GROUND BEEF TURNOVERS
Meet the Cook: Traditional meat pies aren't among my husband's favorites. He likes these so much, however, that he even eats them cold! I've found they're a great lunch for a haying crew as well. Brian and I have a son, 11 months. -Wendy Tomlinson, Echo Bay, Ontario

Steps:
- In a large bowl, combine flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. In a small bowl, combine the water, egg and vinegar. Add to shortening mixture, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball. Cover and chill for 30 minutes., Meanwhile, combine the first six filling ingredients. Divide pastry into 15 equal portions. On a lightly floured surface, roll out one portion into a 6-1/2-in. circle. , Mound a heaping 1/3 cup filling on half of circle. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Transfer to a greased baking sheet. Repeat with remaining pastry and filling. , Cut three slits in the top of each turnover; brush with cream. Bake at 375° for 35-40 minutes or until vegetables are tender and crust is golden brown.

Steps:
- For filling: Saute onion, bell pepper, celery, and mushrooms in butter until tender and mushrooms have released some liquid.
- Add rice and water.
- Stir.
- Add Worcestershire sauce, hot sauce, garlic powder, cayenne, and salt. Mix well.
- Bring to a boil, cover tightly, simmer for 10 minutes.
- For dough: While rice is simmering, preheat oven to 3750.
- Separate crescent rolls into rectangles.
- Seal the seams in each rectangle by pressing the dough together.
- Place rice mixture (turnovers are easier to shape if rice is chilled) in the center of each rectangle. Fold dough over and press with a fork to seal the edges.
- Brush the tops of turnovers with beaten egg.
- Place on lightly greased cookie sheet. Bake 12-13 minutes.

CRESCENT ROLL APPLE TURNOVERS
This sweet pastry is delicious hot or cold. Topped with caramel sauce that makes this rich dessert look like you went to a lot of trouble when you didn't! You could serve with a scoop of vanilla ice cream.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine apples, brown sugar, water, butter, flour, sugar, and cinnamon in a bowl; mix to combine.
- Unroll crescent dough and separate into 8 triangles. Scoop 1 tablespoon apple mixture into the center of each triangle and fold into a package, making sure the ends are sealed. Transfer to the prepared baking sheet.
- Bake in the preheated oven until golden brown, 15 to 18 minutes. Remove from the oven and allow to cool for 10 minutes.

- Preheat oven to 375 degrees.
- In a medium saucepan over medium heat, slowly cook and stir the mushrooms, parsley and onion in 2 tablespoons butter until tender.
- Drain and set aside.
- Separate the dough into 4 rectangles.
- Cut rectangles in half, forming 8 squares, and arrange on a large baking sheet.
- Place 1 tablespoon mushroom mixture on each square.
- Top each square with 1 teaspoon parmesan cheese.
- Fold the squares into triangles.
- In a small saucepan, melt remaining butter.
- Brush triangles with butter and sprinkle with sesame seeds.
- Bake in the preheated oven 10 to 15 minutes, until golden brown.

CHICKEN OR TURKEY CRESCENT TURNOVERS
A great way to use up any leftover chicken or turkey! You can use canned well drained mushroom pieces in place of fresh if desired.

- Set oven to 375°F.
- Heat oil and butter in a skillet over medium heat.
- Add in the chopped mushrooms, onions, garlic, red bell pepper and thyme; sauté for about 2-3 minutes or until onions are soft and the mushrooms loose their moisture.
- Add in flour and stir 1 minute or until well blended, stirring constantly.
- Add/stir in whipping cream; cook stirring until thickened.
- Add in Parmesan cheese and cayenne pepper.
- Season with salt and black pepper.
- Add in cubed cooked chicken or turkey; toss to combine.
- Remove the crescents from the two packages and separate into 8 rectangles.
- Press the perforations together to seal into 8 solid rectangles.
- Evenly divide the chicken or turkey mixture between the 8 rectangles.
- Fold into triangles, then press the edges to seal in the mixture.
- Place on a baking sheet.
- Bake for about 15-20 minutes.
- Delicious!

- Preheat oven to 400°F Lina a cookie sheet with parchment paper; set aside.
- In a small bowl, lightly beat the egg with 1 tablespoon water. Set aside.
- Heat the oil in a large skillet over medium heat. Add the onion and cook for 5 minutes, until shiny. Add the chopped garlic, chopped tomato, and tomato paste. Saute for 3 minutes.
- Meanwhile, in a medium bowl, combine the ground meat, minced garlic, parsley, cumin, paprika, cinamon, cayenne pepper, salt, pepper, and ginfer. Mix well.
