SAUSAGE POTATO SOUP

This Creamy Sausage Potato Soup is made with hot or sweet Italian sausage with potatoes and vegetables. it's an easy soup recipe for the stove top or the Crock Pot!

1 teaspoon dried basil
½ teaspoon dried parsley
½ teaspoon dried oregano
½ teaspoon mustard powder
¼ teaspoon pepper
1 lb. ground Italian sausage (hot or mild)
2 tablespoons butter
1 yellow onion (diced)
½ cup diced carrots
2 ribs celery (diced)
3 cloves garlic (minced)
3 tablespoons flour
1 teaspoon soy Sauce
1 teaspoon hot sauce
5 cups chicken broth
1 cup heavy cream
1 ¼ lbs. red potatoes (about 6 small potatoes)
2 cups shredded cheddar cheese (optional)
Red pepper flakes
Fresh Parsley

Steps:

  • Cook the Sausage: Remove the casings from the sausage if you purchased links. Preheat a large pot over medium heat. Add the sausage and cook and crumble to break it apart. Once cooked halfway through, cover partially and continue to heat, stirring occasionally, until cooked through. It'll take around 10-12 minutes total. Set the sausage aside and reserve 1 tablespoon drippings. (Butter can be used if you don't have drippings.)
  • Add the drippings to the pot along with 2 tablespoons butter over medium heat. Add the diced onions, celery, and carrots and cook for 4 minutes. Add the garlic and cook for 1 minute.
  • Add the flour and cook for 2 minutes. Add the chicken broth in splashes, and use a silicone spatula to "clean" the bottom of the pot to add more flavor the soup. Slowly stir in the heavy cream, hot sauce, soy sauce, and seasonings.
  • Bring to a boil, then reduce to a simmer. Clean the potatoes and pat them dry. Cut into 1-inch cubes and add them to the soup. Simmer uncovered for about 40 minutes, or until potatoes are fork tender. Add the sausage back and stir to combine.
  • Reduce heat to low and stir in the cheddar cheese (if desired).
  • Garnish with red pepper flakes and parsley. Serve!

2 lbs boneless skinless chicken breasts, cut into 1/2-inch cubes
8 -10 medium potatoes, cut into 1/2-inch cubes (I leave the skin on)
1/3 cup olive oil
1 1/2 teaspoons salt
1 tablespoon fresh ground pepper
1 tablespoon paprika
2 tablespoons garlic powder
6 tablespoons hot sauce
2 cups fiesta Mexican blend cheese or 2 cups monterey jack and cheddar cheese blend
1 cup crumbled cooked bacon
1 cup diced green onion

Steps:

  • Preheat oven to 500F (This is NOT a typo, 500F is correct!) .
  • In a large bowl mix together the olive oil, hot sauce, salt, pepper, garlic powder & paprika.
  • Add the potatoes and stir to coat.
  • Add the potatoes to a greased baking dish.
  • When scooping the potatoes into the baking dish, leave behind any extra olive oil/hot sauce mix.
  • Add the diced chicken to the "left behind" olive oil/hot sauce mix and stir to coat all the chicken. Allow to marinate as the potatoes bake.
  • Roast the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and nice and crispy on the outside.
  • Once the potatoes are fully cooked add the marinated chicken.
  • Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400°F.
  • In a large bowl mix all the topping ingredients together.
  • Top the raw chicken with the topping.
  • Bake 15 minutes or until until the chicken is cooked through and the topping is melted and bubbly delicious.
  • Serve with extra hot sauce and/or ranch dressing.

4 russet potatoes
2 tablespoons olive oil
1 ½ cups shredded cheddar cheese
½ cup shredded mozzarella cheese
6 oz cream cheese, softened
2 cups shredded chicken
1 packet ranch seasoning
½ cup hot sauce
chive, for garnish

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Thoroughly wash the potatoes and dry them completely. Pierce the potatoes with a fork.
  • Add the potatoes to a baking sheet and bake for 60-70 minutes, until soft.
  • Remove from oven and allow the potatoes to cool for at least 10 minutes.
  • Cut the potatoes in half, and carefully scoop out the inside of the potatoes leaving a thin border of potato on the sides.
  • Brush the insides of the potato skins with the olive oil. Place the skins on the baking sheet, and bake for another 10 minutes.
  • Remove the skins from the oven, flip them over, and return to the oven for 5 minutes.
  • While the potatoes are baking, add the cheddar cheese, mozzarella, cream cheese, shredded chicken, ranch seasoning and hot sauce in a bowl, and gently mix them together.
  • Fill each potato skin with the mixture, and then top each potato with reserved sharp cheddar cheese.
  • Bake the potato skins for about 15 minutes, or until cheese is browned and crispy.
  • Remove from oven and garnish with your favorite white dressing and chives (optional).

