A wonderful blend of spices and a sweet, rich frosting make this Spice Cake with Brown Butter Frosting absolutely irresistible!

1/2 cup (113g) unsalted butter
2 & 1/2 cups (275g) confectioners' sugar, sifted
1/2 teaspoon vanilla extract
2 to 3 tablespoons milk
3 cups (360g) all-purpose flour
2 teaspoons baking powder
1 & 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
3/4 cup (150g) firmly packed light brown sugar
4 large eggs
1 & 1/2 teaspoons vanilla extract
1 cup (240ml) milk

Steps:

  • Preheat oven to 350°F. Grease a 9"x 13"x 2" baking pan.
  • Whisk together the flour, baking powder, cinnamon, salt, ginger, allspice, cardamom, and nutmeg. Set aside.
  • Using an electric mixer on medium speed, beat the butter, sugar, and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla.
  • Reduce mixer speed to low. Add the flour mixture in three portions, alternating with two portions of the milk. Mix just until combined.
  • Transfer the batter to the prepared pan and spread evenly. Bake 35 to 40 minutes or until a pick inserted into the center comes out clean.
  • Cool the cake completely in the pan on a wire rack.
  • Place the butter in a medium saucepan or skillet. Cook over medium heat until the butter melts and begins to foam.
  • Continue cooking until brown specks begin to form at the bottom of the pan and the butter has a nutty aroma.
  • Transfer the butter (including the browned bits) to a large mixing bowl. Allow the butter to cool for about an hour. (It will become somewhat solidified.)
  • Using an electric mixer on medium speed, beat the butter for about a minute. Gradually add the confectioners' sugar, mixing until thoroughly combined.
  • Add the vanilla and 2 tablespoons of milk. Mix until thoroughly combined and smooth. If necessary, add more milk, a small amount at a time, and continue mixing until the frosting is the desired consistency.
  • Spread the frosting over the cooled cake.

2 sticks unsalted butter, plus 1 tablespoon (or nonstick cooking spray) for greasing the pans
3 3/4 cups all-purpose flour, plus more for flouring the pans
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon baking soda
1 1/2 teaspoons kosher salt
1 packed cup light brown sugar
1 cup granulated sugar
3 large eggs, at room temperature
1/2 cup sour cream
2 teaspoons vanilla extract
1 1/2 cups whole milk
2 cups of your favorite vanilla frosting
3/4 cup dulce de leche
1/2 teaspoon flaky sea salt
Spiced Chocolate Ganache, recipe follows
1/2 cup chopped bittersweet chocolate
1/2 cup heavy cream
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon chili powder

Steps:

  • For the cake: Melt the butter in a large shallow saucepan over medium-low heat. Cook, stirring occasionally, until the butter starts to brown and smell nutty, 10 to 12 minutes. Scrape the butter and all the browned bits into a heatproof bowl. Place the bowl over an ice bath to solidify and set aside.
  • Preheat the oven to 350 degrees F. Grease three 8-inch cake pans with the 1 tablespoon butter (or spray with nonstick cooking spray) and then lightly dust with flour.
  • Whisk together the 3 3/4 cups flour, baking powder, cinnamon, nutmeg, baking soda and salt in a medium bowl until well combined, then set the flour mixture aside.
  • When the brown butter has solidified, scrape it into the bowl of a stand mixer fitted with the paddle attachment. Add the brown sugar and granulated sugar and beat on high speed until very light and fluffy, about 3 minutes. Scrape down the bowl and reduce the speed to medium, then add the eggs one at a time, beating after each addition and scraping the bottom of the bowl to be sure everything is well mixed.
  • Add the sour cream and vanilla and beat just until well mixed, scraping down the bowl again. Add the flour mixture in three parts, alternating with the milk, beating just until incorporated. Remove the bowl from the mixer and give the batter a couple of folds with a spatula, scraping the bottom to ensure everything is evenly mixed.
  • Divide the batter among the three prepared cake pans and bake until golden brown and a toothpick inserted in the center comes out mostly clean with some moist crumbs sticking to it, about 25 minutes. Place the pans on a wire rack until cool enough to handle, then invert them onto the rack and unmold the cakes. Carefully turn the cakes right-side up and let cool completely on the rack.
  • For the assembly: Look at your cake layers. If any of them have a dome in the center, cut it off with a serrated knife so the entire top is flat. Place one cake layer on a cake plate or cardboard cake round. Spread vanilla frosting around the outside of one layer and then frost a 1-inch band around the top. Evenly spread half the dulce de leche in the center of the layer until you reach the 1-inch band and then sprinkle with half the sea salt. Add another cake layer and repeat with the frosting and remaining dulce de leche and sea salt. Add the last cake layer and frost the entire cake with a smooth and even layer of frosting. Refrigerate for about 30 minutes until the frosting is set and cold.
  • Remove the cake from the refrigerator and place it on a serving plate or cake stand. Using a spoon, create drips with ganache around the outside of the cake from the top edge. Pour the remaining ganache in the center of the cake and spread it with an offset spatula to cover the top. Let the ganache set completely before serving.
  • Place the chocolate in a heatproof bowl. Stir together the cream, cinnamon, vanilla and chili powder in a small saucepan. Heat over medium heat until it just begins to bubble around the edges, then pour it over the chocolate and let sit for about 10 seconds. Stir until smooth and shiny. Let the ganache sit until it has cooled and thickened slightly, about 5 minutes.

