- Set a pizza stone on an oven rack and preheat the oven to 425 degrees F. Roll out and stretch the dough on parchment paper or a pizza peel to a 12-inch circle; set aside.
- Melt the butter in a medium saucepan over medium-low heat and whisk in the hot sauce. Pour half the mixture into a medium bowl, add the chicken and stir to coat fully. Pour any excess sauce back into the saucepan.
- Ladle a few tablespoons of the remaining hot sauce mixture on the dough and spread in a thin even layer. Scatter with the chicken and mozzarella. Sprinkle the blue cheese on top.
- Transfer the pizza to the preheated pizza stone and cook until crisp, 12 to 15 minutes. Garnish with the scallions, and drizzle the remaining sauce over the top.
WINGLESS BUFFALO CHICKEN PIZZA

- Preheat oven to 425 degrees F. Preheat grill pan to high.
- Place chicken on a plate and drizzle extra-virgin olive oil over the chicken then season with grill seasoning. When grill is hot, add chicken and cook about 3 minutes on each side.
- Stretch dough to form pizza using cornmeal or flour to help you handle it. If you let it rest and warm up a few minutes it will handle even easier. Set pizza on pizza pan to the side and clean board.
- In a medium skillet over medium heat, melt butter and stir in Worcestershire, hot sauce, and tomato sauce.
- Remove the chicken from grill and thinly slice it. Add chicken to sauce and coat. Cover the pizza dough with the saucy Buffalo chicken, cheeses, and scallions. Bake 18 minutes or until crisp.
BUFFALO CHICKEN PIZZA
Steps:
- Set up grill for direct cooking over medium heat, and oil grill grate when ready to start cooking.
- Place chicken strips in large bowl with 1 cup buffalo wing sauce and toss to coat chicken.
- Grill the chicken strips about 3 to 4 minutes per side
- While chicken is grilling carefully remove pizza dough from can. Unroll dough onto a flat surface. Spray both sides of the dough with nonstick cooking spray. Place the dough on the grill and let cook for 2 to 3 minutes per side. Carefully watch the crust, it can burn quickly.
- Spread the blue cheese dressing over pizza leaving a 1-inch border. Next, top with mozzarella cheese, red onion, celery, and chicken strips, and drizzle with 2 tablespoons of buffalo wing sauce.
- Cover with grill lid and cook 8 to 10 minutes until cheese is melted and bubbly. Serve hot.
- Indoors: Preheat oven to 425 degrees F. Lightly spray baking sheet with cooking spray and set aside. Carefully unroll dough and place on prepared baking sheet. Press out dough with clean hands to form 13 by 9-inch rectangle. Place baking sheet in preheated oven. Bake for 7 minutes or until crust just begins to brown. Remove crust from oven and top as directed. Return to oven for 8 to 10 minutes or until golden brown and cheese is melted.
GRILLED BUFFALO CHICKEN CUTLETS

- Preheat your grill to medium-high heat.
- Pound each chicken breast out to 1/4-inch thickness between 2 pieces of parchment paper. Season with salt and pepper.
- Using a clean tea towel, oil the grill grates.
- Grill the chicken on each side until golden and cooked through, for 3 to 4 minutes, until golden and cooked through.
- While the chicken is grilling, add the hot sauce, butter, paprika, apple cider vinegar, and garlic to a medium saucepan. Place the pan on the grill grates and stir to melt all together. Dip the chicken into the saucepan to coat and then grill for another minute on each side. Remove the chicken from the grill and place on a platter. Top each cutlet with some Bblue Ccheese Sslaw.
- Using a large-holed grater attachment for a food processor, grate the cabbage, shallot, and carrot. Add to a large serving bowl.
- Mix together the blue cheese, buttermilk, sour cream, mayonnaise, apple cider vinegar, celery seed, salt, and pepper together in a small small bowl. Fold into the grated veggies and season with salt and pepper, to taste. Cover with plastic wrap and let sit in the fridge for at least 1 hour to absorb flavors. Can be made a 1 day in advance.

- Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 400ºF.
- Mix oil and 1 Tbsp. wing sauce. Drizzle over chicken in shallow dish; turn to evenly coat both sides of breasts. Refrigerate 5 min.
- Place chicken over lit area of grill; cook 6 to 8 min. on each side or until done (165ºF). Cool slightly; cut into bite-size pieces.
- Spread pizza crust with remaining wing sauce; top with chicken and cheeses.
- Place pizza on grill over unlit area; cover. Grill 12 to 15 min. or until cheeses are melted and crust is golden brown, monitoring for consistent grill temperature.

- Combine all the pizza ingredients in the bread machine in order they are listed in. When adding the yeast make a little shallow well for it in the middle of the flour. If you bread machine doesn't bring the ingredients to correct cooking temperature you should heat the beer up a bit. I like mine between 110 and 120, typically as close to 120 as possible. Turn the machine on the dough setting (not the pizza setting, it's too short, I always choose dough over pizza setting), and hit start. It should take about 90 minutes to get great dough. Remove from the machine, and spray the dough with non-stick spray or a little olive oil. Divide dough in half and wrap one up for another pizza later (I slather mine in olive oil and place in a glass container, cover the top with parchment, then place the lid on), then use the other one for this pizza. Place it in a glass bowl, lay a piece of parchment over top then cover with foil tightly. Place in a warm area in your kitchen for about an hour or so.
- Make sure grill is still at a medium heat. At this point you can decide if you want to use a pizza stone or if you'll just use the pizza pan. I used the pizza pan because my daughter is not a huge fan of the stone pizzas. So weird, I can't explain that one.

- Marinating the chicken: Place the chicken into the bag with marinade and place in the fridge for overnight, or for at least 6 hours.
- Preparing the pizza dough: Remove pizza dough from the fridge a few hours before cooking. Pizza dough should be at room temperature. Dust your cutting board or pizza peel with flour & semolina. Cut the dough in a half and place one of the halves on your board. Cover the other half with plastic wrap to avoid drying out. Roll or stretch the pizza so it is approx. 12 inches round or square. Cover with plastic wrap.
- Prepare pizza toppings: Place sauce, all 3 cheese and cut up celery into a little bowls, so you have everything ready when your pizza crust is cooked.
- Grilling the chicken: Heat up your grill to high and spray with cooking spray. Remove the chicken from the marinade and cook on each side for about 5 minutes, until the internal temperature shows 165F. Remove the chicken from the grill and cover with aluminum foil. Using a grill brush, clean up your grill to prepare for pizza.
