4 (6-ounce) pieces of beef tenderloin steak, 1-inch thick
Salt and pepper
Vegetable oil cooking spray
1 head broccoli, stem trimmed of fiberous skin, cut in florets and stem cut into chunks
1 sack mixed baby greens, 6 to 8 ounces
1 red bell pepper, seeded and very thinly sliced
4 scallions, sliced on an angle, 1-inch pieces
1 cup pea pods, sliced on an angle
1 cup shredded carrots
8 hot cherry peppers or pepperoncini, chopped
2 tablespoons chopped cilantro leaves, optional
1/4 cup duck sauce or sweet and sour sauce
1-inch ginger root, finely chopped
1 lime, juiced
2 tablespoons rice wine vinegar or white vinegar
1/2 to 1 teaspoon crushed red pepper flakes
1/4 cup vegetable oil

Steps:

  • Preheat grill pan over high heat. Season steak with salt and pepper. Spray grill pan with cooking spray. Grill meat 3 to 5 minutes per side for medium rare to medium well doneness. Remove meat and let stand 10 minutes.
  • In a pan, bring 1-inch of water to a bubble. Add a pinch of salt and broccoli pieces and steam for 3 to 5 minutes, until cooked but still firm. In the sink, drain broccoli in colander and run cold water over it to cool.
  • Arrange greens on large platter or individual dinner plates. Arrange broccoli and veggies on greens. Combine duck or sweet and sour sauce with ginger, lime juice, vinegar, crushed pepper flakes. Whisk in oil. Slice steaks and arrange on salad and drizzle completed dish with dressing. Season with additional salt and pepper.

1/4 cup Chinese duck sauce, sauce
1 inch gingerroot, minced
1 lime, juice of
2 tablespoons rice wine vinegar
1/2 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
2 tablespoons dark sesame oil

Steps:

  • Preheat grill pan over high heat. Season steak with salt and pepper. Spray grill pan with cooking spray. Grill meat 3 to 5 minutes per side. Remove meat and let stand 10 minutes.

5 fresh jalapeno peppers
4 pounds ground beef
salt and pepper to taste
1 egg
¼ cup steak sauce, (e.g. Heinz 57)
¼ cup minced white onion
1 teaspoon hot pepper sauce (e.g. Tabasco™)
1 pinch dried oregano
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
¼ cup crushed Fritos® corn chips
8 large potato hamburger buns
8 slices pepperjack cheese

Steps:

  • Preheat a grill for high heat. When the grill is hot, roast the jalapeno peppers until blackened on all sides. Place in a plastic bag to sweat and loosen the blackened skin. Rub the skin off, then seed if desired, and chop.
  • In a large bowl, use your hands to mix together the chopped jalapenos, ground beef, salt, pepper, egg, steak sauce, onion, hot pepper sauce, oregano, Worcestershire sauce, garlic salt and Fritos®. Divide into 8 balls, and flatten into patties.
  • Grill patties for 10 to 15 minutes, turning once, or until well done. I always drink one beer, then flip, drink another beer, then remove from the grill and place on buns. Top each one with a slice of pepperjack cheese and pig out!

2 x 250g sirloin sirloin steaks , fat trimmed
thumb-sized piece ginger , finely grated
1 garlic clove , finely grated
2 limes , juiced
2 tbsp sesame oil
1 tbsp low-salt soy sauce
3 red bird's eye chillies , 2 finely chopped, 1 finely sliced
4 Little Gem lettuces
12 radishes , thinly sliced
3 carrots , peeled and finely sliced
½ cucumber , cut into ribbons using a peeler
3 spring onions , finely sliced
1 large ripe avocado , sliced
½ tbsp mixed sesame seeds

Steps:

  • Remove the steak from the fridge 1 hr before you're ready to cook to bring it up to room temperature. Just before cooking, make the salad dressing by whisking together the ginger, garlic, lime juice, oil, soy and chopped chillies in a bowl.
  • Put the steaks on the barbecue and cook on one side for 3 mins, then turn and cook for 3 mins on the other side for medium rare. Alternatively, fry your steaks in a frying pan or griddle pan for 3 mins each side. After cooking, cover and rest the meat for 5 mins.
  • Arrange the lettuce leaves, radishes, carrot, cucumber, spring onion and avocado on a sharing plate. Slice the steak against the grain into thin slices and lay on top of the salad. Drizzle over any resting juices and the dressing. Garnish with the sesame seeds and the sliced red chilli.

This is my Mom's recipe and is one of the first recipes I took with me when I left home. I had never seen a salad anything like this before and I absolutely loved it. It makes a great sandwich or it can be eaten plain. It is great for a casual lunch with friends. Enjoy! (Time does not include chill time).

1 lb cooked beef, cubed (I like to use leftover eye of round)
1 cup sour cream
1 small red onion, coarsely chopped
3/4 teaspoon salt
1 1/2 tablespoons lemon juice
1 tablespoon horseradish (or more to taste)
1 dash pepper

Steps:

  • Mix all ingredients together and refrigerate at least 24 hours.
  • Stir.
  • Serve atop lettuce leaf or spoon onto toasted onion roll.

1/2 cup virgin olive oil
1/4 cup red wine vinegar
2 teaspoons Dijon mustard
1 garlic clove, crushed
1 teaspoon salt
1/8 teaspoon fresh ground black pepper (to taste)
1/2 teaspoon sugar
12 small mushrooms, sliced
1 1/2 lbs cooked beef or 1 1/2 lbs steak, sliced into strips
12 cherry tomatoes, halved
1 (14 ounce) can artichoke hearts, drained and halved
1 head iceberg lettuce, sliced
2 tablespoons fresh parsley, minced
3 tablespoons blue cheese, crumbled

Steps:

  • 1. Combine marinade ingredients in lidded jar and shake well. In medium bowl, combine mushrooms, beef, tomatoes and artichokes. Pour marinade over beef mixture and refrigerate overnight.
  • 2. To serve, arrange beef mixture with marinade on bed of lettuce on individual plates or in salad bowl. Sprinkle with parsley and blue cheese.
