8 whole artichokes
6 cups water
4 lemons, juice of
1/4 cup olive oil
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1/4 cup of packed fresh Italian parsley
1/2 cup packed fresh basil
6 sprigs fresh thyme
1/2 cup packed fresh oregano
1/2 orange, zest of
1 whole dried chili (as hot or mild as you prefer)
1 teaspoon whole black peppercorn
2 cups canola oil
1 cup extra virgin olive oil

Steps:

  • In a 1 quart mason jar, place all herbs, zest, chili, and peppercorns. Pour 2 cups canola oil and 1 cup of extra virgin olive oil into a saucepan and heat to 200 degrees. Pour hot oils into the jar and cover with a kitchen towel. Let stand overnight.
  • Preheat oven to broil setting.
  • In a large, deep bowl, combine juice of 4 lemons with six cups of water. Set aside.
  • Cut top 1/4 off each artichoke and snap off the outer leaves until you reach pale, green, soft leaves. Using a spoon, remove the hairy choke from the center and discard.
  • Immediately plunge chokes into lemon water to avoid discoloration. Drain chokes and spin to dry.
  • Toss chokes in a second bowl with 1/4 cup olive oil, and season with salt and pepper. Lay chokes out on a sheet pan lined with foil and place on the lower rack of the oven. Broil for 5-6 minutes. Flip chokes and return to oven for 3 minutes.
  • Serve chokes as they are or marinate chokes in herb oil for up to 2 days.

Herb oil, optional, recipe follows
1/2 bunch parsley
1/2 cup packed fresh basil
1/2 bunch fresh thyme
1/2 cup packed fresh oregano
1/2 orange, zested
1 whole dried arbol chile
1 teaspoon whole black pepper corns
2 cups canola oil
1 cup extra-virgin olive oil

Steps:

  • Preheat oven to broil setting.
  • Cut the top 1/4 off the choke and snap off the outer leaves until you reach pale green, soft leaves. Using a spoon, remove the hairy choke from the center and discard. Immediately plunge in acidulated water to avoid discoloration. Repeat with remaining artichokes. Drain the artichokes and spin to dry. Toss in a bowl with oil, and season with salt and pepper. Lay the chokes out on a sheet pan lined with foil and place on the lower rack of the oven, and broil for 5 to 6 minutes. Flip the artichokes and return to the oven for 3 minutes. Eat as they are or marinate in herb oil for up to 2 days.

  • Place cheesecloth over the top of the jar and replace the outer rim of the lid. Invert and strain oil into desired container.

NONNA'S INFAMOUS STUFFED CHOKES



Nonna's Infamous Stuffed Chokes image

6 large artichokes
1 1/2 cups olive oil, plus more for stuffing
1 large loaf of Italian bread, cubed
Salt and pepper
1 1/2 tablespoons garlic powder
1 1/2 tablespoons onion powder
1 large onion, chopped
3 or 4 cloves garlic, chopped
1 can pitted black olives, chopped

Steps:

  • Cut off stems of artichokes and set aside. Cut off top of artichoke leaves, creating a flat top. Cut thorns off top of each leaf on artichoke. Gently stretch artichoke from inside to create hole for stuffing. Cut away little purple/white thorny leaves in center. Peel away outer skin of stems so that it is fresh all around. Chop stems into small cubes for stuffing.
  • In a large bowl drizzle olive oil over bread cubes until they're moist. Add salt and pepper, chopped onion and garlic, sliced olives and chopped stems. Work together with hands. Check olive oil content by squeezing stuffing into a ball in your hand. If it sticks together, there's enough oil, if not, add more. Stuff mixture tightly into center of artichokes -- as tightly as possible.
  • In a large stove top pot (i.e. Dutch Oven) add water half way up artichokes. Artichokes should be firmly together in pan. Add salt and 1 1/2 cups of extra virgin olive oil to water. Make certain water is high enough but not beyond half way. Bring water to a slow boil in covered pot. Baste leaves around stuffing with broth from the pan every 15 to 20 minutes for approx. 3 hours. When outside leaves are tender they're done. Before removing from pan, baste stuffing one last time, then pack down stuffing with a fork. Serve with a little bit of broth in bottom of bowl.
