1.33 lbs. tilapia
2 tbsp. butter (or olive oil or ghee)
2 tbsp paprika
2 tsp onion powder
1 tsp black pepper
1 tsp chili powder
1/2 tsp oregano
1/2 tsp dried thyme
1/2 teaspoon garlic powder
1/2 tsp salt

Steps:

  • Preheat the oven to 425 degrees.
  • Place the fish in a baking dish sprayed with cooking spray. Melt the butter and brush or drizzle onto of the fish.
  • Mix together the spices to create the blackening rub. Coat on one side for a milder flavor or on both sides for a spicier flavor. You may have some extra seasoning.
  • Bake for 10-12 minutes until fish flakes easily with a fork.

3 tablespoons smoked paprika
1 teaspoon salt
1 tablespoon onion powder
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon dried ground thyme
1 teaspoon dried oregano
1/2 teaspoon garlic powder
4 tilapia fillets
2 tablespoons grapeseed oil
1/2 lemon, juiced

Steps:

  • In a small bowl combine all of the spices. Press a heaping tablespoon of the spice mix onto each fillet so that both sides are liberally coated. Allow the fish to sit for 15 minutes at room temperature prior to cooking.
  • In a large skillet, heat the oil over medium-high heat. Once the oil is almost smoking, add the fillets and cook for 2 to 3 minutes on each side. Sprinkle with lemon juice and transfer the fillets to serving platter.

1 clove Garlic

13.4 ounce Kidney Beans
½ cup Jasmine Rice
1 unit Veggie Stock Concentrate
1 teaspoon Smoked Paprika
11 ounce Regal Springs Tilapia
1 tablespoon Blackening Spice
2 tablespoon Sour Cream
1 teaspoon Hot Sauce
2 teaspoon Vegetable Oil
2 teaspoon Olive Oil
2 tablespoon Butter
Kosher Salt
Pepper

Steps:

  • • Wash and dry all produce. • Core, deseed, and finely dice bell pepper. Trim and thinly slice scallions, separating whites from greens. Peel and mince garlic. Zest and quarter lemon (for 4 servings, zest 1 lemon and quarter both). Drain and rinse beans.
  • • In a small pot, combine rice, ¾ cup water (1½ cups for 4 servings), and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.
  • • Meanwhile, heat a large drizzle of olive oil in a medium pot over medium-high heat. Add bell pepper and scallion whites; cook, stirring occasionally, until slightly softened, 4-5 minutes. • Stir in garlic; cook until fragrant, 30 seconds.
  • • Stir beans, stock concentrate, paprika, ¼ cup water (1⁄3 cup for 4 servings), and a big pinch of salt and pepper into pot with veggies. Bring mixture to a simmer, then reduce heat to low. Cook until thickened, 7-8 minutes. • Turn off heat; stir in 1 TBSP butter and season with salt and pepper. Cover to keep warm.
  • • Meanwhile, pat tilapia* dry with paper towels; season all over with salt and pepper. Rub both sides of each fillet with Blackening Spice. • Heat a large drizzle of oil in a large, preferably nonstick, pan over medium- high heat. Add tilapia and cook until browned and cooked through, 4-6 minutes per side.
  • • In a small bowl, combine sour cream with hot sauce to taste. Add water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper. • Fluff rice with a fork; stir in lemon zest and 1 TBSP butter (2 TBSP for 4 servings). Season with salt and pepper. • Divide rice, beans, and tilapia between plates. Top with crema and scallion greens. Serve with lemon wedges on the side.

1 lb dried red kidney beans
9 3/4 cups water, divided
1 (14 1/2 ounce) can low sodium chicken broth
3 tablespoons vegetable oil
2 1/2 cups chopped onions, divided
1 1/4 cups fully cooked andouille sausages or 1 1/4 cups hot Italian sausage links, diced
1 cup chopped green bell pepper
1 cup chopped celery
6 garlic cloves, minced
2 teaspoons salt, divided
3/4 teaspoon ground black pepper, divided
1 teaspoon paprika
1/2 teaspoon cayenne pepper (ground red pepper)
1 1/2 cups long-grain white rice
3 tablespoons butter
1 bay leaf
1/2 teaspoon dried thyme

Steps:

  • Place kidney beans in large pot. Add enough water to pot to cover beans by 2 inches. Bring to boil. Remove pot from heat. Cover and let beans stand 1 hour to soften. Drain. Return beans to same pot. Add 7 cups water and chicken broth. Bring to boil. Reduce heat to medium-low and simmer until beans are tender, about 1 hour. Drain beans, reserving 2 cups of cooking liquid.
  • Heat vegetable oil in heavy large skillet over medium-high heat. Add 2 cups onions and saute' until beginning to soften, about 4 minutes. Add sausage, bell pepper, celery, and garlic. Reduce heat to medium and saute' until vegetables are tender, about 10 minutes. Stir in beans, reserved 2 cups cooking liquid, 1 teaspoon salt, 1/2 teaspoon black pepper, paprika, and cayenne. Reduce heat to low; simmer until liquid thickens slightly, about 15 minutes.
  • Meanwhile, combine remaining 2 3/4 cups water, rice, butter, bay leaf, thyme, and remaining 1/2 cup chopped onion, 1 teaspoon salt and 1/4 teaspoon black pepper in a large saucepan. Bring to simmer over high heat. Cover, reduce heat to low and cook until rice is tender and water is absorbed, about 20 minutes. Remove from heat and let stand covered 10 minutes.
  • Spoon kidney beans into bowls. Top with rice and serve.
