- Heat oven to 375°F.
- Toss potatoes with dressing in microwaveable bowl. Microwave on HIGH 7 min., stirring after 4 min.
- Spread chops with mustard. Mix coating mix and rosemary in shallow dish. Add chops, 1 at a time, turning to evenly coat both sides of chop. Place in center of foil-lined 15x10x1-inch pan sprayed with cooking spray; surround with potatoes.
- Bake 25 to 30 min. or until chops are done (145°F) and potatoes are tender. Remove from oven. Let stand 3 min. before serving with the carrots.

ROSEMARY DIJON PORK LOIN
Steps:
- Preheat oven to 350 degrees F.
- Trim any excess fat from the pork loin, leaving a thin-layer of fat over the top.
- Evenly rub the entire pork loin with the Dijon mustard followed by the onion, salt, pepper, and garlic. Make sure to really rub in the spices, and then sprinkle the
- rosemary evenly all over the top.
- Place the pork in roasting pan lined with a rack and roast for 20 minutes.
- Reduce the temperature to 300 degrees F, and continue roasting until a meat thermometer inserted in the thickest part reads 145 degrees F, about 1 hour more. Transfer the pork to a cutting board, cover loosely with foil, and let rest for 10 minutes. Slice and pork and arrange on a platter garnished with rosemary sprigs.
MUSTARD & ROSEMARY PORK CHOPS

- Mix together the mustard, oil, garlic, rosemary leaves, vinegar and a little black pepper. Tip into a large food bag then add the pork chops. Rub together, seal and marinate for 3 hrs.
- Drain the chops of their marinade. This can then be squeezed out of the bag and mixed with a little cold water until runny. To cook on a griddle, heat the griddle pan until a good heat rises and cook for 10 mins, turning once or twice. As they cook, brush occasionally with the marinade juices. Remove from the heat and season with salt. To help the meat relax a little, leave it loosely covered with foil for about 10 mins before serving.

DIJON-ROSEMARY CRUSTED PORK CHOPS
Steps:
- Mix: mayo, oil, vinegar, hot sauce, peppercorn, salt, cloves, ground pepper, and bay leves in a bowl.
- Preheat oven to 350 degrees. Place pork chops in a deep baking pan. Pour the mayo mixture over the pork chops. Slice onion and place one to two slices on top of each pork chop (just to cover the surface of the pork chop). Place it in the oven for 20-25 minutes.
- Meanwhile mix Dijon mustard with rosemary leaves, set it aside. When pork chops are done(be sure to check), pull the pork chops out of the oven and spread the Dijon-rosemary mixture on top of each pork chop and sprinkle with bread crumbs. Place the pork chops back in the oven. Switch the oven to broil (low level) and broil until golden brown. Serve hot.

- Mix all of the marinade ingredients together and pour over the pork chops in a glass dish or Ziploc bag. Turn the chops occasionally in the marinade.
- Marinate for 20-30 minutes, covered at room temperature. You don't want cold chops to hit a hot grill or they are more likely to dry out.
