- 1. Melt butterscotch morsels over medium heat. Grandma used a double boiler. You can use the microwave. Stir in peanuts and noodles. Spoon by tablespoons full onto wax paper. Use spoon to shape into haystacks and allow to cool.

- Butter a 13x9-in. pan; set aside. In a heavy saucepan, combine the sugar, water and cream of tartar. Bring to a boil, without stirring, over medium heat until a candy thermometer reads 300° (hard-crack stage). Syrup will turn a golden color. , Remove from the heat; stir in butter and vanilla. Return to heat. Cook and stir until thermometer returns to 300°. Pour into prepared pan. Cool. Break into pieces.

Butterscotch Haystacks are an easy, no bake, 2 ingredient cookie. These simple cookies are made with butterscotch chips and crunchy chow mein noodles, but feel free to add in other mix ins such as chocolate, peanut butter, nuts or mini marshmallows.

- Line a baking tray with parchment paper.
- Melt the butterscotch chips in a large glass bowl. You can do this over a double boiler or in the microwave. If you use the microwave, be sure to do it in 15 second intervals, stirring well in between each so that the chips don't burn.
- Once the butterscotch chips are melted, add in the chow mein noodles.
- Give the noodles a good coating. At this point, add in other mix ins else desired.
- Using two spoons, scoop the coated noodles into bite sized cookies and place them on a tray lined with parchment.
- Allow the cookies to set until the butterscotch is hardened. You can speed up this process by sticking the tray in the freezer or fridge.
- Store in an airtight container in the fridge.

- In a medium microwave-safe bowl, melt the butterscotch chips and peanut butter on high for 1 minute. Stir the mixture. Then, continue microwaving at 30-second increments, stirring each time, until it is smooth and creamy.

- Gather the ingredients.
- Lay a sheet of waxed paper or parchment paper on the countertop.
- Put the butterscotch chips in a medium microwave-safe bowl or container. Microwave at 50% power for about 3 to 5 minutes, or just until the butterscotch chips are melted.
- In a large bowl, mix the peanut butter, peanuts, melted butterscotch chips, and chow mein noodles, stirring gently to coat the noodles thoroughly.
- Drop teaspoons of the mixture onto the parchment paper. Let them stand at room temperature until set.

HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.
