This easy sauteed cabbage and leeks recipe is a great side dish to any meal, especially for corned beef, pot roast, or ham.

3 large leeks

1/3 cup chicken broth
1 scant teaspoon kosher salt

  • Arrange the cabbage and leeks in a serving dish. Sprinkle with caraway seeds, if desired, and enjoy!

2 tablespoons butter, plus more for the dish
2 leeks, halved, thinly sliced and soaked in cold water for 30 minutes
3 sprigs fresh thyme, leaves picked
Kosher salt and freshly ground black pepper
2 pounds Yukon gold potatoes
8 ounces cream cheese, softened
1/2 cup heavy cream
1/2 cup chicken stock
2 cloves garlic, minced
1/4 teaspoon paprika
1 1/2 cups grated fontina cheese

Steps:

  • Preheat the oven to 350 degrees F. Butter an oval baking dish. Drain the leeks and rinse.
  • In a large skillet, melt the butter over medium heat. Add the leeks and thyme, season with salt and pepper and cook, stirring, until the leeks are softened and golden, 5 to 7 minutes.
  • Peel and slice the potatoes into very thin rounds. Sprinkle with salt and pepper. Layer half of the potatoes in the buttered dish, then layer half of the cooked leeks over the potatoes. Repeat the layers.
  • Return the skillet to medium heat and add the cream cheese, cream, chicken stock and garlic. Stir together, scraping up any brown bits from the bottom of the skillet. Sprinkle with the paprika and some salt and pepper. Bring to a boil, lower to a simmer and simmer for about 5 minutes so the cheese melts. Pour the cream mixture over the leeks and potatoes and top with the grated cheese.
  • Cover with foil and transfer to the oven. Bake for 40 minutes, then remove the foil and continue baking until the cheese is bubbly and golden, 15 to 20 minutes more. Allow to cool slightly before serving.

1/2 cup heavy cream

  • Preheat oven to 350°F.
  • Make sure leeks have been rinsed well.
  • Cook in boiling salted water until slightly tender, about 5 minutes.
  • Drain.
  • Place cut side up in a greased baking dish.
  • Pour cream over the leeks.
  • Sprinkle with cheese, salt and pepper.
  • Bake until cream has thickened and cheese is melted, about 10-15 minutes.
  • Preheat broiler.
  • Sprinkle bread crumbs over leeks.
  • Place 4" from heat source and broil until lightly browned, 2-3 minutes.

1 large head cauliflower, cut into small florets
1 large leek (white portion only), halved lengthwise, washed and sliced
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/4 cups cashew milk
2 tablespoons white wine or chicken broth
1/3 cup cashew butter
2 garlic cloves, minced
1/3 cup chopped cashews, toasted
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 425°. Place cauliflower florets and leek slices in a parchment-lined 15x10x1-in. baking pan. Drizzle with oil. Sprinkle with paprika, salt and pepper; toss to mix. Roast 20 minutes, stirring halfway through., Meanwhile, process cashew milk, white wine, cashew butter and garlic in a blender until smooth. Pour into a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer until thickened, 2-3 minutes., Transfer roasted cauliflower and leeks to a greased 11x7-in. baking dish; stir in cashew sauce. A creamy supper dish that's cooked in one pot, and is easily made vegetarian

125ml stock (made with a cube - whatever you've got)
carton double cream
150ml milk
1 garlic clove, crushed
1 bay leaf
a knob of butter, for greasing
800g potato, peeled and thinly sliced
2 leeks, washed and thinly sliced
175g sliced ham, chopped (optional)
85g cheddar, grated

Steps:

  • Pour the stock, cream and milk into a small saucepan, add the garlic and bay leaf and bring to the boil. Remove from the heat, cover and let the flavours infuse while you get on with the rest of the dish.
  • Preheat the oven to 180C/gas 4/fan 160C. Butter a 2 litre gratin dish well. Mix the potatoes, leeks and ham (if using) together in the dish, and spread out in an even layer. Pour over the stock mixture and tuck the bay leaf in the middle. Season and sprinkle with the cheese.
  • Stand the dish on a baking tray to catch any spills. Loosely cover with foil and bake for 30 minutes. Test the potatoes with a knife - they should be just beginning to soften. Remove the foil and bake for another 35-45 minutes, spooning some of the stock mixture over every now and again until the potatoes are tender. Cool for 15 minutes before serving.

1 cup carrot, shredded
2 green onions, chopped
3 tablespoons butter
1 cup half-and-half
2 eggs
1 -2 cup swiss cheese, shredded
1 teaspoon seasoning salt (or to taste)
pepper
2 tablespoons fresh parsley, chopped or 1 teaspoon dried parsley
1/4 cup parmesan cheese (or to taste)

Steps:

  • Set oven to 350 degrees Fahrenheit.
  • Butter a small-medium casserole dish.
  • In a medium size frypan, saute cabbage, carrot and onions in butter until crisp-tender.
  • Transfer mixture to buttered baking dish.
  • In a bowl, combine half and half with eggs, cheeses, seasoned salt and pepper. Pour mixture over the veggies.
  • Sprinkle with parsley and Parmesan cheese.
  • Bake uncovered for 30 to 35 minutes.
