This is a recipe that my father used to make for the two of us many years ago. My mother would make something different for my brother & herself. Trust me, this is a GREAT TASTING RECIPE!

3 lbs Boston mackerel or 3 lbs Atlantic mackerel
2 tablespoons extra virgin olive oil
2 tablespoons butter (not margarine)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons lemon juice
3 tablespoons finely cut fresh flat-leaf parsley
1 teaspoon granulated garlic powder
1 teaspoon onion powder or 1 teaspoon minced onion
1 dash paprika

Steps:

  • Have your fish monger clean& split for broiling, or buy fillets.
  • Preheat broiler to 450 degrees.
  • Brush fish with olive oil on both sides.
  • Place fish, skin side down, on a greased broiler rack, 2” below the heat.
  • Broil 5 minutes, then turn the fish& broil the other side for 3 minutes.
  • While the fish broils, melt the butter.
  • Mix the melted butter with salt, pepper, lemon juice, garlic powder, onion powder,& parsley.
  • Place the fish on a warmed serving platter,& pour the butter sauce over the fish.
  • Sprinkle lightly with paprika& serve at once.

Chicken With Sugar Snap Peas & Spring Herbs image

Quick-cooking chicken cutlets are paired with an elegant but easy light sauce. This dish can be made without the sprouted beans, but is especially delicious with them. Make it a meal: serve over pan-seared rounds of prepared, store-bought polenta and open a bottle of sauvignon blanc. Description and recipe from Eating Well magazine

1 cup reduced-sodium chicken broth
1 teaspoon Dijon mustard
1/2 teaspoon salt
fresh ground pepper, to taste
5 teaspoons flour (2 tsp plus 1 tbsp, divided)
1 lb boneless skinless chicken cutlet, thinly sliced
1 tablespoon extra virgin olive oil
8 ounces sugar snap peas, cut in half (about 2 cups)
1 (14 ounce) can quartered artichoke hearts, rinsed
1/4 cup sprouted beans (see note in directions) (optional)
3 tablespoons fresh herbs, minced (chives, tarragon or dill are all fine)
2 teaspoons champagne vinegar or 2 teaspoons white wine vinegar

Steps:

  • Note: Sprouted beans, not to be confused with bean sprouts, are beans that have just barely sprouted-they look like a bean with a tiny fiber attached (rather than the more fleshy-looking sprouts commonly used in Asian cooking).
  • Whisk broth, mustard, salt, pepper and 2 teaspoons flour in a small bowl until smooth.
  • Sprinkle both sides of the chicken with the remaining 1 tablespoon flour.
  • Heat oil in a large nonstick skillet over medium-high heat. Cook the chicken in two batches, adjusting heat as necessary to prevent burning, until golden, about 2 minutes per side. Transfer the chicken to a plate; tent with foil to keep warm.
  • Increase heat to high; stir the broth mixture and add to the skillet along with snap peas, artichoke hearts and sprouted beans.
  • Bring to a simmer, stirring constantly. Reduce heat to maintain a gentle simmer and cook until the snap peas are tender-crisp, about 3 minutes.
  • Return the chicken to the pan, nestling it into the vegetables, and simmer until heated through, 1 to 2 minutes. Remove from heat; stir in herbs and vinegar.
  • Enjoy!

HERBY SNAP PEA AND RADISH SALAD

Kosher salt
1 pound snap peas, strings removed and cut in half vertically
1/2 cup Greek yogurt
2 tablespoon lemon juice
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh mint
1 tablespoon vegetable oil
5 to 7 radishes, (about 1 bunch) cut into 1/3-inch-thick matchsticks
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Once the water is boiling, add the snap peas and cook until the snap peas are bright green but still tender-crisp, 1 to 2 minutes. Transfer the snap peas to a bowl of ice water. Set aside.
  • Add the Greek yogurt, lemon juice, dill, chives, mint, oil, 1 teaspoon salt and 1/2 teaspoon pepper to a large bowl and whisk to combine. Set aside.
  • Drain the snap peas and add them to the bowl with the dressing. Add the radishes to the bowl and toss well to thoroughly coat the vegetables in the dressing.
  • Serve immediately or refrigerate in an airtight container for up to 3 days.

1 cup red onion, finely chopped

  • Combine all ingredients in a bowl.
  • Let stand 10 minutes, tossing occasionally.
