A truly unique sweet treat that apple crisp lovers should really give a try! NOTE: this recipe is specifically created for individual ramekins/portions...Any attempt to make it into a 'one pan' dish may alter the recipe beyond the intended results...Alter this recipe at your own risk, LOL!

Steps:
- Peel bananas and drizzle with lemon juice; then cut in half lengthwise and then again across.
- You should have a total of 16 quarters of banana.
- Then distribute these banana quarters equally among 4 broil-and-serve dishes.
- In a small bowl, combine the brown sugar, uncooked oats, flour and allspice -- NOTE: Allspice tastes like a combination of nutmeg, cinnamon and cloves, so you could probably substitute a mixture of those three if you're out of allspice or go with just cinnamon.
- Cut butter into the mixture until it resembles crumbs and then spread the crumbs equally over all the bananas.
- Turn on your broiler and place these dishes under the broiler, 5" from the heat source and broil 3 min; the idea is to brown it and warm it at the same time.
- Watch carefully, don't burn it or yourself!
- Serve warm with vanilla ice cream.

- 1. Peel and slice the bananas. Divide the slices evenly among 4 ungreased 6-ounce ramekins or souffle dishes.
- 2. In a small bowl, combine 2 Tbsp. melted butter and the lemon juice. Mix well. Drizzle the butter mixture over the bananas in each ramekin.
- 3. In a small bowl, combine the oats, walnuts, brown sugar and the remaining melted butter. Mix well. Sprinkle the oat mixture evenly over the bananas.
- 4. Bake in a preheated 375-degree oven until the bananas are hot and the topping is bubbly, about 10 to 12 minutes. Serve warm with the ice cream and a sprinkle of cinnamon.
- 5. SOME VARIATIONS: For a tropical taste, use lime juice instead of lemon juice and add 1 tsp. grated fresh ginger. Substitute unsweetened coconut for the walnuts. Add 1/4 tsp. ground cloves to the butter and lemon juice mixture. The flavor of the spice is utterly delicious in this dessert!

- 1. Combine apples, bananas, pineapple orange juice, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg in 9x9 baking pan.

- Preheat oven to 400 degrees.
- Butter 9 inch pie pan or shallow baking dish.
- Topping:.
- In small bowl mix together flour, oatmeal, sugar, coconut and butter.
- With fingertips, blend the ingredients until the mixture resembles coarse crumbs.
- In separate bowl combine orange liquor and lime juice.
- Peel bananas and slice them on the diagnal in 1/4 inch ovals.
- Arrange the slices in a single overlapping layer and sprinkle with lime juice mixture, nutmeg and brown sugar.
- Sprinkle topping evenly over the bananas.
- Bake until the juices are bubbly and the topping is crisp and brown, about 20 minutes.
- Serve warm with fresh cream, yogurt or ice cream.
GRILLED BANANA PANINI
Steps:
- Run a knife around edges of angel cake and turn it out onto a work surface. With a large serrated knife, cut cake horizontally into three equal layers, reserving top layer for another use or slicing it to grill along with panini. Place middle cake layer on a piece of foil large enough to hold it.
- Peel bananas, leaving them lying in peel for ease of handling and slice thinly on bias. Pick up one banana with both hands, holding slices together, and place on cake, spreading slices to cover half of cake ring. Repeat with other banana so you have a cake ring topped with a ring of bananas. Sprinkle with dessert wine, if using, and top with bottom cake layer.
- Use foil to cover the outside of a very heavy skillet, such as cast iron or enameled cast iron with a heat-proof handle. This will protect it from soot. Place skillet on grill and allow to heat on medium-high. When it's hot, add two tablespoons of the butter, spreading it with a spatula to coat skillet as it melts. Using your hands or two spatulas, carefully lift banana-filled panini into skillet. Use spatula to press edges firmly to give panini a uniform edge and re-adhere ragged pieces. Put a second heavy, heat-proof skillet on top of cake and press firmly to compact panini.
- Close grill and let panini toast on medium to medium-high until golden brown and crisp. Check periodically by lifting the edge with a spatula. Depending on how hot your grill is and how heavy the skillet, the butter can start to burn. With two spatulas, remove panini to foil piece and melt the rest of the butter in skillet, spreading it around with spatula to coat skillet evenly.
- Turn untoasted side of panini into skillet and return heavy skillet to the top, pressing again to compact. Toast until crisp and golden and bananas are soft - about another 10 minutes. Remove panini to a serving plate and serve in slices or on a bed of fresh seasonal fruit, if desired.
BANANA CRISP
A diffrent kind of fruit crisp. It works equally well with slightly underripe or fully ripe bananas (just not mushy ones!). Serve with either whipped cream or ice cream (try coconut). If you don't want to use rum, omit it or use 1 teaspoon of rum extract for flavor.