5 large eggs, separated
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder

1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
Pinch of salt
1 cup buttermilk

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease and flour 2 (9-inch) cake pans. In a large mixing bowl with an electric mixer, cream the brown sugar and butter. With the mixer running, add the oil in a steady stream. Add the egg yolks, one at a time, beating well after each addition. Sift the flour, baking soda, baking powder, spices and salt into a medium-size mixing bowl. Alternately add the flour mixture and the buttermilk to the batter, mixing well. With the electric mixer, in another large mixing bowl, beat the egg whites until stiff peaks form, then fold them into the cake batter. Pour the batter evenly into the prepared pans. Bake until the center springs back when touched, about 25 minutes. Remove from the oven and cool on wire racks. After the cakes have cooled, invert them onto sheets of parchment paper. Slice each cake in half and set aside.

This is a cardamom-kissed, brown sugar crusted, squash spice cake that comes from the wonderful blog, 101 Recipes. Making use of winter squash and some warming and assertive spices, this "cake" is definitely not a super sweet cake, more reminiscent of grandma's zucchini loaf... only more fragrant. As with anything from this blog, you'll enjoy, I'm sure.

1/2 cup unsalted butter, plus more for the pan
1 tablespoon almond oil or 1 tablespoon butter, melted
1 1/2 cups whole wheat pastry flour (plus more for the pan)
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1 teaspoon garam masala
1/2 teaspoon sea salt, fine grain
1 cup muscovado sugar or 1 cup sugar, organic
2 large eggs
1/2 cup winter squash, roasted and pureed (such as pumpkin, butternut, acorn)
1/4 cup soymilk or 1/4 cup rice milk
1/3 cup almonds, lightly toasted sliced & lightly toasted
1 1/2 tablespoons muscovado sugar or 1 1/2 tablespoons sugar, organic

Steps:

  • Melt the butter in a small pot over medium heat until it's brown and gives off a deliciously nutty aroma. This can take anywhere from 10 to 20 minutes. You want the butter solids nicely toasted, but not scorched. Stir in the toasted hazelnut oil. Set aside and allow to cool but not set. By doing the butter first you can complete the rest of the steps while it is cooling.
  • Preheat oven to 350F / 180C with a rack in the top 1/3. Butter and flour a 1-lb loaf pan, or roughly 9x5x3-inch.
  • Sift the flour, baking soda, cinnamon, garam masala, and sea salt into a large bowl. Set aside. In a smaller bowl whisk the sugar, eggs, squash, and milk. Whisk in the still melted butter, but make sure it isn't hot to the touch. Add the wet ingredients to the flour mixture, and stir until just combined. Fold in most of the almonds.
  • Pour the batter into the prepared pan, sprinkle with 1 1/2 tablespoons of sugar and remaining almonds, and bake for about 50-60 minutes, or until the edges have browned and the center of the cake is well set. Do your best to avoid over-baking, part of the charm of this cake is its moistness, when it is baked properly. Use a cake tester if necessary.
  • *To make pureed winter squash: Roast large wedges or small cubes of skinned and seeded pumpkin, butternut squash, red kuri squash, etc. in a 375F / 190C until cooked and tender throughout. Puree with a hand blender until smooth.

Pumpkin Spice Cake With Browned Butter Frosting image

You must try this cake. I can't think of enough words to describe how good it is. Keep your eye on the butter for the frosting. You want it to be a nice nutty light brown - don't let it get too dark or it may taste a little burnt. This frosting will set up quickly and can be difficult to spread if you skimp on the milk, so add a little more than you think you will need.