3 medium russet potatoes, cut in 3/4 inch pieces, skin left on
1 tablespoon olive oil
6 slices bacon, cut in 1/2 inch pieces

1/2 cup red bell pepper, chopped
4 garlic cloves, minced
4 cups chicken stock
3/4 cup heavy cream

Steps:

  • Preheat oven to 375 degrees. Coat a 13 X 9 pan with non-stick spray. Place the potato pieces in the pan. Drizzle with the olive oil and toss to coat.Bake 30 minutes or until the potatoes are browned and tender.

2 1/4 cups chicken stock
2 tablespoons olive oil
1/2 cup onion, chopped

chicken sausage, 4-pack buffalo flavored and cut in 1/2 inch slices (we use precooked Al Fresco)
1/4 cup ranch dressing (we use Hidden Valley light)
10 ounces cream of celery soup

1 -2 dash hot sauce (we use Frank's)

Steps:

  • FOR THE RICE:.
  • Bring 1 cup rice and 2 1/4 cups chicken stock to boil in medium saucepan.

  • FOR ONION/GARLIC MIXTURE:.
  • Saute onion in olive oil for 3-4 minutes on medium heat.

I like potato skins so I figured, why not make a potato soup that incorporates the yummy skins!! This is what I came up with during a cold and lazy Sunday afternoon. It stores well. I have not frozen it (I imagine it would work for OAMC), but I did refrigerate the leftovers and reheated it twice for lunch and it turned out great! It's also low-fat if you eliminate the bacon :)

6 -7 large red potatoes, unpeeled and cubed
1/4 cup sweet onion, chopped
1/4 cup carrot, sliced
1 (10 1/2 ounce) can cream of celery soup
1 cup low-fat chicken broth
1 cup reduced-fat milk
2 tablespoons garlic powder or 2 teaspoons garlic, minced
1/4 cup reduced-fat cheddar cheese, shredded
bacon bits (optional)
2 green onions, chopped (optional)

Steps:

  • Bring about 6 cups of water to boil in a large pot.
  • Put potatoes into boiling water and cover for about 12-15 minutes.
  • Add onions and carrots (and garlic if using fresh) to water, turn down heat to medium and let cook for 6 minutes.
  • Drain water and return vegetables to pot.
  • Mash about half of the potatoes, I like mine chunky but if you want it smoother mash about 3/4.
  • Add in cream of celery, chicken broth, milk (and garlic powder, if using).

  • Serve into bowls.
  • Sprinkle with cheddar cheese, scallions and low fat bacon bits (my fiance uses fresh bacon and it does really add to the soup but also the calories lol!).

6 tablespoons hot pepper sauce
⅓ cup olive oil
2 tablespoons garlic powder

Steps:

  • Preheat oven to 475°F.
  • Cut potatoes in half lengthwise, scoop out flesh (discard or save for another use) leave a ¼ inch shell.
  • Place on a greased or lined baking sheet.
  • Mix together the oil, salt, pepper and paprika and brush all over the skins.
  • Bake in the oven for 7-8 minutes skin side up.
  • Turn over and bake again for 7-8 minutes.
  • In the meantime mix together: cheddar cheese, red pepper, and chives.
  • Mix together in another bowl the garlic, mustard, hot sauce, sour cream and the egg, and then combine with the mix above.
  • Divide this mixture into the skins, sprinkle with bacon, return to the oven and bake for about 4-5 minutes.
  • Very nice served with more sour cream and green onions.

  • SAUSAGE: Line a large plate with paper towels and set aside. Heat a very large pot (I recommend cast iron), over medium-high heat. Once hot, add in the sausage. Let stand without touching for 30 seconds to a minute. Then stir and chop the meat until you have sausage crumbles. Transfer to prepared plate and drain off any grease except for 1 tablespoon. If there is no grease, add 1 tablespoon olive oil to the pot.
  • VEGGIES: In the same pot with 1 tablespoon sausage grease or olive oil, melt 1 tablespoon of the butter. Add the diced carrots, celery and onion and sauté 5-7 minutes or until tender (if not diced small, you may need 7-10 minutes). Add garlic and sauté 30 seconds more.
  • POTATOES AND SEASONING: Stir in the chopped potatoes, dried basil, dried parsley, salt and pepper to taste (I add 1 teaspoon fine sea salt and 1/2 teaspoon freshly cracked pepper, but add to preference and don't forget to taste and adjust at the end!). Stir. Add in chicken stock or broth. Bring to a boil over medium-high heat, then reduce heat to medium, cover with lid and cook 15-20 minutes or until the potatoes are fork tender (easily pierced with a fork).
  • CREAM SAUCE: Meanwhile, melt remaining 4 tablespoons butter in a medium saucepan over medium heat. Stir in flour and cook, whisking constantly, for 1 minute. While whisking vigorously, slowly pour in milk (whisk well until smooth). Cook, stirring constantly, until mixture begins to gently boil and thicken; stir in the heavy cream.
