Steps:
- In a large frying pan with a lid, heat the oil over medium heat until it shimmers and slides across the pan. Add the onions and cook until translucent, about 5 minutes.
- Slice the chicken breasts thinly and add to the pan with the onions. Add the garlic, 1/2 cup of the hot sauce and 1 cup water. Bring to a simmer, then cover the pan and reduce the heat to low. Cook until the chicken is falling apart and the sauce has reduced to almost dry, 45 minutes to 1 hour.
- Combine the sour cream, mayonnaise, Cheddar and 1/4 cup of the blue cheese crumbles in a bowl and stir until well combined. Transfer the dip to a serving bowl. Stir in the remaining 2 tablespoons hot sauce, and top with the green onions and the remaining 1/4 cup blue cheese crumbles.
- Serve immediately, with the chicken, celery, carrots, chips and other crudites.

Steps:
- Place the chicken in a shallow bowl. Cover with the buttermilk, turning to coat. Combine the ranch dressing and blue cheese in a small bowl and refrigerate. On a large plate, stir together the flour and 1/2 teaspoon each salt and pepper. Pour the Buffalo sauce into a shallow bowl. Line a large plate with a few layers of paper towels.
- Add enough vegetable oil to a large skillet to come halfway up the sides. Heat over medium-high heat until a deep-fry thermometer registers 350˚ F. Working in batches, remove the chicken from the buttermilk, letting the excess drip off, then coat in the flour mixture and shake off any excess. Carefully add the chicken to the hot oil and fry until dark golden brown and cooked through, 4 to 5 minutes per side. Transfer the chicken to the paper towel-lined plate to drain.
- As soon as the chicken is cool enough to handle, dip in the Buffalo sauce, coating it entirely. Place each chicken cutlet on a bun bottom and top with coleslaw and cucumber. Spread the bun tops with the blue cheese mixture and close the sandwiches. Serve with potato chips.

Panko is the key to these delicious baked chicken sandwiches. Try ranch dressing in place of the blue cheese and mayonnaise if you like.

In a shallow dish, whisk together mayonnaise and hot sauce. Season chicken with salt and pepper, then dredge in flour, tapping off excess. Dip in mayonnaise mixture; coat with panko, patting to adhere. Transfer to another rimmed baking sheet.
- Roast chicken, flipping once, until cooked through, about 12 minutes. Let cool slightly. Slice cutlets in half crosswise and place, stacked, on bottom buns. Add cheese, celery, lettuce, mayonnaise, and hot sauce; sandwich with top buns. Serve, with chips.

BUFFALO CHICKEN SANDWICHES
I found this recipe online and made a few changes to suit what I had available. If you have leftover grilled chicken, use it instead of the pre-cooked chicken strips. I like to use homemade blue cheese dressing. These are very sloppy sandwiches so be sure to have lots of napkins or a wet washcloth handy! Enjoy!

BUFFALO CHICKEN FRENCH DIP SANDWICH
I found this is a magazine years ago and I wish I could remember where. It is very simple and I admit to changing very little. Even though I have another Buffalo Wing Sauce sandwich on Zaar, I thought I would share this recipe. Make to make your own blue cheese and use good onions rolls which to me make the dish.

- 1. In a 14-inch skillet, heat the olive oil over high heat and add all of the sliced onions. Do not stir or shake the pan after the onions are added, instead allow for the heat of the pan to recover, because the onions have cooled the pan down. Listen for a sizzling noise to return.
- 2. Once you hear a sizzle, season the onions with salt and begin to stir. You should see that the onions on the bottom, which hit the pan first, should have already started to brown.
- 3. Turn the heat down to medium and keep cooking, stirring occasionally. The onions will begin to soften and release their juices. This is exactly what you want to happen so that you can caramelize the onion's natural sugars.

- In a large skillet over medium heat add olive oil and butter. Add thinly sliced onions, a pinch of salt and pepper, and cook for about 12-15 minutes until the onions become very soft and a little caramelized. Add 3 large chicken breasts to a slow cooker, followed by the cooked onions, minced garlic, chicken broth, and kosher salt & black pepper. In a small bowl whisk together flour and Worcestershire sauce. Whisk the mixture into the broth on top of the chicken. Cook on low for 7-8 hours. Remove the chicken, place onto a cutting board, and cut into pieces or lightly shred.
- To assemble the sandwiches: Preheat oven to 415 degrees. On a sheet pan lay bottom of the roll down, top each roll with about 4 ounces of chicken, 1/4 cup of the au jus from the slow cooker, two tbsp of mozzarella, and then the top of the bun. (Note: These totally work as open faced sandwiches for those who want to cut back on carbs or calories) Place sheet pan into oven and bake for about 10 minutes or until the bread is crispy and the cheese is nicely melted. Serve with 1/2 cup of au jus for dipping! Enjoy!