1/4 cup butter
2 large eggs
2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon baking soda

1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup shortening
1 1/2 cups sugar
1/2 teaspoon vanilla
3/4 cup buttermilk
3/4 cup canned pumpkin
1 1/4 cups pecans, toasted and chopped (optional)
3/4 cup butter
6 cups powdered sugar
2 teaspoons vanilla
3 tablespoons milk, more as needed

Steps:

  • Allow butter and eggs to stand at room temperature for 30 minutes.
  • Meanwhile, grease and flour two 8" cake pans.
  • In a bowl, stir together flour, baking powder, cinnamon, baking soda, ginger, salt, nutmeg and cloves until mixed. Set aside.
  • In a large mixing bowl with an electric mixer beat softened butter and shortening on high speed for 30 seconds. Add sugar and vanilla and continue mixing. Add eggs, one at a time, beating well after each addition.
  • In a small bowl, stir together buttermilk and pumpkin. Alternately add flour mixture and pumpkin mixture to butter and sugar mixture, ending with flour mixture. Beat on low speed just until combined. Pour into prepared pans. Batter will be thick. Use a spatula to spread evenly in pans or cakes will be lumpy.
  • Bake in a preheated 350°F oven for 30 to 35 minutes or until cake tests done. Cool in pans for 10 minutes then turn out onto wire rack to cool completely.
  • For Frosting:.
  • Melt butter in a small saucepan over medium heat. Reduce heat to medium low and continue cooking at a simmer until butter turns the color of light brown sugar. This will take a few minutes. Remove from heat and let stand at room temperature for 15 minutes.
  • Meanwhile, in a large mixing bowl combine powdered sugar with milk and vanilla. Add browned butter and beat with an electric mixer on low speed until combined. Beat on high speed, adding more milk as needed to get a spreading consistency.
  • Frost cake. If using, press toasted pecans around side of cake. Can take a sieve or sifter and dust the top with pumpkin pie spice if you wish.

I used this recipe to make my snowman cake this year. Added May 23: I've finally made this without using my snowman cake pan, and have added the instructions below the original recipe.

32 tablespoons unsalted butter
3 cups all-purpose flour
2 teaspoons baking powder
1 1/4 teaspoons salt
1 1/4 cups milk
1 tablespoon vanilla extract
1 2/3 cups granulated sugar
3/4 cup firmly packed light brown sugar
4 eggs

Steps:

  • Have all the ingredients at room temperature.
  • In a saucepan over medium heat, melt the butter, then cook until the solids separate and settle on the pan bottom, 3 to 5 minutes.
  • Continue to cook until the solids brown and are almost burnt, 18 to 20 minutes more.
  • Pour the brown butter into a bowl, leaving the solids in the pan (discard the solids).
  • Let the butter cool at room temperature until firm.
  • The brown butter can be prepared up to 2 days in advance; cover and refrigerate until ready to use.
  • Bring to room temperature before using.
  • Position a rack in the lower third of an oven and preheat to 325°F
  • Brush the pan with unsalted vegetable shortening and lightly flour.
  • Tap out excess flour.
  • Over a sheet of waxed paper, sift together the flour, baking powder and salt.
  • In a small bowl, combine the milk and vanilla.
  • Set aside.
  • In the bowl of an electric mixer fitted with the flat beater, beat the brown butter on medium speed until creamy and smooth, 1 to 2 minutes.
  • Add the granulated sugar and brown sugar and continue beating until light and fluffy, about 5 minutes, stopping the mixer occasionally to scrape down the sides of the bowl.
  • Add the eggs one at a time, beating well after each addition.
  • Reduce the speed to low and add the flour mixture in three additions, alternating with the milk mixture and beginning and ending with the flour.
  • Beat each addition just until incorporated, stopping the mixer occasionally to scrape down the sides of the bowl.
  • Spoon the batter into the prepared pan, dividing it evenly between the two halves. Bake until the center of the cake springs back when touched and a toothpick inserted into the center comes out clean, 55 to 60 minutes.
  • Transfer the pan to a wire rack and let the cake cool in the pan for 15 minutes.
  • Tap the pan gently on a work surface to loosen the cake.
  • Set the rack over the top of the cake, invert the pan onto the rack and lift off the pan.
  • Let the cake cool completely, 3 to 4 hours, before assembling and decorating with vanilla buttercream.
  • If you're using a 9x13 pan:.
  • Butter and flour pan.
  • Spoon cake mix into pan and smooth out.
  • Bake at 325°F for 30-45 minutes, using a toothpick to test doneness.
  • Cool for 15 minutes and remove from pan; setting cake on cooling rack to cool completely.
  • Frost as desired.
