Steps:
- Put sugar, corn syrup, water and salt into saucepan.
- Stir over low heat until sugar is dissolved.
- Increase heat and cook until thermometer registers 250 degrees F, firm ball stage.
- Add butter; cook with occasional stirring until thermometer registers 300 degrees F (brittle stage).
- Remove from stove.
- Add vanilla extract.
- Pour into buttered shallow pan, making a layer 1/4 inch deep.
- While warm, crease into squares with a blunt knife.
- When cold, break into pieces.

- Butter a 15x10x1-in. pan with 1 teaspoon butter; set aside. Cube remaining butter and set aside., In a heavy saucepan, combine the sugar, water and corn syrup. Cover and bring to a boil over medium heat without stirring. Cook, uncovered, until a candy thermometer reads 270° (soft-crack stage). Add the honey, salt and remaining butter; stir constantly until the mixture reaches 300° (hard-crack stage)., Remove from the heat. Stir in the rum extract. Pour into prepared pan without scraping; do not spread. Cool until the candy is almost set, 1-2 minutes. Score into 1-in. squares; cool completely. Break squares apart. Store in an airtight container.

BUTTERSCOTCH HARD CANDY RECIPE
These butterscotch hard candies are crunchy-creamy and deeply flavorful. If you think you don't like butterscotch candy, this recipe might just make you change your mind! CAUTION: hard to stop eating. Enjoy responsibly! NOTE: All ingredients are by weight. I'll give you approximate cup measurements, but please buy a kitchen scale. You'll be glad you did.

- Butter an 8" square metal pan with straight sides. Line with nonstick foil, pressing it down to smooth it out against the pan as much as you can. Put the pan on a cooling rack convenient to the stove.
- Cut the butter into small pieces and put in a heavy-bottomed pot over medium heat.
- Once the butter has melted, stir in the two sugars, corn syrup, and kosher salt. Stir well until mixture comes to a boil. Alternately stir with either a wooden spoon or a high heat spatula and swirl the pan to keep the mixture moving. SEE NOTES
- Either clip a candy thermometer onto the side of your pan or keep checking the temperature with an instant read thermometer. When the candy reaches 250F, add the heavy cream. The mixture will sputter some, so add it carefully and then stir it in well.
- Continue cooking the candy, stirring and swirling almost constantly until it reaches 295-297F.
- Carefully pour the candy into the prepared pan. You can use your spatula to gently help the last bit of the candy pour out, but don't scrape to clean the pot out.
- Allow the candy to cool for about 10 minutes. (If you use a smaller pan, it will take a few minutes longer. You want the candy to be pliable but still be able to hold its shape.
- Use the foil to ease the candy out of the pan and put it on a cutting board, foil and all.
- Peel the foil back from the sides of the candy and, using a pizza wheel, score the candy into 64 pieces in an 8 x 8 grid. You can run the wheel over your lines a few times. Try to make the score marks fairly deep--about halfway through the candy. A little butter will leak out in the score marks, but worry not. It will reabsorb once the candy has cooled completely and cured.
- Move the scored slab of candy back onto the cooling rack.
- Let the candy cool for about an hour or so until completely firm. Allow the candy to sit in a dry spot where nobody will bother it for several hours or overnight. Then break the candy into pieces along the score lines. It will be easy to break.
- Store candy in an airtight container at room temperature for up to a week or so.

I recommend using a good candy thermometer to obtain good results. This is a simple, old fashioned candy. Yummy!

- In a large pot, combine brown sugar, corn syrup, water and salt.
- Cook over medium-low heat, stirring, until sugar is dissolved.
- Do not let this come to a boil until sugar has completely dissolved.
- Turn the heat up a bit and continue cooking to the hard ball stage (250F).
- Add butter and stir to keep from scorching.
- Cook until mixture will separate into hard but not brittle strands (270F) when tested in cold water.
- Stir in the vanilla.
- Pour candy in a thin sheet onto a greased slab.
- (I don't have a slab. I turn a large metal baking pan upside down and grease the bottom- works great!).
- Mark into squares while still warm, creasing it deeply.
- Break into pieces as soon as it is cool.

That sweet tooth for which Scots have a reputation means that there are many traditional confectionary recipes. But quite why a brittle candy made from butter and sugar should be named "Scotch" is lost in the mists of time.

Steps:
- Well oil an 11" x 7" shallow baking tin pan. Put the water and lemon juice in a heavy-based saucepan and heat until slightly warm.
- Stir in the sugar and continue to heat gently, stirring with a wooden spoon, until all the sugar has been thoroughly dissolved. Don't allow it to boil.
- Stir in the cream of tartar and bring to the boil to 242F on a sugar thermometer (or until a teaspoon ful of the mixture forms a soft ball when it is dropped into a cup of cold water).
- Remove from the heat and beat in the butter. Return to the heat and boil to 280F or when a teaspoon of the mixture forms a thin thread when dropped into a cup of cold water. (The thread will bend and break when pressed between the fingers)
- Remove from the heat and beat in the vanilla extract. Pour into the oiled tin and leave until it is almost set.
- Then mark into small rectangles with a knife.
- When it is competely set, break into pieces and store in an airtight container.

- Try to make this candy on a dry [not humid] day.
- Place sugar in a saucepan; add cream and water, and stir until the sugar dissolves. Wipe down the sides of the pan with a wet cloth. Add a pinch of cream of tartar, place over medium heat and boil the mixture very slowly until it reaches the soft-ball stage - 240 degrees F on a candy thermometer. Add the butter and boil the mixture until it reaches the soft-crack stage - 280 degrees F on a candy thermometer. DO NOT STIR AFTER THE MIXTURE HAS COME TO A BOIL!
- Remove the pan from the heat and add the vanilla extract. Pour mixture into a deep, buttered 7-inch square pan. When the butterscotch is nearly cold, use the point of a buttered or oiled knife to mark it into bars or squares. When the butterscotch is quite cold and set. Break it up, wrap each piece in wax paper, and keep the candy in an airtight container.

- Butter a 13x9-in. pan; set aside. In a heavy saucepan, combine the sugar, water and cream of tartar. Bring to a boil, without stirring, over medium heat until a candy thermometer reads 300° (hard-crack stage). Syrup will turn a golden color. , Remove from the heat; stir in butter and vanilla. - Mix syrup, sugar and water.
- Bring to hard/crack boil on candy thermometer.
- Stir in Candy oil and food coloring. (watch about the steam coming off of the mixture, it can really get you).
- Butter the heat resistant surface you will be working on. (She had a marble candy board, I use a cookie sheet).
- When cool enough to touch with hands (but not too cool or it will be too late), butter you hands and kitchen scissors and begin cutting pieces with scissors.
- Put pieces in a bowl of confection sugar (coats each piece from sticking to one another) and when you get alot in the bowl, skake it thru a stainer to get excess off.
- This is a very, very fast paced thing! We always cut it to make small pieces, and we bent in any sharp edges to make it easier for the kids. I have poured it into the cookie sheet and as it sets up, you scour it with a pizza cutter. When completely cooled you can break it apart. It all depends on whether I have help or not.

- Generously butter a 10x15 inch baking pan (with sides).
- In a medium saucepan over medium heat, combine brown sugar, butter, white sugar, water, vinegar and salt. Cover and bring to a boil. Remove lid and heat, without stirring, to 270 to 290 degrees F (132 to 143 degrees C), or until a small amount of syrup dropped into cold water forms hard but pliable threads. Pour in vanilla, but do not stir. Remove from heat and pour into prepared pan. Let cool slightly before cutting into squares and allowing candy to cool completely.
