipping cream
1 cup 1/2 and 1/2
4 cloves garlic
2 1/2 cups parmesan cheese, fresh grated
1 cup andouille sausage
1 cup chopped cooked chicken (either white meat or dark meat)
3 cups shrimp, deveined and peeled
1/2 cup flat leaf parsley
4 tbsp Cajun Fire Spice

Steps:

  • In a covered container or sealed plastic bag, combine all spice ingredients and shake until mixed.
  • Add 6 qts water, 2 tbsp olive oil, 2 tbsp kosher salt to pasta pot and heat to boil. Add pasta to boiling water and cook until al dente, approx. 8 minutes. Strain pasta in colander, lightly cool with cold water. Mix 1 tbsp of olive oil into pasta, and set aside.
  • In a dry hot skillet add 2 tablespoons of the Cajun Fire Spice, allow spices to heat up and slightly smoke. Add 1 tbsp olive oil and sausage. Cook until the oils leach on to the pan, then add shrimp and chicken and coat well with spices and sausage oils.
  • In a separate sauce pot melt the butter and add the whipping cream and half and half on low heat and simmer for 2 to 3 minutes. We do not want to brown the butter.Stir in the garlic and two tablespoons of the Cajun Fire Spice. Slowly whisk in 2 1/4 cups Parmesan cheese until the sauce thickens, combine with sausage, chicken and shrimp and stir well. Add the Cajun Alfredo Sauce to the cooked fettuccine and gently mix.
  • Plate pasta to center of dish and mound with a fork. Top with Parmesan cheese, fresh flatleaf parsley, dust the plate with 1 tbsp Cajun Fire Spice.
