CREAMY BROCCOLI SPINACH SOUP WITH GREEK YOGURT
Skinny Creamy Broccoli Spinach Soup. Takes less than 30 minutes to make and only takes one pot!

Steps:
- Add oil to a large pot. Add in onions and cook for 2 minutes. Stir in garlic and cook for an additional minute.
- Toss in broccoli and cook for 5 minutes over medium heat. Stir in chicken stock and bring to a boil. Simmer for another 5-10 minutes until broccoli is tender.
- Take off of the heat and stir in spinach, Parmesan cheese and pepper.
- Cool soup slightly. Add soup in two batches to a blender. (If you have an immersion blender you can do this in the pot). Pulse until thick and smooth. About 1-2 minutes each batch.
- Add 1 tablespoon of Greek yogurt to each batch (2 tablespoons total) and pulse to combine. Season with salt and pepper, to taste.
- Pour soup into bowls and serve immediately. Garnish with greek yogurt if desired.

BROCCOLI SOUP WITH YOGURT

- Heat butter in a large pot over medium heat. Saute onion until softened, about 4 minutes. Stir in milk, bring to a boil, and simmer for 4 minutes.
- Cook the broccoli florets in rapidly boiling salted water until tender, about 5 minutes. Drain in a colander and rinse under cold water to set the bright green color. Drain.
- Puree the milk mixture with broccoli in a blender. Return the soup to the saucepan and heat thoroughly. Season with salt and pepper. Serve lukewarm to warm. Garnish each serving with a dollop of yogurt.

ROSALYNN CARTER'S CREAM OF BROCCOLI SOUP-WITH NO CREAM
Steps:
- Saute onion and garlic in the oil until soft, 3 to 4 minutes.
- Add bay leaf, broccoli, potato, and stock. Simmer gently, covered for about 10 minutes, until the broccoli is tender, but still bright green. Remove bay leaf and let cool.
- Puree in a blender (not totally smooth). Season to taste, add lemon juice and return to pan to reheat if necessary. Add a dollop of yogurt just before serving.
THE BEST BROCCOLI-CHEDDAR SOUP
This outstanding broccoli-cheddar soup is rich, cheesy and packed with flavor. We decided to puree just over half the soup which makes it extra thick and creamy, and left the remainder chunky so there are broccoli bits in every bite. Gild the lily with more shredded cheese on top to satisfy your comfort food craving.

- Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, broccoli, bay leaves, nutmeg, 1/2 teaspoon salt and few grinds of black pepper Bring to a boil, then reduce to medium-low and simmer, uncovered and stirring occasionally, until the broth has thickened and the broccoli is very tender, about 15 minutes.
- Meanwhile, prick the potato all over with a fork and put on a microwave-safe plate. Microwave on high until tender, flipping halfway through, about 6 minutes. Let cool, then peel. Use a fork or potato masher to mash until crumbly.
- Reserve 2 cups of the soup in a liquid measuring cup and discard the bay leaves. Let the remaining hot soup cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Add the mashed potato. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until very smooth.
- Stir the pureed soup and reserved 2 cups of soup back into the pot. Whisk in the cheese until melted and smooth. Season with salt and pepper. Ladle into serving bowls and top with more shredded Cheddar.
BROCCOLI SOUP
This is a simple, comforting, delicious soup. You can dress it up for a special occasion if you like, but I like it during the week with some fresh bread. A very quick meal, and a great winter dinner.

Steps:
- Reserve several broccoli florets for garnish.
- Take the rest of the broccoli, the potato, garlic, the stock, a heavy pinch of salt and place all into a large pot over high heat.
- Bring to a simmer and cook until the vegetables are soft, 20 minutes or so.
- Meanwhile, cook the reserved florets in a little salted water until just done and still bright green.
- Drain and set aside for service.
- At this point add the curry powder, if using.
- If not, transfer the vegetables to a blender or food processor (or use an imersion blender- I love mine!) and puree the vegetables with some of the stock until well pureed.
- Return to the pot.
- Taste, adjust for salt and pepper.
- Add the cream or yogurt, stir to combine, heat to serving temperature.
- Serve by spooning into bowls or cups, put a few drops of cream or yogurt in the center to decorate, and place a few of the reserved broccoli florets on top for garnish.

CREAM OF BROCCOLI SOUP

- Cook broccoli in large pot of boiling salted water until tender but still bright green, about 5 minutes. Drain broccoli. Set aside 4 small florets for garnish.
- Combine broth and 1 cup cream in heavy large saucepan and bring to boil. Working in batches, puree broccoli, broth mixture, and butter in blender until smooth, about 45 seconds per batch. Return puree to same pan. Season soup to taste with salt and white pepper. (Soup can be made up to 8 hours ahead. Cool slightly, cover, and refrigerate.)
- Bring soup to simmer, thinning with water if desired. Ladle soup into 4 bowls. Drizzle 1 teaspoon cream over each; garnish with reserved florets.

- Heat a medium saucepan over medium heat, melt 1 tablespoon butter. Add the garlic and cook for 1 to 2 minutes, until the garlic is fragrant. Stir in the broccoli until it is coated in butter. Salt liberally (about 1/4 teaspoon). Reduce heat to low, cover, and steam until the broccoli turns bright green, about 5 to 7 minutes. Add vegetable broth and cover.
- Meanwhile, in a small, nonstick sauté pan, heat 1 tablespoon butter until melted. Whisk in the flour until fully incorporated and cook until the flour turns golden, a few minutes. Whisk in the Greek yogurt followed by the warm water. Whisk until a thick, clump-free sauce forms. Add the cheddar cheese and whisk until the cheese melts. Turn off the heat.
- Blend the broccoli soup with an immersion blender or carefully transfer the soup to a standup blender. Blend it until it's mostly smooth, leaving a few stems and broccoli pieces intact. Whisk in the creamy cheese sauce. Salt and pepper to taste if necessary. Serve immediately.
