CUT-OUT COOKIES

Cut-Out Cookies image

Provided by Nigella Lawson : Food Network

Categories     dessert

Time 1h42m

Yield 25 to 30 cookies

Number Of Ingredients 10

6 tablespoons soft unsalted butter
1/2 cup sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 to 3 tablespoons just-boiled water
1 cup confectioners' sugar, sifted
Food coloring, preferably pastes

Steps:

  • Preheat the oven to 350 degrees F.
  • Cream the butter and sugar together until pale and moving towards moussiness, then beat in the egg and vanilla. In another bowl, combine the flour, baking powder, and salt. Add the dry ingredients to the butter and eggs, and mix gently but surely. If you think the finished mixture is too sticky to be rolled out, add more flour, but do so sparingly as too much will make the dough tough. Form into a fat disk, wrap in plastic wrap, and let rest in the refrigerator for at least 1 hour.
  • Sprinkle a suitable surface with flour, place disk of dough on it, and sprinkle a little more flour on top of that. Then roll it out to a thickness of about 1/4-inch. Cut into shapes, dipping the cutter into flour as you go, and place the cookies a little apart on 2 parchment or silpat lined baking sheets.
  • Bake for 8 to 12 minutes; obviously it depends on the shape you're using and whether they are on the upper or lower shelf, though you can swap them around after about 5 minutes. When they're ready expect them to be tinged a pronounced gold around the edges; they'll be softish still in the middle, but set while they cool.
  • Remove the cookies with a flat, preferably flexible, spatula to a wire rack. When they are fully cooled, you can get on with the icing. Put a couple of tablespoons of not-quite-boiling water into a large bowl, add the sieved confectioners sugar and mix together, adding more water as you need to form a thick paste. Color,as desired. I think pastes are much better than liquid, not just because the range of colors is better but because they don't dilute the icing as they tint. Ice cooled cookies, as desired.

Yield 24

Number Of Ingredients 8

⅔ cup butter
1 cup white sugar
¼ cup milk
2 eggs
1 teaspoon vanilla extract
¼ teaspoon salt
1 teaspoon baking soda
4 cups all-purpose flour

Steps:

  • Cream butter and sugar. Beat in eggs.
  • Dissolve the baking soda in the milk, then add to mixture. Add the vanilla and mix well
  • Place salt in with flour and slowly stir into mixture. The dough should not be too sticky and should pull away from the sides of the bowl easily. If the dough is sticky, add a little more flour.
  • Form the dough into a roll about a foot long and 2-3 inches in diameter. Roll up in wax paper and put in the refrigerator for 1 hour.
  • Remove from refrigerator and let dough come to room temperature. Roll out dough a chunk at a time (one dough log makes about 4 chunks).
  • Preheat oven to 350 degrees F (180 degrees C).
  • Cut your cookies and decorate or bake plain for 8-10 minutes. Enjoy!

PERFECT CUT-OUT COOKIE DOUGH

Perfect Cut-Out Cookie Dough image

This recipe always comes out perfect. My toddlers and I make these often. I throw the dough together in the morning and let it sit in the fridge. I take it out at dinner time to let it warm just a bit, and we roll them out and ice them after for dessert. You use different flavors of extract and add spices. For fall, I use maple extract and add cinnamon and nutmeg. I use my mixer to prepare dough and it comes together super easy.

BROWNIE CUTOUT COOKIES

Brownie Cutout Cookies image

I found this recipe on the web. I've made them as is and have also added finely chopped nuts. They are wonderful! The recipe makes a lot of cookies, but I never figured out how many and it also depends on the size of your cookie cutters and how thick you make them, so the amount shown is very estimated.

Categories     Dessert

Time 25m

Yield 48 serving(s)

Number Of Ingredients 10

3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup butter or 1 cup margarine, softened
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla
2/3 cup cocoa powder
1/3 cup very finely chopped nuts (optional)
cocoa powder or flour, for rolling

Steps:

  • In a bowl, combine the flour, salt and baking powder, mix well and set aside.
  • In a large mixing bowl, cream the butter and sugar well. Add the eggs and vanilla and mix well.
  • Stir in the cocoa powder until well blended. Be careful because the cocoa powder has a tendency to puff all over until it's incorpoated.
  • Add in the flour mixture until well-blended.n Stir in nuts, if using.
  • Wrap the dough in plastic and refrigerate at last one hour, or until firm. You may want to separate it into two sections and wrap separately to keep one refrigerated while you work on the other.
  • Preheat oven to 350. Cover cookie sheets with parchment paper or spray with non-stick spray.
  • Roll out the cookies and cut into your desired shapes and thickness, using cocoa powder or flour to dust the work surface (and rollling pin if needed) to keep the dough from sticking.
  • Place the cookies onto the prepared cookie sheets and bake for about 8-10 minutes depending on the size and thickness of the cookies. They should feel slightly firm to the touch.
  • Let the cookies sit a minute on the sheet to firm up, then place on a rack to cool.
  • NOTE: I like to roll out the cookies on a piece of waxed paper. Before removing the cookies from the work surface to the cookie sheets, I will put the whole sheet of waxed paper on a cookie sheet and put it in the freezer for 5 minutes. I can then remove the cookies without them breaking or stretching.

KITTENCAL'S BUTTERY CUT-OUT SUGAR COOKIES W/ ICING THAT HARDENS

Kittencal's Buttery Cut-Out Sugar Cookies W/ Icing That Hardens image

You will not find a better sugar cookie anywhere you search, this will most likely be the only sugar cookie you will use, not only are these cookies buttery delicious, the dough is an absolute dream to work with, it rolls out easily and is easy to handle, also the cookies hold their shape when baked something many sugar cookies do not do --- make as many different colors as desired in separate bowls with the icing, the cookies must be completely cooled before icing --- plan ahead the dough must be chilled for at least 2 hours before rolling -- since these are topped with icing they are not a sweet cookie if you want a sweeter taste then increase the sugar amount

Provided by Kittencalrecipezazz

Categories     Dessert

Time 2h4m

Yield 35-40 serving(s)

Number Of Ingredients 14

1 cup butter, softened (no substitutes)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sifted confectioners' sugar (the sugar must be sifted)
1 tablespoon milk (adding in more if needed for proper spreading consistency)
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
food coloring (use your choice of colours)

Steps:

  • For cookies; in a large bowl combine butter with sugar, eggs, vanilla and almond extract; beat using an electric mixer on high speed until light and fluffy.
  • In another bowl combine the flour with baking powder, baking soda and salt; gradually stir into the butter mixture until well blended.
  • Cover bowl with plastic wrap and chill for 2 hours.
  • Set oven to 400°F.
  • Line cookie sheets with parchment paper (do not grease cookie sheets use parchment paper only).
  • On a very lightly floured surface roll out the dough into about 1/4-inch thickness.
  • Cut into desired shapes using cookie cutters.
  • Place cookies 2-inches apart on cookie sheet.
  • Bake 4-6 minutes.
  • Remove cookies to wire racks to cool completely before icing.
  • For the frosting; in a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency).
  • Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup).
  • Divide into as many separate bowls as you wish for different colours.
  • Add in food colouring until desired intensity is achieved.
  • Paint the icing over the cookies using a brush, or dip edges of cookies into icing.
  • Allow to set on waxed paper.
