BUTTERMILK CRUMPETS

Steps:
- Whisk Flour, Yeast & Sugar together.
- Combine Buttermilk, Butter, Salt & Honey.
- Fold the wet ingredients into the dry until just combined. (Don't over-mix! It will make your batter flat and dense.)
- Allow the batter to rise for at least an hour.
- Scoop roughly 1/4 Cup of batter into lightly oiled silicon cupcake tins or ring molds placed on an oiled baking pan or silicon baking sheet. (So many options, basically you want to choose something that will help the crumpets hold their shape, one recipe ever recommended using mason jar lids.)
- Bake at 300 degrees for 25-30 minutes, until batter is cooked thru and firm. The tops will be lightly browned.
- Cut in half, top with Butter and Honey, or Jam, or Syrup, or Nutella, or Chocolate Sauce, or.... anything at all that sounds delicious.
BUTTERMILK CRUMPETS
This is an American rendition of a British classic. Serve with your choice of savory or sweet toppings, like fruit spread and butter, double Devonshire cream, clotted cream, etc... I love using crumpets as a base for eggs Benedict. If you have an Instant Pot® you can use the yogurt setting and proof the dough much faster!

- In a microwave-safe bowl, heat buttermilk and 1/2 cup milk to about 100 degrees F (37 degrees C). Sprinkle yeast and sugar over milk mixture, stirring once. Let stand until yeast softens and begins to form a creamy foam, about 10 minutes.
- Combine flour and salt in a large bowl. Add yeast mixture and stir to combine, forming a soft dough. Cover and place in a warm place for 40 minutes or until doubled in size.
- Combine remaining 1/2 cup milk and baking soda in a small bowl. Stir mixture into dough until incorporated. Cover and leave for 30 minutes in a warm place.
- Heat a cast iron pan or griddle over low heat. Spray metal crumpet rings and place into middle of frying pan. Fill each ring with 1/2 cup of crumpet mixture. Cook for 4 or 5 minutes until bubbles appear and the edges are starting to set. Remove from ring and cook the top for 2 minutes or until lightly browned. Cool on a wire rack.

- In a small saucepan, heat the milk until lukewarm. Combine the milk, flour, water, butter, honey, yeast, baking powder and salt in the bowl of a stand mixer. Using the dough hook attachment, mix on high speed until completely blended and a soft dough has formed, 2 minutes. Remove the bowl, cover with a clean cloth or plastic wrap and put in a warm spot until risen and bubbly, about 1 hour.
- Lightly spray a cast-iron or nonstick skillet or griddle with nonstick spray and heat over medium heat, about 5 minutes. Spray the metal rings well with non-stick spray and place them in the pan or on the griddle. Fill each ring with a scant 1/4 cup of the batter.
- Cook until the crumpets are set and the bottoms are lightly golden brown, 3 to 5 minutes.
- Carefully remove the rings, flip the crumpets and cook until completely cooked through and the bottoms are lightly golden brown, 3 to 5 minutes longer. While they are cooking, wash and spray the rings with nonstick spray for the next batch.
- Butter the tops with the Whipped Butter and spread with the Orange-Blueberry Marmalade. Or split the crumpets and toast (like you would an English muffin), and spread with the Whipped Butter and Orange-Blueberry Marmalade.
- Combine the cream and salt in the bowl of a stand mixer. Using the whip attachment, whip on high speed until the cream is light and fluffy and turns to butter. Using a rubber spatula, scrape the butter into a bowl and chill for 15 minutes before serving.
- Using a vegetable peeler, remove the zest of the oranges and lemons. Cut the zest pieces into thin slices, then finely chop or grind and set aside.
- Peel the remaining white part of the peel from the fruit and discard. Chop the fruit pulp, reserving any juice and set aside.
- Place the zest and 1 1/2 cups water in a medium saucepan over high heat and bring to a boil. Reduce the heat, cover and simmer for 20 minutes, stirring occasionally. Add the reserved fruit pulp and juice, cover and simmer on low heat for an additional 7 minutes. Add the blueberries and simmer for 3 more minutes.
- Stir the sugar into the fruit in the saucepan. Bring the mixture to a full rolling boil and cook exactly 1 minute, stirring constantly. Stir in the pectin. Remove from the heat and skim off any foam with metal spoon.
- Serve at room temperature.

- Whisk 2 cups plus 2 tablespoons flour, yeast, sugar, and salt in a large mixing bowl. Combine water and milk in a separate bowl and quickly whisk the milk mixture into the dry ingredients until batter is thick and smooth. Cover with a towel and let rise in a warm place until spongy, about 1 hour. Stir dough to reduce sponginess.
- Place a rack into the oven and preheat to 150 degrees F (65 degrees C).
- Spray a skillet and round metal open-top cookie cutters or crumpet molds with cooking spray. Heat skillet over medium-low heat, place the metal cutters or molds into the skillet, and let the molds heat up. Spoon batter into the molds, filling them about halfway. Let the crumpets cook until the bottoms are browned, the tops appear nearly dry, and popped bubbles appear on top, about 5 minutes.
- Use tongs to lift molds out of the pan; remove molds from the crumpets. Flip and return crumpets to skillet to cook the other sides until browned, 1 to 2 more minutes. Repeat with remaining dough. Keep cooked crumpets warm on rack in the preheated oven while you cook remaining crumpets.

Steps:
- NOTE:- 1 tsp dry yeast can be used in place of the compressed yeast; sift it with the dry ingredients.
- Sift flour, baking powder, sugar and salt into a large bowl.
- Dissolve yeast in water, add to dry ingredients, beat until smooth.
- Crumpets can be cooked in a lightly greased frying pan or electric frypan; if using frypan, pre-heat to 260 F.
- Lightly grease some egg-rings, put them in pan to heat through.
- When hot three-quarters fill the rings with batter.
- Allow to cook over a low heat for approximately 10 minutes or until surface is covered with holes.
- Remove the rings.
- Cover the pan, and cook a further 2 - 3 minutes or until the surface is set. Remove from the pan, cool on a wire rack.
- When cold, toast and serve with butter.
- These may be frozen.

Meanwhile, combine all-purpose flour, spelt flour, and salt in the bowl of a stand mixer fitted with the whisk attachment; beat on low speed until combined, about 20 seconds
- Make a well in center of flour mixture; pour in buttermilk mixture. Beat on medium speed until batter is smooth and no lumps remain, about 2 minutes. Stir together 2/3 cup warm water and baking soda in a small bowl. Reduce mixer speed to medium-low; gradually beat in warm water mixture until batter is smooth and slightly thicker than buttermilk, about 30 seconds. If needed, add up to 2 additional tablespoons warm water, 1/2 tablespoons at a time, to thin batter to proper consistency. Cover bowl loosely with plastic wrap, and let stand at room temperature until surface is very bubbly and batter has doubled in volume, about 45 minutes.
- Heat a well-seasoned 12-inch cast-iron skillet over low. Brush skillet with 2 teaspoons oil; coat insides of 4 (3 1/8-inch) crumpet rings with cooking spray, and place in skillet. Let rings preheat until hot, 2 to 3 minutes. Carefully spoon about 1/3 cup batter into each ring, filling each ring halfway. Cook, undisturbed, until surface is covered in large holes and batter looks dry and slightly set around edges, about 8 minutes. Using tongs, carefully lift ring molds to remove. Using a small spatula, gently flip crumpets. Cook until bottoms are golden brown, 1 to 2 minutes.
- Transfer crumpets to a wire rack. Repeat process 2 times using remaining oil and batter, re-greasing and preheating rings between batches. Serve crumpets hot with desired toppings.
